FUDGE PIE RECIPE
A pie is the perfect Southern touch after a filling meal. This decadent Fudge Pie is one of our favorites, and is made with semi-sweet chocolate and pecans. And what if we told you that most of the work that goes into this dessert recipe involves the microwave? You heard that right. You use your trusty microwave to melt the chocolate morsels and butter into evaporated milk, and this chocolatey mixture (that looks tasty enough to drink!) becomes the warm base that you'll mix the rest of the ingredients into before throwing it all into the pie shell! Go ahead and get that frozen unbaked piecrust shell-we're looking to make this pie your easiest one yet. When this pretty pie comes out of the oven, you'll be thinking it looks a lot like your Thanksgiving pecan pie at first glance. But as soon as you slice into the decadent dessert, the oozing chocolate inside will put those thoughts to rest. We suggest serving a slice of this ooey-gooey favorite with a healthy scoop of ice cream. Pro tip: If you've got some extra ingredients, try making two pies and then sharing one with a friend or giving as a hostess gift. You'll put everyone else to shame! - Preheat oven to 375°. Microwave the first 3 ingredients in a large microwave-safe bowl at HIGH 1 to 1 1/2 minutes or until melted and smooth, whisking at 30-second intervals.
- Whisk sugar and flour into the chocolate mixture. Add eggs, 1 at a time, whisking just until blended after each addition. Whisk in vanilla and salt. Stir in chopped pecans. Pour the mixture into pie shell.
- Bake at 375° for 35 to 40 minutes or until set. Cool 10 minutes before serving. Serve with ice cream.

- Line an 8-in. square pan with foil and butter the foil; set aside. Place pecans in a microwave-safe pie plate. Microwave, uncovered, on high for 3 minutes, stirring after each minute; set aside. , In a 2-qt. microwave-safe bowl, combine chocolate chips and milk. Microwave, uncovered, on high for 1 minute. Stir until smooth. Stir in vanilla and 3/4 cup pecans. Immediately spread into the prepared pan. Sprinkle with remaining pecans, pressing to adhere., Cover and refrigerate until firm, about 2 hours. Steps:
- Melt butter and blend in cocoa.
- Mix cocoa mixture with sugar.
- Add eggs and mix well.
- Add milk and mix.
- Add vanilla and mix.
- Add pecans and mix.
- Pour into unbaked pie shells (2).
- Bake at 450 degrees for 10 minutes.
- Reduce heat to 350 degrees and bake for 20 minutes or until set.
- Pie will puff when done.
- Do not overbake or pie will be dry.
- Take pie out of oven when pie is still shaking in center.
- Let cool off completely then store in refrigerator.

- Preheat oven to 350 degrees. Meanwhile, combine cornstarch and water in a small bowl.
- In saucepan, melt chocolate and condensed milk over low heat, stirring occasionally. Add the cornstarch mixture, then the eggs, butter, and salt. Stir until well-combined and smooth.
- Remove from the heat and add pecans. Mix well and pour into crust.
- Bake for approximately 30-35 minutes, until a knife inserted into the center of the pie comes out clean. Cool on a rack, then cover and refrigerate for a minimum of 2 hours.

- Preheat the oven to 350 and situate one baking rack in the center of the oven. Place the refrigerated pie crust into the deep dish pie plate and crimp the edges.
- In a medium sized bowl, mix together the cocoa, 3 tbs flour, ½ cup white sugar, peanut butter, 1 egg, 1 tsp vanilla, ½ tsp almond extract and 4 tbs melted butter. Mix well with a spoon. It will be thick and spreadable when you have it combined. Spread this mixture into the bottom of the pie shell.
- In the same bowl, mix together ½ cup sugar, 2 tsp flour, a pinch of salt, 2 eggs, ½ cup dark karo, 2 tbs melted butter, ½ tsp vanilla, ½ tsp almond extract and mix well. When mixed, add the pecans in and gently fold until well mixed. Pour this over the chocolatey base.
- Bake at 350 for 55 minutes until the pie is set and no longer jiggly in the center. Set out and place on a cooling rack to cool.
