Five items and a few minutes are all you need for this versatile side dish sent in by Bernadette Bennett from Waco, Texas. She dresses up frozen corn with dill weed and a little garlic powder for mild results that complement almost any dish.

1 cup water
1 teaspoon beef bouillon granules
2-1/4 cups frozen corn
3 teaspoons dill weed
1 teaspoon garlic powder

Steps:

  • In a small saucepan, bring water and bouillon to a boil. Stir in corn, dill and garlic powder. Return to a boil. Reduce heat; cover and simmer for 3-4 minutes or until corn is tender. Drain.

The first time I sampled this dip was at a reunion. I hunted down the person who prepared it, acquired the recipe and have been making it ever since. Our daughter served it at our surprise 50th wedding anniversary party, and it was a hit.

1 can (12 ounces) corned beef
2 cups sour cream
2 cups mayonnaise
1/3 cup minced fresh parsley
2 tablespoons finely chopped onion
2 tablespoons snipped fresh dill or 2 teaspoons dill weed
1/2 teaspoon seasoned salt
Assorted crackers or vegetables

Steps:

  • Crumble corned beef into a large bowl. In a small bowl, combine the sour cream, mayonnaise, parsley, onion, dill and seasoned salt. Pour over beef; toss to coat. Serve with crackers or vegetables.

One year, when St. Patrick's Day was coming near, I knew what would happen if I served plain cabbage again-the kids would all take one look and go "yuck"! So I decided to try this recipe. It's now become more or less a family tradition for us come every March 17. In fact, my husband (we're the parents of four and grandparents of five) likes it so much I fix it for him year-round. Friends enjoy it a great deal, too-it makes a great-looking platter!

1 corned beef brisket (2-1/2 to 3-1/2 pounds)
1/4 cup honey
3 teaspoons Dijon mustard, divided
1 medium head cabbage (3 pounds)
2 tablespoons butter
1 tablespoon minced fresh dill or 1 teaspoon dill weed

Steps:

  • Place brisket with its seasoning packet in a Dutch oven; add enough water to cover. Cover and simmer 2-1/2 hours or until tender. Remove the brisket and place on a broiling pan; reserve cooking liquid in Dutch oven. Combine the honey and 1 teaspoon mustard; brush half over meat. , Broil 4 in. from the heat for 3 minutes. Brush with the remaining honey mixture; broil 2 minutes more or until glazed. Meanwhile, cut cabbage into eight wedges; simmer in cooking liquid for 10-15 minutes or until tender. , Combine butter, dill and remaining mustard; serve with cabbage wedges and sliced corned beef.

1 teaspoon(s) dried dill weed

Steps:

  • In a medium size skillet place you butter then add your frozen corn. Sprinkle the dill over the corn and salt and pepper to taste.
  • Turn your burner to medium heat and cook about 20 minutes or until corn is cooked through. This recipe can easily be doubled or tripled.

12 ears corn, silks removed, husks left on, and soaked in cold water for 20 minutes
1/2 pound unsalted butter, slightly softened
1/2 cup chopped fresh dill
Salt and pepper

Steps:

  • Heat grill to high. Remove corn from water and place on the grill. Close cover and grill until just cooked through, about 20 minutes. While corn is grilling, combine butter and dill in a food processor until smooth. Season with salt and pepper, to taste. Remove husk and slather with dill butter.
