DEVILISHLY DELICIOUS BACON AND CHERRY ROLL-UPS
I have very fond memories of this recipe from my early childhood. Anytime my mother had friends over for drinks, or threw a party she would make these. I would always be dispatched to a quiet corner with a plate full of goodies, including loads of these! Now I make them for parties, or drink snacks, and everybody loves them. I make trays of these, and the amount listed below is quite small, so be prepared to make more! They are so simple but oh so effective! I tend to use streaky bacon for the fat content, but back bacon works fine too. Try them-you won't regret it!

- Roll a cherry in each piece of bacon.
- Place on baking tray and bake in a moderate oven until bacon is cooked and the fat is crisping up--you can grill these too, but be careful they don't burn.

Steps:
- Slice bacon in half to form twenty strips. In a small bowl combine softened cream cheese with sliced scallions and pepper. Remove crusts from bread. Line up 4 slices of bacon, slightly overlapping to form a square. Using a rolling pin, flatten the bread. Place the bread slice on top of the bacon. Spread the bread with the cream cheese mixture. Roll up bread and bacon as you would a rug. Secure with 4-5 toothpicks about an inch apart. Assemble remaining roll ups and place on baking sheet. Freeze until firm. Slice rollups into 4-5 pieces each secured with toothpick. Either refrigerate or freeze until ready for use. Preheat oven to 425 degrees. Place roll-ups on broiler pan so that fat collects in bottom pan. Bake until crisp, about 20-30 minutes.
BACON WRAPPED CHERRIES
This is one of my favorite appetizers. I say it serves 18 people, but if no one stops me, I will eat the whole batch myself and start making more.
