It's time to rescue the classic Caesar from bagged salad boredom. A modern Caesar salad starts with romaine leaves left whole, and ends when there isn't a garlicky crouton or drop of the anchovy-, Parm-, and pepper-flecked dressing left on the plate.

6 garlic cloves, smashed
3 cups cubed baguette (from 1 [5-oz.] baguette)
1 ounce Parmesan cheese, grated (about ¼ cup)

1 1/2 cups vegetable oil
1/4 cup large capers, rinsed and drained, patted dry
2 1/2 tablespoons red wine vinegar
2 1/2 tablespoons fresh lemon juice (from 1 lemon)
2 tablespoons water
1 teaspoon Dijon mustard
3/4 teaspoon kosher salt
6 anchovy fillets
2 garlic cloves, smashed
1 large egg yolk
3/4 cup pure olive oil
1 teaspoon black pepper
2 ounces Parmigiano-Reggiano cheese, grated (about ½ cup), divided
2 romaine lettuce hearts (about 1 lb.), leaves separated
2 ounces Parmigiano-Reggiano cheese, shaved (about ½ cup)

Steps:

  • Prepare the croutons: Preheat oven to 400°F. Heat olive oil and garlic cloves in a small saucepan over medium-high; cook until garlic begins to sizzle, 4 to 5 minutes. Remove and discard garlic.
  • Place cubed baguette in a medium bowl; drizzle with garlic-infused oil. Toss to coat. Sprinkle with Parmesan, salt, and pepper. Toss to coat. Arrange in a single layer on a rimmed baking sheet. Bake in preheated oven until toasted, 8 to 10 minutes. Set aside.
  • Prepare the salad: Heat vegetable oil in a heavy saucepan over medium-high to 375°F. Fry capers in 2 batches until golden, 30 seconds per batch. Using a slotted spoon, transfer to paper towels to drain.
  • Combine vinegar, lemon juice, water, mustard, salt, anchovy fillets, garlic, and egg yolk in a blender. Process until smooth. With blender running, slowly add olive oil until thickened. Transfer dressing to a bowl; stir in pepper and ¼ cup of the grated cheese.
  • Combine romaine hearts, croutons, and remaining ¼ cup grated cheese in a large bowl; drizzle with ¾ cup of the dressing, and toss gently to coat. Divide lettuce mixture among 4 plates; sprinkle with capers and shaved cheese. Serve with remaining dressing on the side.

1/4 cup extra-virgin olive oil
1/4 cup grated Parmesan
2 tablespoons fresh thyme leaves

1 tablespoon water

Steps:

  • Make the croutons:
  • Heat the oven to 350 degrees F.
  • Hand-tear the bread into small pieces and put them into a bowl. Add the olive oil, Parmesan, and thyme leaves; season with salt and pepper. Mix this well to combine all the flavors. Spread the cubes out onto a baking sheet and bake until they are golden brown, about 15 minutes. Let them cool before tossing them onto the salad.
  • Make the dressing: Put the anchovies, garlic, lemon juice, and water into a blender and process for 30 seconds until the mixture is smooth. With the blender running, pour the olive oil in slowly for the dressing to emulsify. Stir in the Parmesan and a couple of grinds of black pepper. Season, to taste, with salt and set aside. (Refrigerate the dressing if you will not be using it right away.)
  • Assemble the salad: Tear the lettuce into a large bowl. Add enough dressing to coat the salad to your liking. Add the croutons and some extra Parmesan and toss the salad well. Serve immediately.

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Place bread on a rimmed baking sheet.
  • Whisk together oil, butter, garlic, salt, and pepper in a liquid measure. Pour mixture over the bread and toss with your hands until evenly coated. Spread bread mixture into a single layer. Bake in the preheated oven until golden brown and toasted, yet slightly soft in the center, 15 to 18 minutes, tossing croutons a few times during baking. This recipe marks the first time I remember making something and feeling the essence of timing in cooking: the buttered dish, the preheated oven and the melted butter cooling slightly while I gathered and blended all the other ingredients. SO satisfying.

1 1/4 cups coarsely ground cornmeal
3/4 cup all-purpose flour
1/4 cup sugar
2 teaspoons baking powder
1 teaspoon kosher salt
1/2 teaspoon baking soda
1 cup buttermilk
1/3 cup whole milk
2 large eggs, lightly beaten
8 tablespoons unsalted butter, melted, plus 1 tablespoon for greasing the pan
1 1/2 tablespoons Dijon mustard
2 large cloves garlic, grated
Kosher salt and coarsely ground black pepper
1/2 cup lemon juice
1 tablespoon caper juice
2/3 cup olive oil
1/3 cup canola oil
3 anchovy fillets, finely chopped, plus 1/2 teaspoon anchovy oil, optional
Parmesan, for grating
3 heads romaine, outer leaves discarded, washed, dried and cut into 1-inch pieces
16 to 20 thin slices pancetta, cooked crispy like bacon
1/2 teaspoon cayenne pepper

Steps:

  • For the cornbread: Preheat the oven to 400 degrees F.
  • Whisk together the cornmeal, flour, sugar, baking powder, salt and baking soda in a large bowl. Whisk in the buttermilk, milk and eggs. Whisk in the melted butter.
  • Coat the sides and bottom of a 9-inch skillet with the remaining butter. Pour the batter into the skillet and bake until the center is firm and a cake tester or toothpick inserted in the center comes out clean, 20 to 25 minutes. Let cool. Cut half of the cornbread into cubes. (Devour the other half with butter and jam.)
  • For the dressing: Combine the mustard, garlic, a pinch salt and about 1 teaspoon coarsely ground pepper in a food processor. Pulse to blend. With the machine running, pour the lemon juice and caper juice into the mix. Slowly pour in the olive oil and then the canola oil. Transfer the dressing to a bowl. Taste for seasoning. Too lemony? Add more oil. Too oily, add more lemon. Stir in the anchovies, anchovy oil and a few tablespoons grated Parmesan. Refrigerate. (See Cook's Note.)
  • For the salad: Preheat the oven to 375 degrees F.
  • Spread the cornbread cubes on a baking sheet and bake until browned and toasty, 10 to 12 minutes.
  • Add about three quarters of the dressing to a large bowl and toss the romaine with the dressing. Grate some Parmesan over the leaves. Use a tea strainer or sifter to sprinkle the pancetta with an even, light layer of the cayenne. Top with salad with the pancetta and warm cornbread croutons and serve immediately.

8 anchovy fillets
3 tablespoons fresh lemon juice
3 garlic cloves

3/4 cup olive oil
For croutons and salad
3 tablespoons olive oil
4 garlic cloves, minced
2 teaspoons chopped fresh thyme
1 teaspoon chopped fresh rosemary
3 3/4-inch-thick country bread slices, crusts cut off, bread cut into 3/4-inch cubes (about 4 cups total)
12 cups coarsely torn hearts of romaine (about 9 ounces)
1/2 cup freshly grated Parmesan cheese
Cracked black pepper

Steps:

  • Make dressing:
  • Combine 1/2 cup Parmesan, anchovies, lemon juice, 3 garlic cloves, and mustard in processor; blend well. With processor running, slowly add olive oil. Season with salt and pepper.
  • Make croutons and salad:
  • Preheat oven to 325°F. Heat 3 tablespoons oil in heavy medium skillet over medium heat. Add garlic, thyme and rosemary; saut until fragrant, about 1 minute. Remove from heat. Add bread cubes to skillet with garlic-herb oil and toss to coat. Spread out bread cubes on rimmed baking sheet. Sprinkle with salt and pepper. Bake just until croutons are golden, stirring occasionally, about 15 minutes.
  • Place romaine in large bowl. Add 2/3 cup dressing and 1/4 cup grated Parmesan cheese and toss to coat. Add croutons and toss well. Serve, passing remaining dressing, Parmesan cheese and cracked black pepper separately.

½ bulb garlic, peeled
1 cup extra virgin olive oil
¾ (1 pound) loaf sourdough bread, cubed
1 cup ghee

Steps:

  • Combine garlic and oil in a small saucepan. Simmer until cloves are a light gold color, about 15 minutes. Pour oil through a fine sieve, squeeze all juice from cloves, and then discard the solids. Set garlic oil aside.
  • Preheat oven to 300 degrees F (150 degrees C). Lightly oil a baking sheet.
  • Arrange bread cubes in a single layer on baking sheet. Bake, turning bread cubes periodically, until lightly browned, about 20 minutes.
  • In a large, non-stick skillet, melt 1/3 cup ghee with 1/3 cup garlic oil over medium heat. Cook toasted bread cubes in batches until light to medium golden brown, turning frequently. Add more ghee and garlic oil as needed. Turn out into basket lined with paper towels, and drain for about 20 minutes.

1/2 cup vegetable oil, plus more as needed
3 heads Little Gem lettuce, or 1 head romaine
Ice water
2 tablespoons finely grated Parmigiano-Reggiano, or more to taste
Caesar Dressing, from Step 4
Sesame Croutons, from Step 3
2 tablespoons unsalted butter
1/4 cup extra-virgin olive oil
3 cloves garlic, peels left on
1 1/4 cups coarse bread crumbs
Freshly ground black pepper
kosher salt
3 tablespoons sesame seeds, oven-toasted at 350 F for 2?3 minutes
1 cup mayonnaise
1 anchovy
1 teaspoon fish sauce, preferably Italian
1 1/2 tablespoons Roasted Garlic Purée, from Step 1
1 small clove garlic
2 tablespoons finely grated Parmigiano-Reggiano
2 tablespoons lemon juice
3 tablespoons Water
1/2 tablespoon sugar, plus more to taste
Freshly ground black pepper
kosher salt
2 tablespoons extra-virgin olive oil
2 tablespoons vegetable oil

Steps:

  • Roasted Garlic Purée: Preheat oven to 300 F. Slice off the top of the bulb, just enough to expose the cloves. Place garlic in a small baking dish, cut side down. Add enough vegetable oil to cover the garlic halfway. Roast in the oven until cloves are golden and soft, about 1 hour. Remove from oven and set aside until cool, 20 minutes. Fit a fine-mesh strainer over a bowl and press the cloves through the mesh with your hands, a bench scraper, or spoon; this is to catch any tough fiber or skin. Set aside. Makes about ¼ cup. (Note: You can roast several heads of garlic at a time and store the purée in an airtight container in the refrigerator for up to 1 month.)
  • Lettuce: Remove and discard tough outer leaves of the lettuce. Cut away and discard the root base, then separate leaves, cutting the larger ones in half vertically and keeping smaller ones whole. Fill the bowl of a salad spinner halfway with ice water and insert the basket. Add lettuce to the basket and submerge completely. Soak for 10 minutes to crisp up the leaves.
  • Sesame Croutons: In a medium skillet over medium heat, add butter and oil. Smash garlic cloves with the flat side of a knife, and add to butter and oil. Cook until bubbly, stirring occasionally, 2-3 minutes. Add breadcrumbs and toss or stir to combine. Season with freshly ground black pepper, about 8 grinds, and a pinch of salt. Continue toasting the crumbs until golden brown, 2-3 minutes. Drain on paper towels to cool.
  • (Note: The video shows a double serving of dressing. Use the amounts in the written recipe.)Dressing: In a blender, add mayonnaise, anchovy, fish sauce, and the Roasted Garlic Purée. (Save the remaining purée for another use.) Use a Microplane to grate the garlic clove into the blender; then add Parmigiano-Reggiano, lemon juice, water, and sugar. Season with freshly cracked black pepper (about 10 grinds) and a pinch of salt. Purée just until combined. With the motor on, drizzle in olive oil, then vegetable oil. Turn motor off, taste for seasoning, and add more salt and sugar as needed. (Makes about 1¼ cups. Store in the refrigerator in an airtight container for up to 1 week.)
  • Assembly: Remove ice water from salad spinner and spin the lettuce leaves twice, draining water each time, until dry. Lay out on a sheet tray lined with paper towels to further drain. Remove garlic cloves from Sesame Croutons and discard. Place half of the lettuce into a bowl. Drizzle several spoonfuls of dressing, add 1 tablespoon Parmigiano-Reggiano, and toss to combine. Repeat with remaining lettuce. Place on a serving dish, garnish with plenty of Sesame Croutons, and serve.

HERBED GARLIC AND PARMESAN CROUTONS

2 large garlic cloves, sliced thin lengthwise
1 teaspoon dried oregano, crumbled
1 teaspoon dried basil, crumbled
1 teaspoon dried thyme, crumbled
1/2 teaspoon salt plus additional to taste
1/2 teaspoon pepper
1/2 cup olive oil
1 loaf of Italian bread, cut into 3/4-inch cubes (about 7 cups)
1/4 cup finely grated fresh Parmesan

Steps:

  • In a small saucepan combine the garlic, the oregano, the basil, the thyme, 1/2 teaspoon of the salt, the pepper, and the oil and simmer the mixture for 5 minutes, and discard the garlic. In a bowl toss the bread cubes with the oil mixture, spread them in a jelly-roll pan, and bake them in ht e middle of a preheated 350°F oven for 8 minutes. Sprinkle the croutons with the Parmesan and bake them for 7 minutes more, or until they are golden. Sprinkle the croutons with the additional salt and let them cool. The croutons keep in an airtight container for 1 week. Serve the croutons as a topping for tossed green salad.
