1 teaspoon vegetable oil
1 small onion, thinly sliced
2/3 cup sliced baby bella mushrooms
2 cups frozen potatoes
2/3 cup egg whites
1/4 cup shredded Cheddar cheese (1 oz)
Salt and pepper to taste

Steps:

  • In 10-inch skillet, heat oil over medium-high heat. When oil is hot, add onion and mushrooms; cook and stir until onion is softened and slightly caramelized.
  • Add frozen potatoes; stir to combine. Cook about 10 minutes or until potatoes are golden brown.
  • Add egg whites; cook and stir about 2 minutes or until eggs are fully cooked. Add cheese, salt and pepper.

1 tablespoon vegetable oil
8 ounces bulk Italian sausage
1 potato, peeled and diced
¼ onion, chopped
1 cup frozen mixed vegetables
salt and pepper to taste
¼ cup shredded Cheddar cheese

Steps:

  • Heat the vegetable oil in a large skillet over medium heat. Stir in the sausage, and cook until crumbly and just slightly pink, about 5 minutes. Stir in the diced potato and onion. Continue cooking until the potatoes are tender and have lightly browned, 10 to 15 minutes.
  • Once the potatoes are tender, stir in the mixed vegetables until hot. Season to taste with salt and pepper. Sprinkle with Cheddar cheese before serving.

I found this recipe from the LA times, and most certainly is delicious. Growing up we always had the corned beef hash. I have to say I like this better.Diners always serve the best hash in my opinion..must be all that seasoning of their grills..try it you will like it.

1 1/4 - cooked roast beef, sliced into chunks
1 pound(s) baking potatoes (about 2 large), cubed
1/2 - red bell pepper, chopped
2 clove(s) garlic
1/2 - jalapeño pepper, seeded
2 teaspoon(s) crushed red chile flakes
2 teaspoon(s) dried oregano
2 tablespoon(s) soy sauce
- salt and pepper
- olive oil

Steps:

  • Working in batches, combine equal portions of beef, potatoes, bell pepper, garlic and jalapeño in the bowl of a food processor and pulse briefly until the mixture is reduced to a coarse crumb. (This can also be done with a meat grinder.) Repeat until all ingredients have been chopped. Place the finished mixture in a large bowl. Sprinkle with chile flakes, oregano and soy sauce, and stir the mixture gently to combine.
  • Prepare the hash in batches: Drizzle olive oil into a large cast-iron pan until it just coats the surface of the pan, then heat the pan over medium heat. Spoon a batch of hash into the pan and spread it out to a thickness of one-half- to three-fourths-inch thick, covering the bottom of the skillet. Cook hash, stirring very little, until the bottom has crisped and browned, 6 to 8 minutes. Scrape the crusty bits from the bottom and turn the mixture to allow other parts to brown. Taste and season as desired with salt and pepper. Cook for an additional 5 to 8 minutes, until there are plenty of crispy bits, then turn again. Remove hash from skillet, and begin another batch.
  • Repeat until all the hash has been cooked. (You may keep the finished batches warm on a platter placed in a 300-degree oven as you work.) Serve alone with Tabasco or ketchup or garnished with a fried egg.

When I attended the University of Michigan, one of my favorite places to eat was the Fleetwood Diner in downtown Ann Arbor. This tiny diner, no more than an antique boxcar, is open 24 hours a day and draws a diverse group of people. Many a night my friends and I enjoyed some great people watching and satisfying simple food. Best of all was their "Hippie Hash." I don't have the exact recipe, but then again, I could watch the cook make it, and he never measured, either. I always ordered this with 2 eggs, over easy, and a side of rye toast. Be sure and douse the whole thing with lots of Frank's Red Hot Sauce!

4 tablespoons light-flavored oil (such as canola or peanut)
1 tablespoon butter
2 large russet potatoes, grated
1/8 cup onion, diced
1/4 cup tomatoes, diced
1/4 cup mushroom, sliced and sauteed until edges brown
1/4 cup broccoli, chopped and steamed until tender
1/4 cup feta cheese, crumbled
4 slices rye bread, toasted (optional)
4 eggs, cooked to order (optional)
Frank's red hot sauce, it won't be the same without it (optional)

Steps:

  • Wrap the grated potatoes in a clean towel or paper towels and wring out all of the water.
  • Heat the oil and butter in a skillet to medium high heat.
  • Add the potatoes in a single layer and pat down into pan.
  • Cover pan and reduce heat to medium.
  • Let potatoes cook, undisturbed, for approximately 8 - 10 minutes.
  • Remove lid and add diced onions.
  • Periodically lift the browned bottom layer of potatoes with a spatula and mix it all together.
  • Cook for another 8 - 10 minutes, depending on your stove.
  • When the potatoes look done, taste them to be sure they're fully cooked.
  • When they're ready, add the tomatoes, mushrooms & broccoli.
  • Mix it all up and spoon it onto 2 plates.
  • Top each portion with half of the crumbled feta.
  • Serve buttered rye toast and fried eggs alongside.
  • Douse with lots of hot sauce and enjoy!

2 large russet potatoes
1 teaspoon oil
1/2 teaspoon salt

Steps:

  • Wash and peel the potatoes, then grate them on the large holes of a box grater.
  • Place the shredded potatoes in the center a thin, clean, dish towel. Gather the towel around the potatoes and squeeze as much water out of them as you can.
  • Heat the oil in a large skillet over medium heat.
  • Add the potatoes and spread out into a thin layer. Sprinkle with salt, and cook for about 4 minutes, until the bottom turns golden brown.
  • Flip the potatoes and cook an additional 2-4 minutes on the other side, until golden brown.

Dash ground cloves
2 tablespoons minced fresh cilantro

Steps:

  • Place potatoes in a saucepan; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, just until tender, 6-8 minutes. Drain., In a large nonstick skillet, heat butter over medium-high heat. Add celery; cook and stir until crisp-tender, 4-6 minutes. Add potatoes; cook until lightly browned, turning occasionally, 6-8 minutes . Stir in corned beef; cook until heated through, 1-2 minutes. Sprinkle with green onions, pepper and cloves; cook 1-2 minutes longer. Stir in cilantro.
