These are super yummy and super easy! The combination of the chocolate, coconut, and oats is wonderful. No baking required! These also freeze well.

Number Of Ingredients 6

3 cups quick cooking oats
1 cup sweetened flaked coconut
2 cups white sugar
½ cup unsweetened cocoa powder
½ cup milk
½ cup margarine

Steps:

  • Line a baking sheet with waxed paper.
  • Mix oats and coconut in a large bowl until thoroughly combined.
  • Stir sugar, cocoa powder, milk, and margarine together in a saucepan over medium heat until the mixture is smooth. Bring to a boil and cook for 2 minutes, stirring constantly. Pour over the oats and coconut and quickly mix to coat. Drop by tablespoon onto prepared baking sheet; let cookies cool and harden. Store in an airtight container.

2 cups granulated sugar
1/2 cup unsalted butter
1/2 cup milk
1/3 cup unsweetened cocoa powder
1/4 teaspoon salt
2 cups old-fashioned rolled oats (uncooked)
1 cup shredded sweetened coconut

Steps:

  • Gather the ingredients.
  • Line 3 large baking sheets with waxed paper or parchment paper. Set aside.
  • In a large saucepan, combine the sugar, butter, milk, cocoa powder, and salt.
  • Bring to a boil over medium heat, stirring constantly. Continue to boil for 3 minutes.
  • Remove the pan from the heat. Stir in the oats and coconut.
  • Drop by slightly rounded tablespoonfuls on to the prepared baking sheets (about 12 per sheet). Press down lightly to form a cookie shape. The cookies will harden at room temperature after about 30 minutes, or they can be placed in the refrigerator for 10 minutes to firm.

2 cups sugar
1/2 cup butter or margarine, cubed
1/2 cup 2% milk
3 tablespoons baking cocoa
Dash salt
1/2 cup creamy peanut butter
1 teaspoon vanilla extract
3 cups old-fashioned oats

Steps:

  • In a large saucepan, combine the first 5 ingredients. Bring to a boil, stirring constantly. Cook and stir 3 minutes., Remove from heat; stir in peanut butter and vanilla until blended. Stir in oats. Drop mixture by tablespoonfuls onto waxed paper-lined baking sheets. Refrigerate until set. Store in airtight containers.

1/2 cup Coconut oil
1/2 cup Coconut milk
2 teaspoons Vanilla extract
1/2 teaspoon Sea salt
2 1/2 cups Fine,y shredded coconut
1 cup Big flake coconut
1/2 cup Optional almond or cashew butter
2/3 cup Dark chocolate chunk or chils

Steps:

  • In a saucepan, combine coconut sugar, oil and milk. Bring to a boil, stirring constantly, until caramel thickens. Remove from heat.
  • Add vanilla, salt, shredded and big flake coconut and spit to combine. Stir in chocoale chips and mix very little, to keep chocolate intact.
  • Portion on parchment covered cookie sheet and let cool for four hours. You may refrigerate to speed up setting process.
