NO-SUGAR BAKED APPLES
These baked apples are a favorite that my mom made every time fresh apples were in season; my favorite for this recipe are McIntosh. Great with pears too!

Steps:
- Preheat the oven to 375 degrees F (190 degrees C).
- Remove cores and seeds of apples, leaving the bottoms intact. Place into an 8x8-inch casserole or baking dish. Place 1 teaspoon butter and 1 teaspoon cinnamon into each cored apple.
- Bake in the preheated oven until apples are softened, 20 to 25 minutes, watching to make sure they don't pop.

DIABETIC BAKED APPLES
I have a recipe here posted for Cherry Cola Apples, but I have also found one that I like just as much. This recipe uses diet cola, but are strawberry-flavored. They're different for sure, but I thought they were delicious. I'm always looking for different ways to use anything that can be used in a diabetic diet. This one came from Lifescan, which is the company that produces my blood sugar monitor.

Steps:
- Core the apples and place in a casserole dish.
- In a small bowl, combine the strawberries and Splenda.
- Stuff the middles of the apples with the berries.
- Pour the soda over the apples.
- Bake at 350 degrees until the apples are tender, anywhere from 30-45 minutes, depending on the apples.
- Top with the Cool Whip.

BARB'S FRIED APPLES -DIABETIC-LOW FAT
These are very tasty fried apples, low in sugar and fat. Great as a dessert served with sugar-free ice cream. Also good served as a side with pork. Use any apple, I like to use fuji or golden delicious.

- Melt butter in skillet, add the sliced apples; I add a little water, cover and cook for about 10 minutes.
- Add brown sugar splenda, cinnamon, nutmeg if using, stir & cover, cook about 5 minutes.
