Delicious Golden Mushroom Soup With Beef Broth Dairy Free image

So many mushroom soups - so much milk & cream! Well not this one! This soup is warming and very tasty. It can be Kosher if you like. You can substitute 1/2 the olive oil with butter if you like. I used about 1/2 cup reconstituted dried exotic mushrooms for flavor too.

4 tablespoons olive oil
1 onion, sliced thin
4 garlic cloves, minced
1 (10 ounce) package cremini mushrooms, sliced
1/2 cup dry white wine
2 tablespoons all-purpose flour
1 quart beef broth
salt
pepper

Steps:

  • Heat the oil in a 5 quart chef's pan or dutch oven. Add the onions, mushrooms and garlic and saute until soft and just beginning to brown. Turn up the burner to high and add the wine, scraping up any browned bits from the bottom of your pan and reduce for a minute or two until a bit creamy then add the flour, stir to coat the vegetables then add the Beef Broth while stirring. Bring up to a boil while stirring, the soup will thicken slightly (this is not a super thick soup) Then reduce heat and simmer for 10 minutes or so. Ladle a bit out to adjust the seasoning - some commercial broths can be salty so taste first. Then add your salt and pepper and enjoy! Bon Appetit!

I make this with Christmas dinner every year. My Polish mother-in-law thought it was as good as the one she remembered her mother making when she was a child. Only difference is that this one is a lot easier.

2 lbs fresh mushrooms, sliced
2 medium onions, chopped
1/2 cup butter
1/2 cup all-purpose flour
1 teaspoon salt
1/4 teaspoon pepper
3 cups milk
2 (14 ounce) cans chicken broth
2 teaspoons chicken bouillon granules
2 cups sour cream
minced parsley (optional)

Steps:

  • In a large saucepan, saute mushrooms and onion in butter until tender.
  • Sprinkle with flour, salt and pepper; mix well.
  • Gradually stir in milk, chicken broth and bouillon; bring to a boil.
  • Cook and stir for 2 minutes.
  • Reduce heat.
  • Stir in sour cream; heat through (do NOT boil).
  • If desired, garnish with a dollop of sour cream or minced parsley.

2 tablespoons olive oil
1 pound sliced fresh mushrooms
1 large onion, finely chopped
2 garlic cloves, minced
1 teaspoon salt
1 teaspoon white wine vinegar
1/2 teaspoon dried thyme
1/2 teaspoon pepper
4 tablespoons cornstarch
4 cups unsweetened almond milk

Steps:

  • In a large saucepan, heat oil over medium-high heat. Add mushrooms and onion; cook and stir until tender, 8-10 minutes. Add garlic, salt, vinegar, thyme and pepper; cook 1 minute longer. Mix cornstarch and almond milk until smooth; stir into saucepan. Bring to a boil; cook and stir until thickened, 3-4 minutes.

2 tablespoons butter
1 cup chopped onion
1/4 cup white wine
1 lb mushroom, washed and sliced
1 tablespoon paprika
1 1/2 teaspoons dill
1/4 teaspoon black pepper
3 tablespoons soy sauce
1 cup vegetable stock (or chicken stock)
1 tablespoon butter
2 tablespoons flour
2 cups milk
2 tablespoons lemon juice
salt, to taste

Steps:

  • Heat butter in a large pot and add the onions. Cook over medium heat, stirring often, until the onions are soft and just beginning to brown; about 7-8 minutes.
  • Add whit wine to pot. Add the mushrooms and spices. Slightly lower the heat, cover, and cook 5 minutes, stirring frequently.
  • Add the soy sauce and stock. Cover and simmer about 10 minutes.
  • In a separate small pan, mix the 1 tbsp butte and flour to form a thick paste. Cook, stirring constantly, for 1 minute, then whisk in the milk and cook over medium heat, stirring frequently, until steamy and slightly thickened.
  • Add the milk mixture to the soup; add the lemon juice to the soup. Stir well; serve.
