HOW TO DEEP FRY A HAM
Around the holiday season, many people like to serve deep fried turkey to their guests. Whether you're prepping a Chistmas ham or curating your Thanksgiving feast for a crowd, you can step up your holiday menu with a deep fried ham instead! Follow our step-by-step guide and make a delicious deep fried ham that will not disappoint those around the dinner table.

Steps:
- In a mixing bowl, combine the onion powder, garlic powder, brown sugar, mustard, and apple cider.
- Mix together until dissolved.
- Add oil to the deep fryer, filling the stock pot to three quarters of the way full. Leave enough space so the oil does not overflow when the ham is submerged. Heat until 375 degrees Fahrenheit.
- Fill the marinade injector with brine and inject the ham in multiple spots to disperse the flavor. Use as much of the brine as possible.
- Dry the ham with the lint-free towel so there is no excess moisture on the ham.
- Cut a slit through the ham and slide the ham onto the poultry wrack.
- Lower the ham into the fryer. Cook each pound of the ham for 7 minutes or until the core temperature of the ham is 160 degrees Fahrenheit.
- Remove the ham from the fryer and allow the excess oil to drain off. Carve the ham and enjoy!

- In a large plastic tub, place water, cider, 1 cup brown sugar, salt, cinnamon, cloves and ham and stir until dissolved. Place the ham in the brine and refrigerate overnight. The following day, take the ham out of the brine and dry well.
- Fill your turkey fryer with the peanut oil. Heat the oil to 375 °F. *Cook's Note: For a larger ham, use less oil as the larger the ham, the more liquid displacement there will be.
- Place the ham carefully inside the fryer. There is a lot of moisture in the ham, the oil will bubble up intensely, so be careful and lower it very slowly. Cook for 7 1/2 minutes per pound. The ham will be cooked when it is 160 °F inside. Check it with an instant-read thermometer to make sure it is cooked.
- Remove the ham carefully letting it cool off and drain of excess oil for about 10 to 15 minutes.
- Combine juice, pineapple, mustard, 1 cup brown sugar and honey in a medium saucepan on low heat and let reduce until a syrupy consistency.
- Let the glaze cool slightly and then pour it over the deep fried ham. Serve any extra glaze on the side at the table.
DEEP FRIED SPIRAL SLICED HAM
Make your glazed spiral ham crunchy and bacony on the outside while moist and juicy on the inside. Only in TX would we deep fry meat that is already cooked!

- In an outdoor turkey fryer kind of contraption heat several gallons of peanut oil to 375.
- You can use the oil left over from frying a cajun turkey- it is seasoned and hot already and just perfect.
- Lower the ham - unwrapped of course- into the hot oil.
- Do not do anything to the ham- just remove from package.
- As the ham fries it will 'seal' the outside with a type of crust like crispy bacon and seal all the juices inside.
- Fry about 7-9 minutes- longer will give you MORE crust, shorter will produce less crust. You may need to make this recipe a few times before you find the perfect 'doneness' for you.
- Carefully remove from oil and let drain and cool a little.
- Slice as you would any spiral cut ham.
- Serve!

- Thaw ham completely and pat dry.
- (When deep frying moisture on the surface will cause a lot of oil popping and splattering, be careful) Marinade (if using) Inject whatever marinade you want to use into several place throughout the ham (I recommend 10-15 spots).
- Place the ham in the steamer basket that comes with most turkey deep fryers and CAREFULLY and SLOWLY lower the ham into the hot oil (350-375 degrees).
- There is a lot of water in the ham!
- Since I couldn't put it in otherwise you must cook the ham about 3 1/2 to 4 minutes per pound depending on the size of the ham and how much it cools down the oil.
- Obviously a smaller ham will take less time if the oil is hotter and a bigger ham will take longer even with the oil hot.
- If when you start the oil cools down don't worry just watch the temp and adjust your cooking time.
- Also for a bigger ham you would want to use less oil in the deep fryer so it doesn't overflow when the ham is lowered inches.

GLAZED SPIRAL-SLICED HAM(ATK)
You can bypass the 90-minute soaking time, but the heating time will increase to 18 to 20 minutes per pound for a cold ham. If there is a tear or hole in the ham's inner covering, wrap it in several layers of plastic wrap before soaking it in hot water. Instead of using the plastic oven bag, the ham may be placed cut-side down in the roasting pan and covered tightly with foil, but you will need to add 3 to 4 minutes per pound to the heating time. If using an oven bag, be sure to cut slits in the bag so it does not burst. We've included two optional glazes.

- Leaving ham's inner plastic or foil covering intact, place ham in large container and cover with hot tap water; set aside for 45 minutes. Drain and cover again with hot tap water; set aside for another 45 minutes.
- Adjust oven rack to lowest position and heat oven to 250 degrees. Unwrap ham; remove and discard plastic disk covering bone. Place ham in oven bag. Gather top of bag tightly so bag fits snugly around ham, tie bag, and trim excess plastic. Set ham cut-side down in large roasting pan and cut 4 slits in top of bag with paring knife.
- Bake ham until center registers 100 degrees on instant-read thermometer, 1 to 1 1/2 hours (about 10 minutes per pound).
- Remove ham from oven and increase oven temperature to 350 degrees. Cut open oven bag and roll back sides to expose ham. Brush ham with one-third of glaze and return to oven until glaze becomes sticky, about 10 minutes (if glaze is too thick to brush, return to heat to loosen).
- Remove ham from oven, transfer to cutting board, and brush entire ham with another third of glaze. Let ham rest, loosely tented with foil, for 15 minutes. While ham rests, heat remaining third of glaze with 4 to 6 tablespoons of ham juices until it forms thick but fluid sauce. Carve and serve ham, passing sauce at table.
- To Make Maple-Orange Glaze: Combine all ingredients in small saucepan. Cook over medium heat, stirring occasionally, until mixture is thick, syrupy, and reduced to 1 cup, 5 to 10 minutes; set aside.
- To Make Cherry-Port Glaze: Simmer port in small saucepan over medium heat until reduced to 2 tablespoons, about 5 minutes. Add remaining ingredients and cook, stirring occasionally, until sugar dissolves and mixture is thick, syrupy, and reduced to 1 cup, 5 to 10 minutes; set aside.

- A big ham can take hours to heat through in the oven, by which time the meat becomes very dry. We found two tricks for reducing oven time and increasing moisture retention. Wrapping: Cooking the ham in an oven bag reduces the oven time by another half hour or so. Soaking: Placing the wrapped ham in warm water for 90 minutes raises its internal temperature and decreases the cooking time by over an hour.
