Rosemary garlic potatoes make for one delicious side. They are creamy on the inside and crispy on the outside.

2 lbs. russet or Yukon Gold potatoes, peeled and cut into 1-inch cubes
1 Tbsp. fresh minced garlic, about 3-4 cloves
1 Tbsp. fresh minced rosemary
1 1/4 tsp. kosher salt
1/2 tsp. fresh black pepper
3 Tbsp. olive oil

Steps:

  • Preheat the oven to 400 degrees F. Line a half-sheet pan with parchment paper and set aside.
  • In a large bowl, combine the potatoes, garlic, rosemary, salt, pepper, and olive oil. Toss until the potatoes are well coated.
  • Transfer the potatoes to a sheet pan and spread out into one layer. Do not overcrowd. Roast for 45-50 minutes or until crisp and tender. Toss around a few times during cooking in order to ensure even browning. Allow to cool slightly and serve immediately.

3 pounds baby Yukon Gold potatoes
1/3 cup olive oil
4 teaspoons kosher salt
2 teaspoons freshly ground black pepper
2 tablespoons finely chopped fresh rosemary (divided)

Steps:

  • Preheat oven to 425 degrees F.
  • Slice the bottom off each potato and cut crosswise at 1/8-inch intervals, cutting to within 1/4 inch of the bottom. (You can place the potato on a large spoon so the edges of the spoon prevent you from slicing completely through the potato.)
  • Place the potatoes in a large bowl, add the olive oil, salt and pepper and 1 tablespoon of the rosemary and toss well, working the salt mixture in between the slices. Arrange the potatoes on a sheet pan cut side up.
  • Bake the potatoes for 30 minutes, until they are tender and golden and crisp on top

1 1/2 pounds small red or white-skinned potatoes (or a mixture)
1/8 cup good olive oil
3/4 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 tablespoons minced garlic (3 cloves)
2 tablespoons minced fresh rosemary leaves

Steps:

  • Preheat the oven to 400 degrees F.
  • Cut the potatoes in half or quarters and place in a bowl with the olive oil, salt, pepper, garlic and rosemary; toss until the potatoes are well coated. Dump the potatoes on a baking sheet and spread out into 1 layer; roast in the oven for at least 1 hour, or until browned and crisp. Flip twice with a spatula during cooking to ensure even browning.
  • Remove the potatoes from the oven, season to taste, and serve.

1 1/2 lbs desiree potatoes (750 g) or 1 1/2 lbs other red potatoes, unpeeled and quartered lengthwise (750 g)
sea salt
1/3 cup virgin olive oil (80 ml)
10 large garlic cloves, unpeeled
2 tablespoons fresh rosemary

Steps:

  • Add potatoes to a saucepan and cover with cold water. Add salt to taste and bring to a simmer. Cook for 5 minutes. Drain thoroughly and allow to cool completely.
  • Warm the oil in a heavy frying pan over medium-low heat. Add the garlic and sauté gently until just beginning to color and soften, about 10 minutes. Use a slotted spoon to transfer potatoes to a plate. Set aside.
  • Increase heat to high, add the potatoes and sauté, shaking the pan back and forth, until almost tender, about 12 minutes.
  • Add the sautéed garlic, rosemary and salt to taste. Continue to sauté until the potatoes are crisp and golden, about 2 minute more.
  • Transfer to a serving dish and serve at once. Have guests squeeze the garlic cloves from their papery sheaths onto their own servings.
