This Espinaca Dip resembles the one at Jose Peppers, but most people have told me it is much better. You can decide for yourself. This is so easy and doesn't take much time out of your day. It is great for office parties too.

Ingredients

16 ounces Philadelphia Cream Cheese
1/2 pint heavy whipping cream
2 (4 ounce) cans Rotel diced tomatoes, drained
1/4 cup jalapeno
8 ounces frozen chopped spinach
4 chicken bouillon cubes
8 ounces Velveeta cheese
1/2 cup milk
1/2 onion, chopped

Steps:

This is best cooked in a crock pot.
Mix all ingredients in the crock pot.
Stir occasionally.
For better taste and if you have time, mix the whipping cream, Rotel, jalapeno's, spinach, bouillon cubes, milk and chopped onion together in a sealed container and put in the refrigerator the night before you want to prepare it.

1 paquete (9 oz) de espinaca picada congelada; descongélala antes de usar y escúrrela bien
1 lata (8 oz) de castañas de agua, escurridas y picadas
1/2 taza de pimiento (pimentón) rojo picado

Steps:

Mezcla bien el queso crema, la crema agria y la mezcla para aderezo en un tazón mediano.
Incorpora los ingredientes restantes.
Refrigera el dip durante varias horas o hasta que esté frío.

This creamy dip is excellent warm with fresh vegetables or with freshly made flour tortilla chips (I cut tortillas into triangles and bake or fry them with vegetable oil). If you have a taste for something a bit spicier, add some finely minced jalapeno, serrano or habanero chiles. Delicious!

2 ½ pounds shredded pepper Jack cheese
1 ¼ cups whole milk
½ pound sweet onions, minced
½ pound tomatoes, seeded and chopped
½ (10 ounce) package frozen chopped spinach, thawed and drained
½ large red bell pepper, minced

Steps:

Combine pepper Jack cheese and milk in top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until cheese is melted and well combined with the milk, about 5 minutes.
Stir onions, tomatoes, spinach, and red bell pepper into the cheese mixture. Cover and simmer until dip has thickened and flavors are well blended, about 15 minutes.

Snip a small corner of the bag of frozen spinach. Place onto a plate and microwave (still in the bag) 3 minutes to thaw. Spinach should still be bright green. Pour into a strainer and mash with a spoon to get as much liquid out as you can. Set aside.
Sauté bacon pieces in a medium skillet until crispy. Remove the bacon and pour off all but a tablespoon of grease.
Sauté mushrooms in the same skillet. When brown, add chipotle, onion, bell pepper, and garlic, cooking until vegetables are softened. Season with salt.
Over low heat, add cream cheese and processed cheese to the veggies. Stir to melt and combine.

Put gelatin and powdered milk into a blender. Add boiling water and process immediately until smooth. Add cheese and continue blending until mixture is very smooth.
Pour mixture into pan and smooth out with a spatula. Cover with more saran wrap then refrigerate until firm.
Meanwhile, roast your poblano peppers: Place peppers on a baking sheet and place under hot broiler until very black, turning once to ensure the entire pepper is blistered and blackened. Immediately (and carefully) place hot peppers into a resealable plastic bag and close tightly; allow to sit for at least ten minutes or until cool enough to handle. Peel blackened skin from peppers; remove and discard stem and seeds. Chop peppers and set aside.
