This easy espinaca dip is made with freshly shredded Pepper Jack cheese, diced tomatoes and chilies, and fresh baby spinach. Ready in just 20 minutes!

Ingredients

4 cups freshly shredded Pepper Jack Cheese
8 ounces regular cream cheese
1 cup half & half
1 (10 ounce) can of diced tomatoes and green chiles (like Rol*Tel) (, undrained)
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1 cup fresh baby spinach (, chopped)

Steps:

In a medium sauce pot over medium-low heat, combine cheeses, half & half, and Rol*Tel. Cook until mixture melts, stirring occasionally, for about 15 minutes.
Stir in the garlic and onion powders with the fresh spinach. Reduce heat to low and continue to cook sauce for another 5 minutes, stirring occasionally.
Serve immediately with your favorite tortilla chips, crackers, and/or assorted raw vegetables.

Styled after a similar appetizer at The Blue Moose in East Grand Forks, Minnesota, this is a very addicting creamy appetizer that goes well with tortilla chips. It has a little kick, but not enough to make your eyes water. Of course, for the heat lovers, you can kick it up a notch if desired. This has become an instant family-favorite and one of my most requested appetizers.

Ingredients

1 tablespoon olive oil
1 tablespoon butter
½ cup chopped onion
1 clove garlic, minced
1 cup chopped red bell pepper
1 jalapeno pepper - seeded, membranes discarded, and pepper chopped
1 ½ pounds pepperjack cheese, cut into cubes
1 (10 ounce) package frozen chopped spinach - thawed, drained, and squeezed dry
2 (12 fluid ounce) cans evaporated milk
¼ teaspoon salt

Steps:

Heat olive oil and butter together in a 3-quart saucepan over medium heat; cook and stir onion until translucent, about 10 minutes. Add garlic and cook until fragrant, about 1 minute. Stir red bell pepper and jalapeno pepper into onion mixture; cook until softened, about 5 minutes.
Reduce heat to low and mix pepperjack cheese and spinach into onion mixture; cook, stirring constantly, until cheese is melted and mixture is thick, 5 to 10 minutes. Slowly pour enough evaporated milk into cheese mixture, stirring constantly, until desired consistency is reached; season with salt. Continue to cook and stir over low heat until warmed through, at least 5 minutes more.

Ingredients

1 cup mayonnaise
1 (16 ounce) container sour cream
1 (1.8 ounce) package dry leek soup mix
1 (4 ounce) can water chestnuts, drained and chopped
½ (10 ounce) package frozen chopped spinach, thawed and drained
1 (1 pound) loaf round sourdough bread

Steps:

In a medium bowl, mix together mayonnaise, sour cream, dry leek soup mix, water chestnuts and chopped spinach. Chill in the refrigerator 6 hours, or overnight.
Remove top and interior of sourdough bread. Fill with mayonnaise mixture. Tear removed bread chunks into pieces for dipping.

This Espinaca Dip resembles the one at Jose Peppers, but most people have told me it is much better. You can decide for yourself. This is so easy and doesn't take much time out of your day. It is great for office parties too.

Ingredients

16 ounces Philadelphia Cream Cheese
1/2 pint heavy whipping cream
2 (4 ounce) cans Rotel diced tomatoes, drained
1/4 cup jalapeno
8 ounces frozen chopped spinach
4 chicken bouillon cubes
8 ounces Velveeta cheese
1/2 cup milk
1/2 onion, chopped

Steps:

This is best cooked in a crock pot.
Mix all ingredients in the crock pot.
Stir occasionally.
For better taste and if you have time, mix the whipping cream, Rotel, jalapeno's, spinach, bouillon cubes, milk and chopped onion together in a sealed container and put in the refrigerator the night before you want to prepare it.

2 ½ pounds shredded pepper Jack cheese
1 ¼ cups whole milk
½ pound sweet onions, minced
½ pound tomatoes, seeded and chopped
½ (10 ounce) package frozen chopped spinach, thawed and drained
½ large red bell pepper, minced

Steps:

Combine pepper Jack cheese and milk in top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until cheese is melted and well combined with the milk, about 5 minutes.
Stir onions, tomatoes, spinach, and red bell pepper into the cheese mixture. Cover and simmer until dip has thickened and flavors are well blended, about 15 minutes.

Snip a small corner of the bag of frozen spinach. Place onto a plate and microwave (still in the bag) 3 minutes to thaw. Spinach should still be bright green. Pour into a strainer and mash with a spoon to get as much liquid out as you can. Set aside.
Sauté bacon pieces in a medium skillet until crispy. Remove the bacon and pour off all but a tablespoon of grease.
Sauté mushrooms in the same skillet. When brown, add chipotle, onion, bell pepper, and garlic, cooking until vegetables are softened. Season with salt.
Over low heat, add cream cheese and processed cheese to the veggies. Stir to melt and combine.
