AUTHENTIC GERMAN POTATO SALAD

Authentic German Potato Salad image

This is my mother's recipe. Everyone, German or not, loves it. It is easy to double the recipe as well. I often bring it to potlucks, and we also have it at home on special occasions. There are usually no leftovers, but if there are, they don't last long!

HOT GERMAN POTATO SALAD CASSEROLE

Hot German Potato Salad Casserole image

Passed down from my German/Dutch Grandmother. A hot potato salad with bacon, cheese and a creamy/vinegar sauce makes this a wonderful dish to serve with bratwurst on a cold fall day in Deutschland or wherever you might be. I usually double the bacon and sauce to make this extra flavorful.

  • Drop the unpeeled potatoes into enough boiling water to cover them completely. Boil them briskly until they show only the slightest resistance when pierced with the point of a sharp knife. Be careful not to let them overcook or they will fall apart when sliced. Drain the potatoes in a colander, then peel and cut them into ¼ inch slices. Set the potatoes aside in a bowl tightly covered with foil.
  • In a heavy 8-to10-inch skillet, cook the bacon over moderate heat until brown and crisp. Spread it out on paper towels to drain.
  • Add the onions to the fat remaining in the skillet and cook, stirring frequently, for 5 minutes or until they are soft and transparent but not brown. Sprinkle flour, sugar salt and pepper over onions and cook over low heat, stirring constantly, till mixture is bubbly. Stir in the vinegar and water, stirring constantly, heat to boiling. Boil for 1 minute and remove from heat. Pour the hot sauce over the potatoes, turning the slices about gently with a large spoon or spatula to coat them evenly with the onions and vinegar mixture. Gently stir the reserved bacon pieces into the salad. Taste for seasoning.
  • Serve at once or cover and set the salad aside at room temperature until you are ready to serve it. Just before serving, stir the salad gently and sprinkle the top with parsley.

  • Scrub the potatoes and cut any large potatoes in half so that all of the potatoes are approximately equally sized. Place the potatoes in a large pot and cover with cold water. Bring to a boil and stir in 1 teaspoon of salt. Reduce heat and simmer the potatoes for 15 to 20 minutes or until tender when stabbed with a fork. Drain the water. Leaving the potatoes in the pot, return the pot to the still-hot (but turned off) burner. Leave the lid off of the pot and allow the potatoes to steam dry for a couple minutes.
  • Set another large pot over medium heat and, using kitchen shears, cut the bacon strips into approximately 1-inch pieces directly into the pot. Cook the bacon, stirring occasionally, until crispy. While the bacon is cooking, cut the potatoes into 1/2-inch thick slices, cutting any extremely large slices in half. Set aside. Once the bacon is done, remove the pot from the stove and use a slotted spoon to remove the bacon pieces to a plate or bowl while leaving the bacon grease in the pot (I had about 1/4 cup).
  • Slowly and carefully add vinegar, sugar, Dijon, salt, and pepper to the pot of bacon grease. Place the pot back on the burner, bring the mixture to a simmer, and stir for a couple of minutes. Stir the minced garlic into the mixture and cook for 30 seconds to 1 minute, until the garlic starts to turn a light golden. Remove the pot from the heat and toss in the sliced potatoes, gently mixing until potatoes have absorbed all of the liquid. Carefully fold in the cooked bacon pieces and chopped parsley. Transfer the potato salad to a serving dish and serve hot or warm. Potato salad should not sit at room temperature for more than two hours before refrigerating any leftovers.
