CLASSIC BUTTERSCOTCH DROPS RECIPE



Classic Butterscotch Drops Recipe image

Creamy and delicious, butterscotch is an old-fashioned favorite. This recipe for butterscotch drops produces a hard candy with a classic taste.

2 cups sugar
2/3 cup cream
2/3 cup water
1/8 teaspoon cream of tartar
6 tablespoons butter (cut into small pieces)
1/2 teaspoon vanilla extract

Steps:

  • Prepare 2 large baking sheets by lining them with aluminum foil and spraying the foil with cooking spray.
  • Combine the sugar, cream, and water in a large saucepan over medium heat and stir until the sugar dissolves. Add the cream of tartar and boil the mixture until it reaches 240 F ( soft-ball stage ). Add the butter and continue boiling until the mixture reaches 280 F ( soft-crack stage ).
  • Remove the pan from the heat and stir in the vanilla extract.
  • Using a very small teaspoon, carefully drop spoonfuls of the hot candy onto the prepared baking sheets. It is important to work quickly before the candy begins to set. The drops will spread, so leave a bit of space in between your spoonfuls. Continue forming small butterscotch drops on the prepared sheets until you run out of candy or it becomes too hard to work with.
  • Allow the drops to set at room temperature, then lift them off the baking sheet. Serve immediately, or place them in an airtight container and store at room temperature for up to 2 weeks.

6 cups Crispix® sweetened multi-grain cereal
3/4 cup creamy peanut butter
3/4 cup light corn syrup
1 milk chocolate candy bar (16.5-oz)

Steps:

  • 1. In 3-quart saucepan, over medium heat, bring corn syrup to a boil, stirring constantly. Stir in peanut butter until well combined. Remove from heat. Stir in KELLOGG'S CRISPIX cereal until evenly coated. Spread cereal mixture in 15 x 10 x 1-inch jelly roll pan or cookie sheet coated with cooking spray or lined with waxed paper.2. Melt milk chocolate bar over low heat, stirring constantly. Drizzle melted chocolate over top of cereal mixture. Chill in refrigerator. Break into bite-size pieces to serve. Store in airtight container.

2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon baking soda
3/4 cup butter or margarine
1 cup firmly packed brown sugar
1/2 cup granulated sugar
1 egg
1 tablespoon fat free milk
1 teaspoon vanilla extract
1 cup All-Bran® Original or All-Bran® Bran Buds®

Steps:

  • 1. Stir together flour, baking powder and baking soda. Set aside.2. In large mixing bowl beat together butter, brown sugar and granulated sugar until thoroughly mixed. Add egg, milk and vanilla. Beat well. Stir in Kellogg's® All-Bran® cereal and flour mixture, mixing until combined.3. Shape dough into two 10 1/2-inch-long rolls. Wrap in plastic wrap, covering ends carefully. Refrigerate at least 2 hours or until firm.4. Slice cookie rolls about 1/4 inch thick and place on ungreased baking sheet. Bake at 375°F about 9 minutes or until golden brown. Remove from baking sheets and cool on wire racks. Store in airtight container. VARIATIONS:CHOCOLATE: Stir in 2 squares melted, unsweetened chocolate before add flour mixture.NUTTY: Add 1/2 cup chopped walnuts with flour mixture.SPICE: Stir 2 teaspoons cinnamon, 1 teaspoon ginger, 1/2 teaspoon nutmeg and 1/4 teaspoon cloves into flour mixture.

1 cup margarine or butter, softened
1/2 cup sugar

Steps:

  • 1. Stir together flour and salt. Set aside.2. Measure margarine, sugar and vanilla into mixing bowl, beat until light and fluffy. Add dry ingredients, mix until combined. Stir in 2 cups of the cereal.3. Press dough evenly into 15 1/2 x 10 1/2 x 1-inch baking pan. Sprinkle remaining 1 cup cereal evenly over top, pressing into dough.4. Bake at 350°F for 20 to 25 minutes or until lightly browned. While still warm, cut into squares. Cool completely.

6 ounces butter, scotch peices
1/3 cup creamy peanut butter
3 cups corn flakes

Steps:

  • On top of a double boiler, melt the butterscotch and peanut butter. Stir until completely smooth.
  • Remove from heat and add the flakes and mix carfully to not crush them.
  • Drop teaspoons of the mix on to a lined baking tray.
  • Chill until firm (about 30 minutes).
