Raspberry Vinaigrette is a fruity and naturally sweet vinaigrette recipe. It's great for spring and summer and adds a bright pop of raspberry flavor to any salad recipe.

1 1/2 cups raspberries (fresh or frozen)
1/2 cup olive oil
1/4 cup red wine vinegar
1 small shallot (diced (about 2 tbsp))
1 tsp Dijon mustard
1/4 tsp salt
pepper (to taste)

Steps:

  • Add all ingredients to a food processor and blend for 30 seconds.

¼ cup raspberry jam/preserves (I like Polaner All Fruit)
3 to 4 tablespoons organic, unfiltered apple cider vinegar (start with 3 tablespoons and add more to taste)
2 tablespoons filtered water
2 tablespoons extra-virgin olive oil
1½ teaspoons Dijon mustard
¼ teaspoon fine sea salt
⅛ teaspoon ground black pepper
½ small onion, minced

Steps:

  • Whisk together all ingredients, or for a completely smooth dressing, process in a blender or food processor.
  • Use or store refrigerated for up to 1 week.

1/2 cup raspberry vinegar
1/3 cup sugar
3/4 cup olive oil
1/2 teaspoon Dijon mustard
1/8 teaspoon pepper

Steps:

  • In a small saucepan, cook and stir vinegar and sugar over low heat until sugar is dissolved. Cool slightly. Pour into a jar with tight-fitting lid. Add remaining ingredients; cover and shake well. Refrigerate until chilled. Shake before using. Refrigerate leftovers.
