2 cups yellow squash, uncooked and grated
2 teaspoons onions, grated
2 teaspoons sugar
1/2 teaspoon salt
1/4 teaspoon pepper
6 tablespoons flour
1 egg
4 tablespoons butter

Steps:

  • Combine the grated squash and onion and mix well.
  • Add sugar, salt, pepper, blending completely.
  • Allow this mixture to sit for 30 minutes, then drain it well.
  • Add the flour and egg and stir well.
  • Melt the butter in a frying pan.
  • Drop the squash mixture by spoonfuls into the butter and fry until golden brown.

Fry up these cornmeal breaded summer squash slices just like grandma used to make. The recipe calls yellow squash, buttermilk, eggs, yellow cornmeal, flour and Cajun seasonings.Family and friends will love this crispy treat.

vegetable oil, for frying
1/2 cup whole buttermilk
3 large eggs
4 medium yellow squash, cut into 1/4-inch thick slices
1 cup yellow cornmeal
1 cup all purpose flour
3 tablespoons cajun or creole seasoning
1/2 teaspoon baking powder
1/4 teaspoon salt
freshly ground black pepper
fresh parsley chopped, for garnish

Steps:

  • In a large Dutch oven, pour the oil to a depth of 2 inches; heat to 365 degrees F.
  • In a large bowl, whisk together the buttermilk and eggs until smooth. Add the squash, tossing gently to coat; let stand for 30 minutes. Drain the squash, discarding the buttermilk mixture.
  • In a shallow dish, combine the cornmeal, flour, Cajun or Creole seasoning, baking powder, salt, and pepper, to taste. Dredge the squash in the mixture to coat.
  • Fry the squash, in batches, until golden brown, 2 to 3 minutes. Drain on paper towels. Garnish with parsley, if desired. Serve immediately.

A great way to use up your garden squash and the kids will love these sweet "treats." We have them for breakfast sometimes and other times have them as a side. Really good with BBQ pork chops or fried chicken.

1 cup grated summer squash
½ cup all-purpose flour
1 large egg, beaten
2 tablespoons milk
2 tablespoons grated onion
1 tablespoon white sugar
1 teaspoon salt, or to taste
¼ teaspoon ground black pepper
2 tablespoons vegetable oil

Steps:

  • Mix grated squash, flour, egg, milk, onion, sugar, 1 teaspoon salt, and pepper in a bowl until well combined.
  • Heat oil in a pan over medium heat. Working in batches, add tablespoonfuls of the squash mixture to the hot oil. Cook until the edges start to brown, 2 to 3 minutes. Flip patties and cook for 2 to 3 more minutes. Drain on paper towels. Repeat to cook remaining patties.
  • Serve hot and sprinkle with more salt, if desired.
