Yield 1 loaf (16 pieces).

Number Of Ingredients 11

1/4 cup sugar
2 packages (1/4 ounce each) active dry yeast
2 teaspoons dill weed
1-1/2 teaspoons salt
4-1/2 cups all-purpose flour
1 cup water
1 cup 2% milk
1/4 cup canola oil
1 large egg, room temperature
2 teaspoons butter, melted
1/2 teaspoon kosher salt

Steps:

  • In a large bowl, mix sugar, yeast, dill weed, salt and 2 cups flour. In a small saucepan, heat water, milk and oil to 120°-130°. Add to dry ingredients; beat on medium speed 2 minutes. Add egg; beat on high 2 minutes. Stir in remaining flour to form a stiff batter. Cover and let rise until doubled, about 1 hour., Preheat oven to 375°. Stir down batter. Transfer to a greased 2-1/2-qt. round baking dish. Bake until bread is deep golden brown and sounds hollow when tapped, 45-50 minutes., Cool 5 minutes before removing to a wire rack. Brush with butter; sprinkle with salt. Cool completely.

I'm not sure where this recipe came from but it's one that my mom made all the time when I was growing up. It's now a regular at my house and it gets excellent reviews from everyone I've served it to...and the best part is the kids love it too!

1 egg
1 small onion, chopped
½ cup dill pickle juice
¾ teaspoon salt
¼ teaspoon ground black pepper
1 slice bread, torn into small pieces
1 pound lean ground beef
¼ cup chopped dill pickles
¼ cup ketchup
2 tablespoons water
1 tablespoon brown sugar
½ teaspoon Worcestershire sauce

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 8x8 inch baking dish.
  • Beat the egg in a mixing bowl. Whisk in the onion, pickle juice, salt, and pepper. Stir in the bread until soggy, then mix in the ground beef until evenly combined. Form into a loaf and place into the prepared pan. Stir together the chopped pickles, ketchup, water, sugar, and Worcestershire sauce; pour over the meatloaf.
  • Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

1 package (1/4 ounce) active dry yeast
1/4 cup warm water (110° to 115°)
1 cup 2% cottage cheese
1/4 cup snipped fresh dill or 4 teaspoons dill weed
1 tablespoon butter, melted
1-1/2 teaspoons salt
1 teaspoon sugar
1 teaspoon dill seed
1 large egg, room temperature, lightly beaten
2-1/4 to 2-3/4 cups all-purpose flour

Steps:

  • In a large bowl, dissolve yeast in warm water. In a small saucepan, heat cottage cheese to 110°-115°; add to yeast mixture. Add fresh dill, butter, salt, sugar, dill seed, egg and 1 cup flour; beat until smooth. Stir in enough remaining flour to form a soft dough. Do not knead. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Turn onto a lightly floured surface; shape into a 6-in. circle. Transfer to a greased 9-in. round baking pan. Cover and let rise in a warm place until doubled, about 45 minutes. Preheat oven to 350°., Bake until golden brown and bread sounds hollow when tapped, 35-40 minutes. Remove from pan to a wire rack to cool. Cut into wedges.

1 cup warm 2% milk (110° to 115°)

2 tablespoons sugar
1 egg
2 teaspoons dill seed
2 teaspoons dried minced onion
1/2 teaspoon salt
3 cups all-purpose flour

Steps:

  • In a large bowl, dissolve yeast in warm water. Add the milk, butter, sugar, egg, dill seed, onion, salt and 1-1/2 cups flour. Beat on medium speed for 3 minutes. Stir in remaining flour (batter will be sticky). Do not knead. Cover and let rise in a warm place until doubled, about 1 hour., Stir batter down. Spoon into a greased 9x5-in. loaf pan. Cover and let rise until nearly doubled, about 45 minutes. , Bake at 350° for 30-35 minutes or until golden brown (cover loosely with foil if top browns too quickly). 1/4 c. sifted flour
1/4 t. baking soda
2 T. sugar
1 t. salt
2 T. dried minced onion or 2 t. grated onion
1 T. dillseed or dillweed
1 or 2 T. butter
1/4 c. 120 degrees-130 degrees water
1 c. lukewarm large-curd cottage cheese
1 lightly beaten egg
2 c. flour(divided into 1/2 c. and 1 1/2 c.)
melted butter
sprinkling of salt

Steps:

  • Mix together yeast, flour, baking soda, sugar, salt, onion, dillseed. Combine the butter and warm water and gradually add to the yeast mixture. Beat 2 minutes at medium speed, scraping occasionally. Add cottage cheese, egg, and 1/2 c. flour. Beat at high speed for 2 minutes. Beat in 1 1/2 c. flour to make a stiff batter. Cover and let rise until doubled in bulk. Stir downand transfer to a well-greased 1 1/2 qt. ovenproof casserole. Cover and let rise until doubled in bulk. Bake in a preheated 350 degree oven for 35 to 40 minutes. Top with melted butter and a sprinkling of salt.

DILL BEER BREAD (GIFT IN A JAR)



Dill Beer Bread (Gift in a Jar) image

My favorite Beer Bread variation, so good with soups. You really don't want to skip the melted butter. This recipe comes from The Perfect Mix by Diane Phillips, so is written as a Gift in a Jar - but of course, you could just mix it up and bake it for yourself, too! :) If you don't have self rising flour (like me!), here's a substitute: Recipe #5247. Time is for baking the bread.

3 cups self-rising flour
3 tablespoons sugar
2 tablespoons dried dill
12 ounces beer (or 12 oz. unflavored seltzer)
1/2 cup butter, melted

Steps:

  • To make mix: Combine first 3 ingredients and place in an airtight container.
  • To bake: Preheat oven to 375 degrees F. In a large mixing bowl, combine mix with beer (or seltzer) with a wooden spoon. The batter will be lumpy, don't overmix.
  • Place batter in a greased loaf pan. Pour 1/3 of the melted butter over the dough.
  • Bake for 40 minutes, then pour another 1/3 of the butter over the top of the bread. Continue baking for 10 minutes more.
  • Pour the last 1/3 of the butter over the top of the bread and bake 10 more minutes. Remove from the oven and allow to cool for 30-40 minutes.

1 package active dry yeast
2 1/4 cups all-purpose flour
1/4 cup hot water (120 degrees)
1 cup large-curd low-fat cottage cheese
1 tablespoon unsalted butter, melted
1/4 teaspoon baking soda
2 tablespoons sugar
1 1/2 teaspoons salt
1/2 teaspoon dill seed
2 teaspoons finely minced onion
1/4 cup packed dill, snipped 1/4 inch long
1 large egg, lightly beaten, room temperature
Vegetable-oil cooking spray

Steps:

  • In the bowl of electric mixer, gently combine the yeast, 1/4 cup flour, and water. Let sit until foamy, about 10 minutes. Meanwhile, place the cottage cheese in the top of a double boiler full of boiling water, and stir until warm to the touch, or microwave until warm. Add the melted butter to the yeast mixture, and mix on medium speed for 2 minutes.
  • Add the warmed cottage cheese, baking soda, sugar, salt, dill seed, onion, snipped dill, egg, and the remaining dry flour to the yeast mixture, and mix on high speed to make a stiff batter, about 3 minutes. Scrape down the sides of the bowl, cover, and set batter aside in a warm place to rise until doubled in bulk, 30 to 40 minutes.
  • Spray an 8-inch cast-iron skillet generously with vegetable cooking spray, and set aside. Scrape out the batter, and pour it into the skillet. Spray plastic wrap with cooking spray, and place over the dough, pressing down on the wrap to even out the top of the dough. Lift the plastic wrap so it is not touching the surface of the dough, and let the dough stand in a warm place until doubled, about 25 minutes.
  • Heat the oven to 350 degrees. Remove the plastic wrap, transfer the dough to the oven, and bake until golden brown, about 35 to 40 minutes. If the bread begins to get too dark, cover it loosely with aluminum foil. Remove the pan from the oven, and transfer to a wire rack to cool. Serve the bread warm, cut into wedges.
