Sugar-Free Chocolate Brownie Recipe for diabetics image

An easy decadent sugar-free chocolate brownie topped with sugar-free chocolate ganache

3/4 cup Almond Flour
1/4 cup All-Purpose flour
3/4 cup unsweetened cocoa powder
1 tsp baking powder
1 cup granulated Splenda sweetener
3/4 cup butter
3 eggs
1 tsp vanilla extract
1 cup sugar-free chocolate chips
1 cup heavy cream

Steps:

  • Preheat oven to 350°F (180°C)
  • Line your 8 by 8 inch baking pan, with parchment paper.
  • Grease the parchment paper.
  • Sift the All-purpose flour, cocoa and almond flour, into a mixing bowl.
  • stir in baking powder.
  • In a large mixing bowl, cream together the butter and sweetener
  • Add eggs and vanilla and beat on low speed until combined
  • Add dry ingredients and mix a few spoonfuls at a time, until well mixed.
  • Pour batter into the parchment lined baking dish and smooth out using a silicone spatula.
  • Bake in the oven for approximately 20 - 25 minutes, until a toothpick comes out clean when inserted into the center.
  • Let cool slightly and cover in ganache.
  • After pouring ganache onto brownies, spread evenly over the top and let cool.

2 cups graham cracker crumbs (about 24 crackers)
1/2 cup chopped walnuts
3 ounces semisweet chocolate
1 1/2 teaspoons artificial sweetener (such as Sweet 'n Low or Splenda 1 1/2 tsp. is = to 6 packets)
1/4 teaspoon salt

Steps:

  • Add the ingredients the the order listed above to a wide mouth canning jar or other size appropriate decorative container.
  • Create a tag which reads, "Heat oven to 350*. Mix ingredients with 1 cup skim milk, blend well. Bake in greased 8x8x2 pan for 30 minutes. Cut in 2 inch squares while warm.".

2 ¼ cups white sugar
⅔ cup unsweetened cocoa powder
½ cup chopped pecans
1 ¼ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt

Steps:

  • Pour sugar into a clean and dry one quart jar. Press down firmly.
  • Add cocoa powder and press down firmly. Pour in chopped pecans, making sure pecans are evenly layered in the jar. Combine flour, baking powder and salt. Pour into jar and seal.
  • Attach the following directions to the jar: Empty mix into large bowl. Use your hands to mix thoroughly. Add 3/4 cup of butter or margarine and 4 slightly beaten eggs. Mix until completely blended. Spread batter into a lightly greased or sprayed 9 x 13 inch pan. Bake at 350 degrees F (180 degrees C) for 30 minutes or until done. Cool in pan. Cut into 2 inch squares.

COMBINE THE FOLLOWING 6 INGREDIENTS IN ORDER AND PLACE IN A 1 QT. JAR WITH LID
(LAYER 1) COMBINE THE FOLLOWING 3 INGREDIENTS
2/3 c all purpose flour
1/4 tsp salt
1 tsp baking powder
(LAYER 2)
1/3 c cocoa, unsweetened power, sifted
(LAYER 3)
1/2 c granulated sugar
(LAYER 4 )
1/3 c chopped walnuts
(REMAINING RECIPE) IN A SMALL BOWL COMBINE:
2 large eggs
1/3 c soft margerine
1 tsp vanilla
1/2 c applesauce, unsweetened

Steps:

  • 1. In a medium bowl, stir together flour, sugar, cocoa, baking powder and salt. Stir in walnuts.
  • 2. In A Small Bowl: Using electric mixer, 2 lg. eggs, 1/3 c. soft margarine and 1 tsp. vanilla at high speed for 1 minute, until well mixed. Add: 1/2 C. Unsweetened Applesauce and beat just until blended. Add: Flour mixture and mix at low speed just until blended.
  • 3. Spread: Batter evenly in prepared pan and bake in preheated oven for 15 minutes, until a knife inserted in the center comes out clean. Let cool completely in pan on a rack and cut into 16 squares.
  • 4. EXCHANGES PER SERVING: 1/2 Starch 1/2 Other Carbohydrate 1 Fat Nutrient Analysis Per Serving: Calories - 111 Protein - 2g Fat - 6g Saturated fat - 1g Carbohydrate - 13g Fiber - 1g Cholesterol - 27 mg Sodium - 106 mg
  • 5. TIP: Unsweetened cocoa powder has only 115 calories and 4 grams of fat per 1/3 cup (75 mL), whereas 1 oz (25g) of unsweetened baking chocolate has 139 calories and 14 grams of fat. Cocoa has just as much rich chocolate flavor as baking chocolate, so substituting cocoa is a good way to cut fat.

1/2 cup unsweetened applesauce
1/2 cup unsweetened cocoa powder
1/2 cup sugar or 1/2 cup sugar substitute
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
2 large eggs
1 teaspoon vanilla
1/4 cup chopped nuts (optional)

Steps:

  • Preheat oven to 375 degrees.
  • In a bowl combine oil, applesauce, and cocoa.
  • Mix in sugar.
  • Blend in the eggs and vanilla.
  • In another bowl, combine the dry ingredients.
  • Add the dry ingredients to the liquid mixture.
  • Pour in a 9 inch square pan.
  • Sprinkle nuts on top if desired.
  • Bake in oven for about 20-30 minutes.
