GREEK LOADED FRIES
Bake some budget-friendly frozen fries and pile them high with a moreish Greek-inspired topping of feta, olives, tomatoes and cucumber. Great for sharing

Steps:
- Toss the French fries with the dried oregano and olive oil, then cook following pack instructions.
- While the fries are cooking, mix the cucumber with the black olives, cherry tomatoes and parsley. Mix the Greek yogurt with half of the crumbled feta in a separate bowl. Tip the fries into a serving dish, top with the salad and yogurt mixture, then scatter over the remaining crumbled feta. Season and serve.

FRENCH FRIES

Steps:
- Peel the potatoes and cut into 1cm-thick batons. Put into a bowl of cold water and leave to soak for at least 2 hrs to remove the starch from the potatoes - this will help them crisp while frying.
- Drain the potatoes well and pat dry with kitchen paper. Fill a deep pan no more than a third full with oil and heat to 140C, or until a cube of bread dropped in browns in 60 seconds. Fry the French fries in batches for 6 mins per batch until golden straw-coloured, cooked through and lightly crisp. Drain well on kitchen paper.
- Turn the heat up until the oil reaches 180C, or a cube of bread browns in 30 seconds. Fry the French fries again for 2-3 mins per batch until lightly golden and really crisp. Drain on kitchen paper and immediately season with sea salt.

BAKED SKINNY FRIES

- Heat oven to 200C/180C fan/gas 6. Pour the oil onto a baking tray and put in the oven for 3 mins. Mix the cornmeal or polenta, paprika and garlic powder together and season. Toss the chips in the mix, then tip onto the tray. Shake well, then cook for 40 mins, shaking halfway through, until crisp and golden.

- Preheat the oven to 220C/200C Fan/Gas 7. Half-fill a large saucepan with water and bring to the boil. Cut the potatoes in half and then into slender wedges or chips. Add to the water and return to the boil. Immediately drain in a colander and leave to stand for 5 minutes.
- Tip the potatoes back into the saucepan and toss with the olive oil, paprika and salt. Scatter over a baking tray in a single layer and bake for 15 minutes. Turn with a spatula and cook for a further 5-10 minutes, or until tender and golden-brown.
- To make the salsa, mix together all the salsa ingredients in a small bowl and season with a good pinch of salt and lots of black pepper.
- Transfer the chips to a shallow ovenproof dish. Scatter the roasted pepper and jalapeño peppers on top and sprinkle with the cheese. Return to the oven for 5 minutes, or until the pepper is hot and the cheese has melted.
- Top with sliced avocado, the tomato salsa and soured cream. Scatter extra coriander on top and serve with lime wedges for squeezing.

HALLOUMI FRIES
Crisp and slightly salty shallow-fried halloumi fries make perfect party food. Great with a sprinkling of za'atar and a spicy yogurt for dipping

- Mix the yogurt with the lemon zest and some seasoning, then swirl through the harissa so that you have pockets of hot and cool in the dip.
- On a plate, stir the za'atar into the flour, then roll the halloumi in the mixture so that it's evenly coated. Heat the oil in a shallow, heavy-bottomed pan or casserole dish until 180C on a cooking thermometer, or a piece of bread browns in 20 secs. Working in batches, carefully lower the halloumi into the oil and cook for 2 mins until crisp and golden, then drain on kitchen paper.
- Sprinkle over the mint and za'atar, and serve with the lemon wedges and the spicy yogurt for dipping.

- Cook the French fries following pack instructions. Meanwhile, heat the olive oil in a frying pan and fry the onion for 10 mins. Add the garlic and chilli flakes, and fry for 5 mins more. Tip in the tomatoes, oregano and sugar, then simmer for 10 mins.
- In another pan, fry the beef meatballs for 5 mins until browned, then add to the sauce and bubble for 5 mins, or until cooked through. Put the fries in a heatproof dish and top with the meatballs and sauce. Scatter over the mozzarella and cheddar. Grill for 2-3 mins until the cheese has melted. Season and serve.
