4 teaspoons olive oil
1 tablespoon water
1 tablespoon white wine vinegar
1-1/2 teaspoons lemon juice
1 teaspoon honey
1 garlic clove, minced
1/4 teaspoon salt
Dash cayenne pepper
2 cups fresh broccoli florets
2 tablespoons chopped sweet red pepper

Steps:

  • In a jar with a tight-fitting lid, combine the first 8 ingredients; shake well. In a small bowl, combine broccoli and red pepper; add dressing and toss to coat. Cover and refrigerate for at least 1 hour. Serve with a slotted spoon.

6 cups fresh broccoli florets
1 cup canola oil
1 cup cider vinegar
2 tablespoons snipped fresh dill
2 teaspoons sugar
1 teaspoon garlic salt
1 teaspoon salt

Steps:

  • Place broccoli in a large bowl or shallow dish. Whisk together remaining ingredients; add to broccoli and turn to coat. Cover and refrigerate 4 hours or overnight., To serve, drain broccoli, discarding marinade.

1/3 cup chopped onions or 1/3 cup chopped leek
1 garlic clove, minced
2 teaspoons extra virgin olive oil
1/3 cup reduced-sodium chicken broth
1 lb broccoli, cut into spears
2 teaspoons lemon juice
1 teaspoon cornstarch
1 tablespoon chopped fresh dill or 1/2 teaspoon dried dill
to taste kosher salt
to taste fresh ground black pepper
lemon slice (optional)

Steps:

  • In a large saucepan cook and stir onion and garlic in hot oil about 3 minutes or until tender. Add broth; bring to boiling. Add broccoli. Return to boiling; reduce heat. Cover and simmer for 8 to 10 minutes or until tender. Transfer vegetables to a serving platter, reserving broth in pan (add additional broth, if necessary, to measure 1/2 cup).
  • In a small bowl combine lemon juice and cornstarch; add to broth in saucepan. Cook and stir until thickened and bubbly; cook and stir for 2 minutes more. Stir in dill. Season to taste with kosher salt and pepper. Spoon sauce over vegetables; toss to coat. If desired, garnish with lemon slices.

Strange as it may sound, broccoli is one of the more exotic (and recently made popular) vegetables now available in India. Not quite adopted into our Indian cuisine, one has to create and find innovative ways to cook it. I generally tend to just steam it and use it in salads. This one is to be had raw, after having been marinated overnight. A great idea for the relish tray.

1 cup cider vinegar
1/3 cup vegetable oil
1/8 cup water
1 tablespoon dill
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon pepper
1 tablespoon sugar

Steps:

  • Remove tough ends from broccoli stalks.
  • Also remove the large outer leaves and cut into florets, reserving stalks for another use.
  • Place broccoli in a bowl or zipper storage bag.
  • Combine remaining ingredients and pour over broccoli.
  • Chill overnight, mixing occasionally.

1 small head cauliflower, broken into florets
1/2 pound sliced fresh mushrooms
1 small red onion, halved and sliced
1/2 cup canola oil
1/4 cup sugar
2 tablespoons cider vinegar
3/4 teaspoon onion salt
1/2 teaspoon paprika

Steps:

  • In a large bowl, combine the broccoli, cauliflower, mushrooms and onion. In a jar with a tight-fitting lid, combine the remaining ingredients; shake until sugar is dissolved. Pour over vegetables and toss gently to coat. Cover and refrigerate overnight, stirring occasionally.

4 boneless skinless chicken breast halves (6 ounces each)
1/2 teaspoon garlic salt
1/4 teaspoon pepper
1 tablespoon olive oil
4 cups fresh broccoli florets
1 cup chicken broth
1 tablespoon all-purpose flour
1 tablespoon snipped fresh dill
1 cup 2% milk

Steps:

  • Sprinkle chicken with garlic salt and pepper. In a large skillet, heat oil over medium heat; brown chicken on both sides. Remove from pan., Add broccoli and broth to same skillet; bring to a boil. Reduce heat; simmer, covered, until broccoli is just tender, 3-5 minutes. Using a slotted spoon, remove broccoli from pan, reserving broth. Keep broccoli warm., In a small bowl, mix flour, dill and milk until smooth; stir into broth in pan. Bring to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes. Add chicken; cook, covered, over medium heat until a thermometer inserted in chicken reads 165°, 10-12 minutes.
