Gettin' your greens was never so tasty, or so quintessentially southern. I served this with plain old baked sweet potatoes, brown rice, and BBQ for a good old meal.

Number Of Ingredients 8

4 -5 cups frozen spinach
1 -2 tablespoon peanut oil
1 -2 tablespoon red pepper flakes
1/4 cup cider vinegar
1/4 cup vegetable stock
3 teaspoons minced garlic
2 small onions, chopped
1/2-2 teaspoon Tabasco sauce, to taste

Steps:

  • Saute the onions, garlic, and about half the pepper flakes in peanut oil until golden and aromatic.
  • Add the spinach and half the vegetable broth. Saute until broth is mostly evaporated.
  • Add the remaining pepper flakes and all the vinegar. Saute until flavors are well combined.
  • Add remaining vegetable broth if more saute liquid is needed or if a 'soupier texture is desired.
  • Serve piping hot!

SPINACH CHEESE PASTRIES



Spinach Cheese Pastries image

Pastry:
1/2 pound cream cheese, softened
1 cup salted butter, softened
2 cups all-purpose flour

Filling:
1 medium onion, finely chopped
1/4 cup olive oil
1 (10-ounce) package frozen spinach, thawed, drained
1 1/4 teaspoons salt
1/4 teaspoon white pepper
1 cup feta cheese
1/2 cup pot cheese or cottage cheese
1 egg, beaten

Steps:

  • Sauté onion in olive oil. Add spinach and seasonings, while cooking. Mix cheeses and egg. Combine spinach with egg mixture. Be sure to mix thoroughly. Cool to lukewarm. Place teaspoonful of Filling in center of each round of Pastry. Fold over to make crescent shape. Edges may be pressed with fork. Place on ungreased cookie sheet. Bake at 425° for 15-20 minutes. May be served warm or at room temperature. This is a great make-ahead-freeze-bake as needed.

SPINACH-STRAWBERRY SALAD



Spinach-Strawberry Salad image

Number Of Ingredients 9

1 pint fresh strawberries
12 ounces fresh spinach
1/4 cup safflower oil
1 tablespoon sugar
2 tablespoons minced green onions
1 teaspoon salt
Dash of Tabasco
2 tablespoons salad vinegar
2 tablespoons sesame seeds, toasted

Steps:

  • Slice strawberries. Tear spinach into bite-size pieces. Combine safflower oil, sugar, onion, salt, Tabasco, and salad vinegar to make dressing. Add sesame seeds. Gently toss in strawberries and spinach.
