GRANDMA'S RAISIN FILLED COOKIES

Grandma's Raisin Filled Cookies image

My Grandmother always had these on hand whenever we would come to visit. We always gobbled them up. I never truly appreciated them tho, until I finally was given the recipe and realized the TIME that went into them. I recommend making the filling one day and the cookies the next.. just saves you that much time. I also like to just underbake a hair... I'll probably be strung and hung for sharing her recipe..:)

DELICIOUS RAISIN-FILLED COOKIES

Delicious Raisin-Filled Cookies image

These cookies are my husband's favorite and are a must-have on four-wheeling trips because his grandma used to bring an ice-cream bucket full of them when they went out for a ride in the hills. I've tried other recipes I found on line, and they weren't what he remembered, so I finally tracked down Grandmas recipe and it's great. The vinegar in the filling gives it a tang rather than syrupy sweetness, and the cookie crisps up nicely.

Time 1h20m

Yield 48 cookies, 48 serving(s)

Number Of Ingredients 16

1 lb raisins, washed and ground
1 dash salt
1 cup sugar
1/2 teaspoon nutmeg
2 tablespoons vinegar
1/4 cup butter
4 teaspoons cornstarch, dissolved in
1/2 cup water
1 1/2 cups shortening
1 1/2 cups sugar
2 eggs, beaten
1 teaspoon salt
1 teaspoon vanilla extract (lemon or almond could be used)
3/4 cup milk
1/2 teaspoon nutmeg
5 cups all-purpose flour

Steps:

  • For filling, mix raisins, salt, sugar, nutmeg, and vinegar in a sauce pan. Put on to boil and when boiling, add cornstarch dissolved in water. After it comes to a full boil again, remove from heat and set aside to cool.
  • For dough, cream the shortening, sugar, and eggs, and then add the salt, extract, milk, and nutmeg. Add enough flour (about 5 cups) to make the dough easy to handle.
  • Roll dough on a floured surface to a thickness similar to pie crust (about 1/8 inch). Use a cookie cutter to cut circles about 3 inches across. Drop a teaspoon of filling on a circle and cover with another, pressing out all air and press around the edges to seal.
  • Optional: Brush top surface with milk and sprinkle with granulated sugar.
  • Place on a cookie sheet and bake at 350 F for 18-20 minutes.

RAISIN FILLED COOKIES

Raisin Filled Cookies image

Raisin filled cookies are some of Santa's favorite cookies in our home. They are soft and chewy with a creamy raisin filling.

Provided by Newton

Categories     Cookies

Time 1h5m

Number Of Ingredients 13

1/2 cup butter or shortening
1 1/2 cups brown sugar
1 egg, well beaten
3 1/2 cups flour
1 teaspoon baking powder
3/4 teaspoon salt
1/2 teaspoon baking soda
1/2 cup buttermilk
1 teaspoon vanilla extract
1 cup water
3/4 cup sugar
1 1/2 cups chopped/ground raisins (I use a food processor)
2 Tablespoon flour

Steps:

  • Mix all the filling ingredients together in a medium size pan; bring to a boil, and cook 3-4 minutes until mixture is thick, stirring as you do so.
  • Allow the mixture to cool to lukewarm before adding to cookie. (Add according to cookie directions).
  • In a mixer, cream together the butter and brown sugar.
  • Stir in the beaten egg, until blended.
  • Sift, and then measure the flour in a separate bowl.
  • Add the baking powder, salt and baking soda, and then sift again.
  • Add the dry mixture and buttermilk, alternately, to the sugar and butter mixture.
  • Next add the vanilla.
  • The dough will be nice and soft.
  • Roll the dough on a slightly floured counter top or board and cut into approximately 3" circles.
  • I like to roll a little thinner than a normal sugar cookie since you will have two together.
  • Place 1 circle on a cookie or baking sheet.
  • Put about 2-3 teaspoons of the lukewarm raisin filling in the center of the cookie.
  • Over the top of the raisin filling, add another round circle made from cookie dough.
  • Seal the edges with a fork, spoon or your fingers.
  • Make a vent in the top of each cookie with a fork or knife.
  • Bake in a 350 degrees oven for 20 minutes, or until the cookies are nice and brown.
