TURKEY DINNER WITH ALL THE TRIMMINGS



Turkey Dinner with All the Trimmings image

4 cups low-fat, low-sodium chicken broth
1 pound fresh or completely thawed turkey breast, trimmed of all visible fat
1 tablespoon extra-virgin olive oil
1/4 cup chopped onions
1/4 cup chopped celery
Salt
Freshly ground black pepper
1 1/2 teaspoons poultry seasoning, such as Spice Hunter
4 ounces cubed stale 100% whole-wheat bread
1 tablespoon chopped fresh flat-leaf parsley
4 1/2 teaspoons cornstarch
1/2 cup no-sugar-added cranberry sauce, such as Steel's Gourmet Agave

Steps:

  • In a medium pot with a candy thermometer or deep-fry thermometer attached, heat the broth. When the liquid reaches 165 degrees F, with barely any bubbles reaching the surface, add the turkey. Adjust the heat, if necessary, to keep the temperature at 165 degrees F. Using foil, cover the pot around the thermometer and poach the turkey until the internal temperature of the turkey reaches 150 degrees F, about 30 to 40 minutes. Turn off the heat and let the turkey rest in the poaching liquid for an additional 15 to 20 minutes.
  • Meanwhile, heat a large nonstick pan over medium heat. When hot, add the olive oil. Add the onions and celery and cook until the vegetables are soft, about 5 minutes. Season with salt and pepper to taste. Add the poultry seasoning and bread. Stir to combine. Lower the heat to low and add the poaching liquid, 1/2 cup at a time (about 1 cup total), to the pan to moisten the bread. Stir well, and then cover. Cook until the bread is moist and hot, about 5 minutes. Stir in the parsley and season with salt and pepper to taste. Set aside.
  • Remove the thermometer from the pot and bring the poaching liquid up to a simmer. In a small bowl, add the cornstarch. Whisk in about 1/2 cup of the poaching liquid, and then pour the mixture back in to the pot. Turn up the heat so that the liquid boils. Turn down the heat and simmer until the liquid thickens and reduces in volume by a third, about 10 minutes. If the liquid is too thin, mix more cornstarch with some liquid from the pot and stir it back into the simmering gravy. Season with salt and pepper to taste.
  • Slice the turkey breast as thinly as possible. Serve with the stuffing, gravy and cranberry sauce.

12 ounces turkey breast tenderloin steaks
2 tablespoons all-purpose flour
2 tablespoons dijon-style mustard
2 tablespoons dry white wine
1/2 teaspoon salt
1/8 teaspoon pepper
1 cup half-and-half or 1 cup light cream
1 tablespoon cooking oil
1 garlic clove, minced
1 medium red bell peppers (1 cup) or 1 medium green bell pepper, cut into julienne strips (1 cup)
1 medium onion, chopped (1/2 cup)
1 1/2 cups sliced fresh mushrooms
3/4 cup frozen peas, thawed
2 cups hot cooked noodles or 2 cups fettuccine
fresh whole mushroom (optional)
fresh basil sprig (optional)

Steps:

  • Rinse turkey and pat dry.
  • Cut into thin bite-size strips.
  • Set aside.
  • For sauce, in a small bowl stir together flour, mustard, wine, salt and pepper till smooth.
  • Slowly stir in half-and-half or light cream till well mixed.
  • Set aside.
  • Pour cooking oil into a wok or large skillet. (Add more oil as necessary during cooking).
  • Preheat over medium-high heat.
  • Stir-fry garlic in hot oil for 15 seconds.
  • Add sweet pepper and onions; stir-fry for 2 minutes.
  • Add sliced mushrooms; stir-fry for 2 minutes more or till crisp-tender.
  • Remove vegetables from the wok.
  • Add turkey to the hot wok.
  • Stir-fry for 2 to 3 minutes or till no pink remains.
  • Push turkey from the center of the wok.
  • Stir sauce.
  • Add sauce to the center of the wok.
  • Cook and stir till thickened and bubbly.
  • Return cooked vegetables to the wok.
  • Add thawed peas.
  • Stir all ingredients together to coat with sauce.
  • Cook and stir for 1 to 2 minutes more or till heated through.
  • Serve immediately over hot cooked noodles or fettuccine.
  • Garnish with whole mushrooms and fresh basil, if desired.

1 frozen turkey (12 lb.), thawed
1/3 cup GREY POUPON Dijon Mustard
1 Tbsp. oil

Steps:

  • Heat oven to 325°F.
  • Remove neck and giblets from turkey cavities. Free legs from tucked position. (Do not cut band of skin.) Using rubber spatula or hand, loosen skin over breast, starting at body cavity opening by legs. Spread 2 Tbsp. mustard inside body cavity; spread remaining mustard onto meat under skin. Use wooden toothpicks to secure skin at opening. Return legs to tucked position; turn wings back to hold neck skin in place.
  • Place turkey, breast side up, on rack in shallow open pan; brush with oil.
  • Bake 3-1/2 hours to 3-3/4 hours or until done (165°F), covering breast loosely with foil to prevent overbrowning if necessary. Remove from oven. Let stand 15 to 20 min. before carving. Discard toothpicks before serving.

1 teaspoon dried thyme leaves
3/4 teaspoon garlic-pepper seasoning
2 tablespoons olive oil
1 cup chicken broth
2 tablespoon coarse-grain Dijon mustard
1 tablespoon honey
1 tablespoon cornstarch
1 lb fresh asparagus, cut into 2-inch pieces (3 cups)
1 1/2 cups grape tomatoes, halved

Steps:

  • Sprinkle turkey with thyme and the garlic-pepper seasoning. In 12-inch skillet, heat 1 tablespoon of the oil over medium-high heat. Cook turkey in oil 5 to 7 minutes, turning once, until lightly browned and juice of turkey is clear when center of thickest part is cut (165°F). Remove from skillet; set aside.
  • In small bowl, combine broth, mustard, honey and cornstarch; set aside.
  • In same skillet, heat remaining 1 tablespoon oil over medium-high heat. Add asparagus to oil; cook 3 minutes, stirring frequently. Add cooked turkey and broth mixture. Cook and stir 1 minute or until sauce thickens. Add tomatoes; cook 1 minute longer, stirring constantly.

  • Roast turkey 30 minutes. Reduce oven temperature to 350°F. Cover entire turkey (not pan) with foil and roast 1 1/2 hours. Add 2 cups broth to pan; roast turkey 1 1/2 hours. Remove foil. Add 1 cup broth to pan and roast turkey until meat thermometer inserted into thickest part of thigh registers 175°F, basting occasionally with pan juices, about 30 minutes longer if unstuffed or 1 hour longer if stuffed. Transfer turkey to platter; tent with foil and let stand 30 minutes (internal temperature of turkey will increase 5 to 10 degrees). Reserve mixture in pan for gravy.
  • Strain pan juices into large measuring cup, pressing on solids; discard solids in strainer. Spoon fat from top of pan juices; discard fat. Add enough chicken broth to pan juices in cup to measure 4 1/2 cups. Melt 1/4 cup maple butter and 3 tablespoons butter in heavy large saucepan over medium-high heat. Add flour; whisk constantly until mixture is deep brown, about 8 minutes (mixture will resemble lumpy oatmeal-like paste). Gradually whisk in broth mixture; bring to boil. Add bay leaf and boil until thickened to sauce consistency, whisking occasionally, about 10 minutes. Whisk in Madeira, 1 tablespoon mustard, and marjoram. Simmer 2 minutes. Taste, adding more mustard if desired. Season gravy with salt and pepper. Brush turkey with maple butter. Serve turkey with gravy.
