DARK CHOCOLATE SAUCE

- In a large saucepan, combine the brown sugar, cocoa and cornstarch. Stir in milk and coffee until smooth. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Remove from the heat. Stir in vanilla. Store in the refrigerator.

DEATH BY CHOCOLATE: CHOCOLATE GANACHE
Steps:
- Prepare the ganache, heat 1 1/2 cups heavy cream and 3 tablespoons of butter in a 2 1/2 quart saucepan over medium high heat. Bring to a boil. Place 22 ounces of semisweet chocolate in a stainless-steel bowl. Pour the boiling cream over the chocolate and allow to stand for 5 minutes. Stir until smooth. Keep at room temperature until needed.

- Place chocolate in a double boiler or stainless steel bowl set over a pot of simmering water.
- Add coffee, Grand Marnier, and cream.
- Heat, whisking occasionally, until chocolate melts and the mixture is smooth.
- Hold the sauce over warm water until you are ready to serve.
- Or, refrigerate and gently rewarm it before serving.
- Makes 1 1/2 cups.
