- In a Dutch oven or large saucepan, bring water and cranberries to a boil. Reduce heat; cover and simmer until berries begin to pop, 20 minutes., Strain through a fine strainer, pressing mixture with a spoon; discard berries. Return cranberry juice to the pan. Stir in the sugar, lemon juice and orange juice. Bring to a boil; cook and stir until sugar is dissolved. , Remove from the heat. Cool. Transfer to a pitcher; cover and refrigerate until chilled.

- Put the cranberries in a saucepan. Remove wide strips of zest from 1/2 orange with a peeler; add to the saucepan with the juice of both oranges (about 1/2 cup). Add the sugar, coriander, a pinch of salt and 1 cup water. Bring to a simmer over medium heat; cook, stirring occasionally, until the berries burst and the sauce thickens, 15 to 20 minutes.
- Remove from the heat and remove the orange zest; stir in the vanilla. Transfer to a blender and puree until smooth. Strain through a fine-mesh sieve into a serving dish, pushing the sauce through with a rubber spatula. Refrigerate until set, at least 3 hours.

- 1. Place the 2 cups of water and lemon juice into a scrupulously clean blender container. Add the 4 cups of cranberries.
- 2. Blend on medium-high speed for 2-3 minutes. If your blender is very powerful, 2 minutes may be sufficient. I blended mine for the full 3 minutes. You want to arrive at a thick liquid with no solid chunks. Place the lidded blender container in the refrigerator overnight to steep.
- 3. Remove the container in the morning. Strain the juice through a fine mesh strainer into a medium saucepan. Press to remove all juice. Discard any solid material, or use it to make jam (see my other recipe).
- 4. Add the sugar (or Stevia, Splenda, or honey) to the juice and heat gently over medium heat just until the sugar or sweetener is dissolved. This will not take long, especially with the calorie-free sweeteners. Do not boil this liquid, just warm it up to aid the dissolving of the sugar.
- 5. Remove from heat and add 1 cup of cold water. You may add more or less water, depending on your tastes. Less water will yield a sweeter cranberry juice. I used 1 1/2 cups, and it was perfect for me.
- 6. Transfer the cranberry juice to a drink pitcher, and chill in refrigerator before serving. You can also add ice cubes to speed the chilling process.
HOMEMADE CRANBERRY JUICE
I'm a cranberry nut. I just can't get enough of these berries. Here are some fun facts I found on the web. Cranberries are one of the only three native North American Fruits (Concord grapes, and blueberries being the others). To the eastern Indians, cranberries were known as sassamanesh. The Cape Cod Pequots and the South Jersey Leni- Lenape tribes called the little red berry ibimi or bitter berry. But it was the Pilgrims who gave the cranberry its modern name. To them, the pink cranberry blossoms resembled the heads of cranes; therefore the word crane berry later contracted to cranberry. Early American sailors carried barrels of cranberries while at sea as a source of vitamin C, much like the British limeys carried limes aboard ships.

- Wash and drain fresh or frozen red-ripe cranberries.
- Combine cranberries and water in a large pan.
- Bring to a boil.
- Reduce heat and cook until berries burst.
- Strain juice through a fine strainer lined with cheese cloth.
- Sugar can be added to juice to your taste.
- Reheat juice until it is almost, but not boiling.
- Pour into jars.
- Allow to cool before refrigerating.

- In a medium saucepan over medium heat, dissolve the sugar in the orange juice. Stir in the cranberries, and cook until they start to pop (about 10 minutes). Remove from heat, and transfer to a bowl. Cranberry sauce will thicken as it cools.

FRESH CRANBERRY SAUCE
A great side dish for Thanksgiving dinner. It can be used as filling for cranberry/cream cheese tarts and also makes a great topping on bagels, corn bread, or cheesecake. Pour into a serving dish or jars and cover. The pectin in the cranberries will make the cranberry sauce gel as it cools. I usually use a fork to mix it up which will make it more pliable.
