Deluxe Turkey Club Burgers

Number Of Ingredients 25

12 slices bacon
2 tablespoons vegetable or olive oil
2 pounds ground turkey
93% or 85% lean
4 cloves garlic
pasted or minced
3 to 4 tablespoons grated onion
2 teaspoons cumin
2/3 palmful
2 teaspoons coriander
2/3 palmful
Salt and pepper
1 1/2 cups sour cream
About 2 tablespoons lemon juice
About 2 teaspoons hot sauce
About 1 tablespoon each finely chopped dill
parsley and chives about 1/4 cup total
Salt and pepper
12 slider rolls such as brioche dinner rolls
split or
6 hamburger rolls
Shredded or chopped lettuce
Romaine or iceberg
Sliced plum or vine tomatoes
Thinly sliced radishes

Steps:

  • Preheat oven to 375F
  • Place bacon on rack arranged over baking sheet or on slotted broiler pan and bake until crisp; reserve
  • Place oil, about 2 tablespoons, in a bowl with turkey, garlic, grated onion, cumin, coriander, salt and pepper
  • Form 6 large patties or 12 slider-size patties, making them a bit thinner at the center than the edges for even cooking and flat, even appearance once cooked
  • For the ranch dressing, combine sour cream with lemon juice, hot sauce, herbs, salt and pepper
  • Taste to adjust seasonings
  • Heat griddle, grill pan or cast-iron pan over medium-high heat
  • Cook large patties 5-6 minutes on each side, slider patties 3-4 minutes on each side
  • Serve burgers on buns topped with bacon, lettuce, tomatoes, radishes and some dressing
  • Serve Tots with Chipotle Ketchup on the side

Baked Turkey Burgers - Cooking turkey burgers in the oven is EASY! It locks in juices and there's less mess!

4 Turkey Patties or 1 lb. ground turkey, formed in to 4 patties (plain or choice of flavored)
salt (to taste)
pepper (to taste)
4 slices cheese (I used "brick cheese")
4 brioche or hamburger buns
4 slices tomato
4 lettuce leaves
4 slices bacon
4 tbsp fiesta mayo (recipe in post, or choice of sauce)

Steps:

  • Begin by preheating your oven to 375 degrees.
  • Line a baking dish (big enough to fit 4 turkey patties without touching) with olive oil
  • Season both sides of turkey patties with salt and pepper if you wish, and place them in baking dish. Bake for 30 minutes.
  • White turkey patties are baking, fry your turkey bacon in a skillet. See above for tips for frying bacon!
  • This is also a good time to mix up your fiesta mayo (or other condiment/sauce you wish to make).
  • When turkey burgers have reached 30 minutes, the internal temperature of each burger should be 165 degrees, before consuming.
  • If turkey burgers are to 165, place one slice of cheese on each burger and place back in the oven for seconds (or a few minutes) to allow the cheese to melt.
  • Remove burgers from oven and build turkey club by stacking on a brioche bun, bacon, lettuce, tomato and fiesta mayo! Enjoy!

Number Of Ingredients 7

16 ounces boneless, skinless turkey thighs, trimmed of fat
7 strips bacon (about 7 ounces)
Coarse salt
3 ounces Swiss cheese, thinly sliced
4 English muffins
4 thin slices tomato, sprinkled with flaky sea salt (such as Maldon), for serving
Sliced avocado, romaine-lettuce leaves, and mayonnaise, for serving

Steps:

  • Cut both meats into small pieces. Grind through the large holes of a meat grinder. Combine in a bowl, then grind together through small holes of grinder. Divide into 4 equal parts (each about 5 3/4 ounces). Form into patties, each about 3 1/2 inches in diameter.
  • Preheat grill to medium-high. Season both sides of burgers with coarse salt. Grill until a meat thermometer inserted in centers reads 168 degrees, about 5 minutes a side, placing cheese on burgers in last minute. Meanwhile, grill muffins until toasted, 30 seconds. Sandwich burgers on muffins with tomato, avocado, lettuce, and mayonnaise.
