DEEP SOUTH PEACH COBBLER



Deep South Peach Cobbler image

The more of the leftover pastry you you have under the crust the better

Number Of Ingredients 6

1 pint(s) sliced peaches or nectarines
1 cup(s) sugar
1/2 stick(s) butter or margarine
2 tablespoon(s) cornstarch with just enough cold water to dissolve
1/4 tsp. - almond flavoring
- pastery dough for an 8x8 dish

Steps:

  • Place peaches in a small pot with just enough water to cover. Bring to a boil then stir in sugar and butter. Stir until melted; simmer for l0 minutes.
  • Remove from stove and stir in flavoring and cornstarch mixture.(make sure to mix the cornstarch with cold water) Pour into a greased 8x8 dish.
  • Roll and cut pastry to fit in a latice fashion. Use extra crust to put into peach mixture. Just be sure to get the extra pastry covered with juice. Bake at 400 degrees until cobbler is bubbly and the crust is brown.

Everybody loves this recipe, even my friends who do not like sweets. Excellent with fresh whipped cream or vanilla ice cream.

½ cup butter
1 cup white sugar
¾ cup self-rising flour
¾ cup milk
1 (29 ounce) can sliced peaches in light syrup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place butter in a deep 2 quart baking dish and place in oven to melt.
  • In a medium bowl, mix sugar and flour. Stir in milk, a little at a time, until wholly incorporated. Pour carefully over melted butter in dish. Spoon peaches and syrup over batter.
  • Bake in preheated oven 35 to 45 minutes, until crust is puffed and golden.

I've been experimenting with cobbler for some time and this recipe is the final result. Loved by all. Use fresh Georgia peaches, of course!

8 fresh peaches - peeled, pitted and sliced into thin wedges
¼ cup white sugar
¼ cup brown sugar
¼ teaspoon ground cinnamon
⅛ teaspoon ground nutmeg
1 teaspoon fresh lemon juice
2 teaspoons cornstarch
1 cup all-purpose flour
¼ cup white sugar
¼ cup brown sugar
1 teaspoon baking powder
½ teaspoon salt
6 tablespoons unsalted butter, chilled and cut into small pieces
¼ cup boiling water
3 tablespoons white sugar
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • In a large bowl, combine peaches, 1/4 cup white sugar, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, nutmeg, lemon juice, and cornstarch. Toss to coat evenly, and pour into a 2 quart baking dish. Bake in preheated oven for 10 minutes.
  • Meanwhile, in a large bowl, combine flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder, and salt. Blend in butter with your fingertips, or a pastry blender, until mixture resembles coarse meal. Stir in water until just combined.
  • Remove peaches from oven, and drop spoonfuls of topping over them. Sprinkle entire cobbler with the sugar and cinnamon mixture. Bake until topping is golden, about 30 minutes.

3 cups sliced fresh peaches
1/4 cup sugar, divided
1 tablespoon lemon juice
1 teaspoon grated lemon peel
1 teaspoon almond extract

Shortcake:
1 1/2 cups flour
1/2 teaspoon salt
3 teaspoons baking powder
3 tablespoons sugar, divided
1/3 cup shortening
1/2 cup milk
1 egg, well beaten

Steps:

  • Arrange peaches in a greased 8-inch square baking pan. Sprinkle with a mixture of 1/4 cup sugar, lemon juice, lemon peel, and almond extract. Heat in oven while preparing Shortcake. Shortcake: Sift together flour, salt, baking powder, and 1 tablespoon sugar, cut in shortening until mixture looks like coarse crumbs. Add milk and egg at once; stir just until flour is moistened. Spread dough over hot peaches. Sprinkle with remaining 2 tablespoons sugar. Bake in a 400° oven 40 minutes or until nicely browned. Fun Fact: The phrase "stars fell on Alabama" refers to a meteor shower that was seen across Alabama in November 1833. In addition to being the title of a song and a book, the phrase has aptly come to refer to the many music stars with connections to Alabama.
