My Easy Meatloaf is a kid-friendly classic, easy to pull together and sure to be a hit. You'll love this sweetly saucy, perfectly seasoned baked meatloaf!

2 pounds ground beef
½ cup plain breadcrumbs
½ cup diced onion
1 large egg, (lightly beaten)
1 cup barbecue sauce, (divided)
2 tablespoons Worcestershire sauce
1 tablespoon minced garlic
3 tablespoons Italian Seasoning
1 teaspoon kosher salt
1 teaspoon ground black pepper
chopped fresh parsley, (for garnish)

Steps:

  • Preheat the oven to 350˚F.
  • Line a loaf pan with foil and lightly grease both pan and foil. Leave plenty of overlap to make it easier to remove the meatloaf after cooking.
  • In a large bowl, mix ground beef, breadcrumbs, onion, egg, ½-cup barbecue sauce, Worcestershire sauce, garlic, Italian seasoning, salt, and pepper. Mix until well combined, but do not overmix or the meatloaf will be tough.
  • Shape the beef mixture into a loaf in the prepared pan. Spread the remaining barbecue sauce over the top.
  • Bake for 50 minutes, or until the internal temperature registers 165˚F. Let the meatloaf stand for 5 to 10 minutes before cutting.
  • Garnish with parsley and serve.

When I was growing up, my mom never ever made meatloaf and I always wanted to try it - I finally tried it at a restaurant and loved it. When I moved out on my own I started experimenting with different recipes and creating my own version. I finally came up with the best meatloaf I have ever made, and I wanted to share it.

1 tablespoon butter
¼ cup minced onion
2 cloves garlic, minced
1 ½ teaspoons salt
1 ½ teaspoons freshly ground black pepper
2 pounds extra-lean ground beef
3 slices bread, toasted and crumbled
7 buttery round crackers, crushed
1 egg, lightly beaten
3 ½ tablespoons sour cream
1 ½ tablespoons Worcestershire sauce
1 (15 ounce) can tomato sauce, divided
¼ cup milk
3 tablespoons ketchup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt the butter in a skillet over medium heat, and cook the onion and garlic 5 minutes, until onion is tender. Remove from heat, and season with salt and pepper.
  • In a large bowl, mix the onion and garlic, beef, crumbled bread, crushed crackers, egg, sour cream, Worcestershire sauce, and 1/2 can tomato sauce. Gradually stir in the milk 1 teaspoon at a time until mixture is moist, but not soggy. Transfer the mixture to a 5x9 inch loaf pan.
  • Bake uncovered in the preheated oven 40 minutes. Increase oven temperature to 400 degrees F (200 degrees C), and continue baking 15 minutes, to an internal temperature of 160 degrees F (70 degrees C).
  • In a small bowl, mix the remaining tomato sauce and ketchup. Pour over the top of the meatloaf, and continue baking 10 minutes.

1 lb 80% lean ground beef
8 ounces ground veal
8 ounces ground pork (Note ( A "meatloaf variety" pack of beef pork and veal may be used.)
2 large eggs, at room temperature
1 cup milk
1 cup oatmeal
1/2 cup ground parmigiano-reggiano cheese
1/2 cup canned peeled tomatoes, drained and roughly chopped
1/3 cup finely diced celery
1/2 cup finely diced onion
1 garlic clove, minced
1 tablespoon dried basil
1 tablespoon dried thyme
1 tablespoon dried oregano
1 teaspoon coarse salt
1 teaspoon fresh ground black pepper
6 slices of raw bacon
1 1/2 cups water
1/2 cup dripping, from the meatloaf
1/4 cup all-purpose flour
4 large button mushrooms, thinly sliced
coarse salt
fresh ground black pepper

Steps:

  • Preheat the oven to 425°F.
  • In a large bowl thoroughly combine the beef, pork, and veal.
  • In a separate bowl, beat the eggs, and then stir in the milk and oats.
  • Pour the egg mixture into the meat mixture and combine thoroughly.
  • Add the remaining ingredients and combine again until fully incorporated.
  • Form into a loaf in a roasting pan.
  • Cover meatloaf with the slices of raw bacon and bake for 45 to 50 minutes.
  • Remove to a platter and keep warm while making the mushroom gravy. (Note: Be sure to reserve 1/2 cup drippings for the gravy.).
  • For the mushroom gravy: Pour the water into the meatloaf's roasting pan and stir and scrape with a wooden spoon or whisk to loosen the browned bits at the bottom.
  • Pour the reserved meatloaf drippings into a 2-quart saucepan and warm over medium heat.
  • Gradually stir in the flour until smooth. Add the sliced mushrooms and cook, stirring constantly, until mixture is slightly browned, 4 to 5 minutes.
  • Slowly stir in the liquid from the roasting pan and cook, stirring, until thickened.
  • Season with salt and pepper to taste.

This old-fashioned meatloaf recipe has been passed down for a few generations and is still one of my favorites meatloaf recipes ever! See why!

2 eggs
3/4 cup milk
1/2 cup fine dry bread crumbs
1/4 cup finely chopped onion
2 tablespoons snipped parsley
1 teaspoon salt
1/2 teaspoon ground sage
1 1/2 pounds ground beef
1/4 cup catsup
2 tablespoons brown sugar
1 teaspoon dry mustard

Steps:

  • First, in a large bowl combine eggs and milk then stir in breadcrumbs. Next add onion parsley, salt, sage, and 1/8 teaspoon pepper. Mix them together a few times then add in the beef and mix well. I suggest using your hands, and this is how I was taught, it mixes faster and better than using a spoon of any kind.
  • Shape your meatloaf into a 'loaf' shape if not using a bread pan, though I suggest you do, or use the mini loaf pan I mentioned above. Then go ahead and bake in a 350-degree oven for 50 minutes. Then make sure to spoon off excess fat.
  • Mix together the ketchup, sugar, and dry mustard, mix it well then spread over the top of the meatloaf.
  • Then return to the oven for 10-15 minutes. This makes about six servings.

1 ½ pounds ground beef
1 (14 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®), undrained
1 sleeve buttery round crackers (such as Ritz®), crushed
1 teaspoon onion flakes
1 ½ teaspoons garlic powder, or to taste
1 ½ teaspoons seasoned salt, or to taste
½ teaspoon ground black pepper, or to taste

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C).
  • Beat the egg in a mixing bowl, then add the ground beef, tomatoes, and crushed crackers. Season with onion flakes, garlic powder, seasoned salt, and pepper. Mix until evenly combined. Pack into a 9x5 inch loaf pan.
