¼ cup all-purpose flour
½ teaspoon salt
¼ teaspoon ground black pepper
2 pounds beef round steak, cut 1-inch thick
2 tablespoons vegetable oil
¼ cup water, or as needed
1 (14.5 ounce) can diced tomatoes
½ cup minced green bell pepper
1 teaspoon onion powder
½ teaspoon salt
⅛ teaspoon ground black pepper

Steps:

  • Stir flour, 1/2 teaspoon salt, and 1/4 teaspoon black pepper together in a bowl. Sprinkle pieces of steak with flour mixture and pound the flour mixture into the meat with a meat mallet or the edge of a sturdy plate.
  • Heat vegetable oil in a large skillet over medium heat; cook the floured beef in the hot oil until browned on both sides, about 15 minutes. Reduce heat to low, pour in water, cover skillet, and simmer beef until tender, about 1 hour. Add more water to the skillet if needed to prevent burning.
  • Mix diced tomatoes, green bell pepper, onion powder, 1/2 teaspoon salt, and 1/8 teaspoon black pepper in a bowl. Pour tomato mixture over beef, bring to a simmer, and cook until sauce has thickened, about 30 more minutes.

1 teaspoon salt

1 medium onion, halved lengthwise, thinly sliced
1 medium carrot, shredded
1 can (4 oz) mushroom pieces and stems, drained
1 can (10 3/4 oz) condensed cream of mushroom soup
1 can (8 oz) tomato sauce

Steps:

  • In 10-inch skillet, heat oil over medium-high heat. Sprinkle beef with salt and pepper; place in skillet. Cook 4 to 6 minutes, turning once, until well browned.
  • Meanwhile, spray 3- to 4-quart slow cooker with cooking spray. In cooker, mix onion, carrot and mushrooms.
  • Cut browned beef into 4 pieces; place in cooker over vegetables. In same skillet, mix soup and tomato sauce. Pour over beef.
  • Cover; cook on Low heat setting 8 to 10 hours. Stir sauce well before serving over beef.

3 tablespoons flour
1 teaspoon salt
1/4 teaspoon pepper
2 tablespoons oil
1 (16 ounce) can tomatoes, cut up
1/2 cup onion, finely diced
1/2 teaspoon Worcestershire sauce

Steps:

  • Combine flour, salt and pepper. Pound 2 tablespoons of the flour mixture into meat.
  • In a large skillet, add oil and brown meat on both sides over very high heat. Transfer meat to a 12x8x2 baking dish.
  • Stir remaining flour mixture into pan drippings in skillet. Stir in undrained tomatoes, onion and Worcestershire sauce. Cook and stir until thickened and bubbly. Cook and stir 1 to 2 minutes more. Pour over meat in baking dish.
  • Bake, uncovered, in a 350 degree Fahrenheit oven for 1 hour and 20 minutes or until meat is tender.

This is a variation on another recipe, which is great as is, but I couldn't make Swiss steak without green peppers or garlic. I also season the meat instead of the flour; it gets a more intense taste that way.

½ teaspoon salt
¼ teaspoon ground black pepper
½ teaspoon seasoned salt (such as LAWRY'S®)
1 tablespoon all-purpose flour, or as needed
¼ cup vegetable oil
1 (14.5 ounce) can stewed tomatoes
1 medium onion, chopped
1 green bell pepper, chopped
¼ cup beef broth
½ cup chopped carrots
¼ cup chopped celery
2 cloves garlic, minced
1 tablespoon all-purpose flour
¼ teaspoon Worcestershire sauce
¼ cup shredded sharp Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a shallow baking dish.
  • Cut steak into four portions and pound to 1/4-inch thickness; season with salt, pepper, and seasoned salt. Coat meat evenly with about 1 tablespoon flour.
  • Heat oil in a skillet over medium heat. Cook beef in hot oil until browned completely, 3 to 5 minutes per side; transfer to prepared baking dish reserving drippings in the skillet.

2 Ib beef bottom round, trimmed of excess fat
2 tsp kosher salt
1 tsp freshly ground black pepper
3/4 cup all-purpose flour
1/4 cup vegetable oil or bacon drippings
1 large onion, thinly sliced
2 cloves garlic, minced
2 stalks of celery, chopped
1 tbsp tomato paste
1 (14.5-ounce) can of diced tomatoes
1 tsp smoked paprika
1 tsp dried oregano
1 tbsp Worcestershire sauce
1 1/2 cups beef broth

Steps:

  • Preheat the oven to 325 F.
  • Slice the meat 1/2-inch thick with the grain and season with salt and ground black pepper on both sides.
  • Fill a pie pan with the flour.
  • Dredge both sides of the slices of meat in the flour until coated.
  • Use a needle meat tenderizer to tenderize the meat until each slice is 1/4-inch thick.
  • Put the slices aside and dredge them with the flour again until coated on both sides.
  • Set a 4 to 5-quart Dutch oven over medium-high heat with the vegetable oil or bacon drippings.
  • Add the steaks to the Dutch oven once the oil begins to shimmer, being careful not to crowd the Dutch oven.
  • Cook until golden brown, about 2 minutes on each side.
  • Once all the steaks have been browned, remove them to a plate.
  • After removing the last steaks from the pot, add the onions, garlic, and celery, and cook them for 1 to 2 minutes.
  • Stir the tomato paste into the mixture. Then, add the tomatoes, paprika, oregano, Worcestershire sauce, and beef broth, and stir well.
  • Add the meat back to the pot, submerging it in the liquid.
  • Place the pot on the middle rack of the oven and cover it.
  • Bake until the meat is tender, about 1 1/2 to 2 hours.
  • Serve and enjoy with your favorite sides.

This is a meat and gravy all in one dish. It's key to keep enough liquid in your skillet while cooking to provide gravy when it's done. You can use basically any cut of steak, because of the low & slow cooking method, any cut will turn out tender.

2-3 lb steak, cut into approx 3 inch cubes
2 tsp garlic powder
2 tsp mrs. dash, table blend
1 tsp pepper
1 Tbsp olive oil
2 Tbsp flour
1 Tbsp worcestershire sauce
1/2 c carrots, cubed
1/2 c celery, finely chopped
1/2 c sweet onion, roughly chopped
2 c approx. of water or beef broth
8 oz frozen peas, optional
1-2 c mushrooms, sliced, optional

Steps:

  • 1. Dice carrots, celery and onion.
  • 2. Cut meat into large cubes, drizzle with olive oil. Season with garlic, onion pwd., mrs. dash, & pepper. Rub to coat meat well, then sprinkle enough flour to lightly coat meat. Drizzle with a little Worcestershire sauce.
  • 3. Place steak in a large cast iron or oven proof skillet, baking dish or dutch oven. Add vegetables on top. Pour enough hot water into pan to come almost to top of meat, cover bake 400* for 30 min., reduce to 325* bake for 1 1/2 hours, checking liquid level half way through. Add more water or broth if level is very low.
  • 4. Remove from oven, add peas and mushrooms if desired, stir in with meat, add more water or broth to bring liquid back up if needed and simmer on stove top for about 20 min. IF NOT adding mushrooms or peas, go straight to next step.
  • 5. Remove from oven, if broth is too thin, thicken with a cornstarch/water mix (Use 1 tbsp. cornstarch with 1 c cold water or milk) and simmer for about 5 min. Season with salt & pepper to taste. TIP: To darken your broth, add a tsp of Kitchen Bouquet at end of cooking.
  • 6. Serve over potatoes, rice or pasta.

MUSHROOM-SMOTHERED SWISS STEAK

A great way to use inexpensive round steak. The mushroom gravy is delicious with mashed potatoes. The recipe is an old one from Jean Anderson's Grass Roots Cookbook. I've been making it since before my kids were born.

3 lbs beef round steak (cut 1 - 2 inches thick)
2 tablespoons butter or 2 tablespoons bacon fat (I often sub olive oil)
1 medium yellow onion, chopped
3/4 lb mushroom, thinly sliced
1/3 cup flour
1 cup beef stock
1 cup milk
1/2 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Preheat oven to 350 F (180 C).
  • In a large, heavy oven-proof skillet over moderately high heat, brown the steak on both sides in the fat.
  • Transfer to a plate and keep warm.
  • In the drippings in the skillet, saute the onion and mushrooms over moderate heat for about 5- 8 minutes, until limp and lightly browned.
  • Blend in the flour, add the stock, milk, salt and pepper, and heat, stirring constantly, until thickened and smooth- about 3 minutes.
  • Place the steak back in the skillet.
  • Turn and spoon some of the mushroom sauce over the steak.
  • Cover snugly and bake for about 1 1/2 hours, or until steak is fork tender.

1/2 cup flour
1 teaspoon salt

1 medium onion, sliced and separated into rings

1 (8 ounce) can tomato sauce

  • Saute onion and bell pepper in hot drippings 7 minutes or until tender.

8 bacon strips
2 pounds beef top round steak (3/4 inch thick)
2 cups sliced fresh mushrooms
1 can (14-1/2 ounces) diced tomatoes, undrained
1/2 cup chopped onion
1 to 2 teaspoons dried tarragon
2 tablespoons cornstarch
2 tablespoons water
1 cup heavy whipping cream
Minced fresh parsley, optional

Steps:

  • In a large cast-iron or ovenproof skillet, cook bacon over medium heat until crisp. Remove to paper towels to drain, reserving 1/4 cup drippings. Crumble bacon and set aside. , Trim beef; cut into serving-size pieces. Brown on both sides in drippings. Top meat with mushrooms, tomatoes and onion. Sprinkle with tarragon and bacon. Cover and bake at 325°, until meat is tender, 1-1/4 to 1-3/4 hours, basting twice. , Remove meat to a serving platter; keep warm. Combine cornstarch and water until smooth; add to skillet. Bring to a boil; cook and stir until thickened, about 2 minutes. Reduce heat; stir in cream. Simmer, uncovered, until heated through, 3-4 minutes. Return meat to skillet and turn to coat with sauce. If desired, sprinkle with parsley.
