Classic oatmeal raisin cookies make tasty after-school snacks or lunchbox treats.

14 tablespoons butter, softened
¾ cup firmly packed brown sugar
½ cup granulated sugar
2 eggs
1 teaspoon vanilla
1 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon salt
3 cups Quaker® Oats (Quick or Old Fashioned, uncooked)
1 cup raisins

Steps:

  • Heat oven to 350 degrees F.
  • In large bowl, beat butter and sugars on medium speed of electric mixer until creamy. Add eggs and vanilla; beat well.
  • Add combined flour, baking soda, cinnamon and salt; mix well.
  • Add oats and raisins; mix well.
  • Drop dough by rounded tablespoonfuls onto ungreased cookie sheets.
  • Bake 8 to 10 minutes or until light golden brown.
  • Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store tightly covered.

1 cup(s) all purpose flour
1 cup(s) whole wheat flour
1 teaspoon(s) baking soda
1 teaspoon(s) ground cinnamon
1/2 teaspoon(s) salt (optional)
4 cup(s) rolled oats
1 1/2 cup(s) raisins
3/4 cup(s) sugar
1 1/4 cup(s) light brown sugar
2 large eggs room temp.
1 1/2 teaspoon(s) good vanilla extract
1 1/2 cup(s) kelloggs raisin crunch cereal
2 stick(s) unsalted butter room temp. plus one tablespoon canola oil.

Steps:

  • In a counter top mixer( or a larger mixing bowl) whip the softened butter,oil,sugars,vanilla,eggs,until light and fluffy,no lumps. Add all of the dry ingredients and mix well. Don't over mix as you'll break up the cereal.
  • Pre-heat your oven to 350 degrees. Drop the cookie batter using a tablespoon or I use a small ice cream scoop on to your cookie sheets.Press them down to shape or form into even sizes,then bake for 15/18 minutes.They should be slightly golden brown,remove from oven and let cookie cool on the cookie sheets for about 10/15minutes,then move to wire racks for finished cooling ,If you can bear to keep them out of your mouth!! Enjoy!

½ cup shortening
½ cup white sugar
½ cup packed brown sugar
1 egg
½ teaspoon vanilla extract
1 cup all-purpose flour
½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
¾ cup rolled oats
½ cup flaked coconut
½ cup miniature semi-sweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a large bowl, cream together the shortening, white sugar and brown sugar. Mix in the egg and vanilla until well blended. Combine the flour, baking powder, baking soda and salt; stir into the batter until well blended. Mix in the oats, coconut and chocolate chips until evenly distributed. Roll dough into walnut sized balls and place 2 inches apart onto prepared cookie sheets.
  • Bake for 12 minutes in the preheated oven, or until edges are lightly browned.
