DELICIOUS BANANAS FOSTER A LA MODE
A beautiful finale to cool your palate after enjoying a generous serving of SEAFOOD GUMBO-NEW ORLEANS STYLE. The Bananas Foster recipe appeared in Spring/99 issue of Gusto Manazine, compliments of Brennan's Restaurant, New Orleans. Double recipe to serve 8-10 persons.

Steps:
- In a large skillet, over low heat, combine butter, sugar and cinnamon, stirring until sugar dissolves.
- Add bananas, stirring gently until bananas begin to soften and brown.
- Carefully add rum and liqueur, cooking until rum is hot.
- Tip pan slightly and ignite rum.
- When flames subside, remove bananas from pan and serve 4 pieces of banana with 1 scoop of ice cream Generously spoon warm sauce over top and serve immediately.

- Mix all together in mixer until blended and pour into Gallon Pitchers. Place in cooler for transport. Line up 100 martini glasses, rim glasses with Banana Praline dust, if time allows, prior to service. Pour 3 1/2 ounces of drink into glasses, float 1/2-ounce of 151 on top and light with a torch. Add ice cube (frozen banana with orchid).

Fresh bananas are simmered in an indulgent cinnamon cream sauce, then covered with rum, ignited with gentle flames and served over a scoop of vanilla ice cream. This easy recipe will help you make flawless Bananas Foster every time!

- Add the butter, brown sugar, cinnamon and cream to a large skillet or saucepan over medium heat.
- Allow the butter to melt and continue to whisk while cooking until the sugar has melted and the sauce is smooth (about 3 to 5 minutes). You don't want to cook on too high heat or it will heat too quickly before the sugar fully melts.
- Add the bananas and allow to cook 2-3 minutes, to lightly soften the bananas.
- Remove the pan from heat and pour the rum over the bananas and sauce. Using a long lighter, ignite the rum. Gently shake or swirl the sauce around until the flames burn out, about 30 seconds. The flames will burn blue and can sometimes be very subtle.
- Spoon warm bananas and sauce over ice cream and serve immediately.

- Preheat broiler. Place doughnuts on small baking sheet; set aside. Stir butter and brown sugar in heavy medium skillet over medium heat until butter is melted. Boil 1 minute, stirring occasionally. - Peel Bananas and place in a non-stick skillet. Pour syrup over the bananas and bring to a simmer.
- Continue to cook bananas, spooning syrup over the top for 3 minutes.
- Turn off heat and cover to keep warm.

- In a medium skillet over medium low heat, melt the butter. Add the brown sugar, cinnamon, nutmeg, and creme de banana. Cook about 2 minutes until bubbly and thickened.
- Add the bananas and turn them until coated with the sauce. Very carefully, add the rum, making sure not to drip any on the stove or the sides of the pan.
- Stand back from the pan and use a stick lighter to ignite the alcohol. Use extreme caution to stay away from the flame! Allow the alcohol to burn off, then continue cooking, stirring and flipping the bananas until the sauce is thickened and the bananas are tender, about 3 minutes.**
