CRUSTY DINNER BISCUITS

Number Of Ingredients 7

1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup milk
1 tablespoon vegetable oil
Half-and-half cream or milk, optional
Butter and/or honey

Steps:

  • In a bowl, combine the flour, baking powder and salt. Combine milk and oil; pour over dry ingredients and stir just until moistened., Turn onto a floured surface; knead 5-6 times. Roll out to 1/2-in. thickness; cut with a floured 2-in. biscuit cutter. Place on a greased baking sheet. , Brush tops with cream if desired. Bake at 425° for 13-15 minutes or until golden brown. Serve warm with butter and/or honey.

2 cups all-purpose flour, plus more for dusting
1 tablespoon packed dark-brown sugar
1/2 teaspoon coarse salt
1 tablespoon baking powder
1/4 teaspoon ground ginger
1/4 teaspoon ground cloves
1/8 teaspoon freshly ground pepper
6 tablespoons unsalted butter, chilled and cut into 1/4-inch pieces
1/4 cup plus 2 tablespoons milk
1/4 cup unsulfured molasses
1 tablespoon heavy cream, for brushing

Steps:

  • Preheat the oven to 375 degrees with rack in center. Sift together flour, sugar, salt, baking powder, ginger, cloves, and pepper. Using a pastry blender or two knives, cut in butter until the mixture resembles coarse meal.
  • In a small bowl, whisk together milk and molasses until completely combined. Make a well in the center of the flour mixture, and add the milk-molasses mixture.
  • Using a fork, stir the mixture until it almost comes together. Gently bring the remaining smaller dough particles together with your fingertips. Transfer dough to a very lightly floured surface, and pat into a flattened circle about 6 inches in diameter and 3/4 inch thick. Cut dough into rounds with a 2-inch cookie cutter. Gently press the excess dough together, and cut several more biscuits. Gently press the remaining excess dough together one more time, and cut one more biscuit.
  • Transfer biscuits to a parchment-lined baking sheet; generously brush tops with cream. Bake until golden brown, 24 to 26 minutes. Place biscuits on a wire rack to cool slightly.

DEBORAH'S DIVINE DINNER BISCUITS

When I was pregnant with my second child, I had just moved back to Ireland. I had a terrible craving for those biscuits you get at Red Lobster, but considering my closest one was probably on the coast of Maine, I had no choice but to make my own or suffer! I came up with this recipe, and I think they are divine, as does anyone else who tries them. I think they might even be better than the Red Lobster ones! You can substitute regular onion for the scallions if you prefer.

2 cups self-raising flour
1 cup milk
6 tablespoons ice-cold butter
1 tablespoon baking powder
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon white pepper
3/4 cup sliced green onion (green and white parts)
1 cup grated cheddar cheese
3 tablespoons butter, to brush
1/2 teaspoon garlic powder

Steps:

  • Mix flour, baking powder and spices in large bowl.
  • Cut the butter into the flour mixture using a pastry cutter or two knives.
  • When it resembles fine breadcrumbs, add the cheese and scallions mix, then add milk but don't over mix.
  • Using a large spoon drop onto a greased cookie sheet or ungreased stoneware sheet. Make as big or small as you would like. You can roll out the dough if you prefer and cut circles, if you like a more uniform appearance.
  • Melt remaining butter and mix in additional garlic powder. Brush tops of biscuits. If there is any left, take out halfway through baking and brush again.
  • Bake at 200C/400F for 15-20 minutes until golden brown and sort of crusty.
  • Serve warm as is, or with more butter!

  • Mix 1 1/2 cups all-purpose flour, 1/2 cup whole-wheat flour, 1/4 cup oats, 1 tablespoon wheat germ, 2 teaspoons baking powder, 1 teaspoon each salt and chopped thyme, and a pinch of pepper in a bowl. Whisk 3 tablespoons molasses, 1/3 cup vegetable oil and 3/4 cup milk; stir into the flour mixture. Drop 10 mounds of dough (1/4 cup each) on a parchment paper-lined baking sheet. Brush with milk and sprinkle with more oats, thyme and salt. Bake at 450 degrees F until golden, about 12 minutes.

3/4 cup cornmeal
1/4 cup sugar

1 teaspoon dried basil leaves
1 teaspoon dried parsley flakes

3/4 cup margarine or 3/4 cup butter
1/2 cup shredded carrot
1/3 cup milk
1 egg

Steps:

  • Heat oven to 400*.
  • In medium bowl, combine flour, cornmeal, sugar, baking powder, basil, parsley flakes and salt; blend well.
  • Using pastry blender or fork, cut in margarine until mixture resembles coarse crumbs.
  • Stir in carrots.
  • Add milk and egg, stirring just until moistened.
  • To form each biscuit, drop 1/4 cup of dough onto ungreased cookie sheet.
  • Bake at 400* for 12 to 14 minutes or until light golden brown.
  • Serve warm.
  • Yield: 12 biscuits.

This is a recipe that I've adapted from other biscuit recipes and find it quick easy and not too heavy. Great with all kinds of dinners.

1 1/2 cups unsifted flour
1 teaspoon salt
1 teaspoon sugar
1 tablespoon baking powder
2/3 cup milk
1/3 cup vegetable shortening
1/3 cup sharp cheddar cheese (or to taste)
2 finely sliced green onions

Steps:

  • Preheat oven to 425°F
  • Sift into mixing bowl flour, salt, sugar and baking powder.
  • Add shortening and cut in with butter knives and then hands.
  • Make a nest in the flour mix and add milk mix/knead until thoroughly mixed.
  • Add milk, if needed, to form, and mix.
  • Turn onto lightly floured board, and knead gently 6 to 8 times.
  • Role dough to two inch diameter.
  • Cut into biscuits.
  • Place on baking sheet and brown in oven 10-12 minutes.

This easy recipe for savoury buttermilk biscuits is seasoned with garlic powder, black pepper, and chopped fresh chives, but you could substitute any herbs or spices. Grated Pepper jack cheese and paprika make a fine Southwestern version, or just add black pepper to the dough and sprinkle the biscuit with kosher salt and sesame or poppy seeds just before baking. The trick to getting the most height from these biscuits is to use a clean cutter and press down smoothly and swiftly; don't twist the cutter. I got this recipe from our local newspaper.

1/4 teaspoon garlic powder

4 tablespoons butter, cold, cut up into small pieces
1 1/3 cups buttermilk, divided

Steps:

  • heat oven to 450°F Coat a baking sheet iwth cooking spray or line it with parchment paper.
  • In a large bowl, mix together flour, baking powder, salt, garlic powder, black pepper, and chives.
  • Add butter and use knives or a pastry cutter to work into dry ingredients until mixture resembles coarse wet sand. Add 1 cup buttermilk and mix until the dough just comes together.
  • Alternatively, in a food processor, combine flour, baking powder, salt, garlic powder, black pepper, and chives.
  • Pulse twice to mix, then add butter. Pulse several times to work butter into dry ingredients until mixture resembles coarse wet sand.
  • Add 1 cup buttermilk, and pulse until dough just comes together.
  • Transfer dough to a lightly floured counter and knead dough 6-8 times. Use a lightly floured rolling pin to roll out dough to about 1/2 inch thick. Use a 3-inch biscuit cutter to cut out biscuits and place them on the prepared baking sheet.
  • Use a pastry brush to brush the tops of each biscuit with a bit of the remaining buttermilk. Bake for 12-14 minutes.
