GRILLED TILAPIA IN FOIL (FISH FOIL PACKETS)

Steps:
- Preheat grill to medium-high heat, about 375-425 degrees F.
- Cut 4 large squares of aluminum foil, place on a baking sheet and fold up edges to form pouch.
- Place fish on the bottom of foil. Drizzle with olive oil (about 1 teaspoon per fillet) and sprinkle with garlic powder and salt.
- Divide corn, peppers, onion, and grape tomatoes over the top of the fish. Drizzle with remaining olive oil and sprinkle with salt and pepper.
- Fold sides of aluminum foil together, to create a tent and roll edges together, ensuring there are no gaps as you fold the sides together.
- Place foil packets directly over heat and cook for 10 minutes, or until the fish is opaque and flakes easily. Set fish aside. If you aren't eating the meal immediately, be sure to open up the packets to vent or they will continue cooking.
- Meanwhile, brush bread with olive oil and sprinkle lightly with salt. Grill bread for about 2-4 minutes per side, or until lightly charred.

BAKED LEMON-GARLIC TILAPIA AND POTATOES IN FOIL
Steps:
- Preheat the oven to 375 degrees F (190 degrees C). Spray foil with cooking spray.
- Place equal amounts of diced potato and red bell pepper in the middle of each piece of foil and sprinkle with 1/2 of the seafood seasoning. Dot 1 1/2 teaspoons of butter on top of the potatoes.
- Add 1 tilapia fillet to each packet of potatoes. Sprinkle fillet with remaining seafood seasoning. Dot remaining 1 1/2 teaspoons butter on top of the fillets.
- Cut 1/2 of the lemon into thin slices and place 1 to 2 lemon slices on top of each fillet. Seal foil packets and crimp edges tightly.
- Bake in the preheated oven until tilapia flakes easily with a fork, about 25 minutes.
- Open packets carefully and vent steam. Squeeze remaining lemon juice over the tilapia and serve immediately.

- Create aluminum foil packets for each fillet. Place fish into the individual foil packets and place carrots and celery on top of each fillet. Divide vermouth and butter evenly between each pouch. Seal each foil packet and place on a baking sheet.

FOIL PACKET GRILLED TILAPIA WITH VEGGIES

- Preheat the grill to high (between 450-500 degrees)
- For each packet, you will need 2 large (about 20 inches long) sheets of foil, or just 1 sheet of heavy duty aluminum foil.
- Create four packet making stations with the foil, then spray each with cooking spray or brush with olive oil.
- Mix together seasonings (salt, pepper, garlic powder, and dill) in a bowl. Layer each foil packet with one tilapia fillet and 1/4 of the veggies. Sprinkle evenly with the seasoning mixture, turning the fish over to coat both sides.
- Place several slivers of butter on top of each packet, a few on both the fish and the veggies. Put two slices of lemon on top of the fish, then toss the capers over everything.
- Fold the long sides of the foil in towards the center and roll over to seal, then roll up the short edges.
- Place on the preheated grill, cover, and cook for 10-12 minutes. If the fillets were frozen, add a few minutes to the cooking time.
- To serve, carefully remove the fish from the grill and peel back the foil layer. Fish are done when they are white (not translucent) and flake easily with a fork. Serve in the foil packet or on plates with the sauce from the bottom of the packet.

Very easy, quick and delicious creation of my husband's which works just as well on the grill as in the oven. It's really not dilapidated at all, he just thought it just had that flow-off-the-tongue sound. Plus he's really warped... like his lunatic wife.

- Preheat the oven to 375°F.
- Clean the scallions, cutting off most of the green. Cut them in two pieces, and slice each piece in half lengthwise.
- On each sheet of foil, place 1/2 teaspoon butter. Drape 1/4 of the tilapia filets over the butter, add salt and pepper to taste and one quarter of the slice scallions. Add about 1/2 teaspoon of water to each packet, sprinkle 1/4 of the herbes de provence on top of each, then fold the foil up and over the filet until you have a loose packet, making sure there's some room inside to steam. Seal all edges. Repeat for the other filets.
- Put the packets on a baking sheet. If you've folded them correctly they should not leak while they're in the oven. If you're in doubt, put them in a large oven dish instead. Put into oven for 20-25 minutes.
- It's very difficult to overcook fish this way, so if you're leery of the fish being undercooked, leave it in slightly longer.
- Open each packet at the table -- you don't want to miss that aroma!

TILAPIA POCKETS WITH CILANTRO-LEMONGRASS MOJO

- Preheat your oven to 350 degrees F.
- Place the lemongrass, all but 2 tablespoons of the cilantro, 1/2 cup of the mint, 1/2 cup of the oil, garlic, jalapenos, paprika, and salt in a food processor or blender and process until smooth. Add the remaining 1/2 cup of oil and vinegar and process until smooth. Place the fish fillets in a large baking dish, cover with the mojo and turn to coat. Marinate fish for up to 1 hour.
- Place 4 (16-inch) long pieces of parchment paper on your work surface with the short half facing you. Crease each down the middle. Place a fillet in the center of the bottom half of the rectangle and pour about 1/4 cup of the mojo over each fillet and sprinkle with the remaining 2 tablespoons of cilantro. Fold the top half of over the fillet so that the top and bottom edges meet. Tightly crimp and fold the edges of the parchment working from 1 end around to the other to seal the package. Place the packets on a baking sheet and bake for 9 to 10 minutes for 3/4-inch thick fillets or up to 12 minutes for 1-inch thick fillets.
- Place the fish packets on a large serving dish and open the packets tableside. Serve with juices from the packet and sprinkled with the chopped cilantro and mint leaves.

- 1. Preheat the oven to 400 degrees F. Whisk together the white wine, olive oil, lemon zest and juice, 1/2 teaspoon salt and 1/4 teaspoon pepper in a small bowl.
