Fried Sweet Bananas image

A very traditional breakfast or dessert in northeast Brazil, bananas or plantains are fried in butter and coated with cinnamon-sugar. Delicious with vanilla ice cream too.

3 firm bananas, halved lengthwise
½ cup white sugar
1 ¼ teaspoons ground cinnamon
3 tablespoons butter

Steps:

  • Cut each banana half into 3 or 4 pieces.
  • Mix sugar and cinnamon together in a shallow bowl.
  • Melt butter in a skillet over medium-low heat; add banana slices and cook until golden brown, 5 to 10 minutes. Transfer banana slices to a paper towel-lined plate. Coat banana slices, 1 at a time, with cinnamon-sugar.

This makes enough for 12 people. You can serve these with your favorite.....honey, maple syrup, powder sugar, melted chocolate or hot fudge!

1 cup all-purpose flour
1/4 cup sugar
1 teaspoon salt
1/4 teaspoon ground nutmeg
1 egg, large, lightly beaten
1 tablespoon vegetable oil
1/2 cup milk
1 teaspoon vanilla
vegetable oil
9 bananas, firm and ripe, sliced into 1 inch pieces

Steps:

  • In a small bowl, combine the first four ingredients.
  • In a large bowl, combine the egg, oil, milk, and vanilla. Gradually add the flour mixture to the egg mixture, stirring often.
  • Pour the oil to a depth of 2 inches into a Dutch oven; heat to 375 degrees. Dip the banana slices into the batter; fry in hot oil 3 1/2 to 4 minutes or until golden. Drain on paper towels.

  • Place the flour, eggs, and bread crumbs each in a separate bowl. Dredge the banana halves in flour to get an even coating. Shake to remove excess flour. Next, soak the banana halves in the beaten eggs mixed with 1 tsp water. Finally, cover the banana halves in bread crumbs.
  • Fry each half until lightly golden (do NOT overcrowd the pan), about 1 to 2 minutes. Remove with a slotted spoon. Place on a plate lined with a double layer of paper towels.
