"WORLD'S BEST" MACARONI & CHEESE
We tasted this in Seattle at the Pike Place Market in the Beecher's store. It is the best! I had to get their recipe and I found it on the internet; It is a very rich creamy comfort food. I do not have Beecher's cheese so I improvised with what is available and it came out as tasty as the original. Serve this with a crisp salad. Enjoy!

- Preheat oven to 350; F. Set a large pot of water on high heat.
- Meanwhile, begin the sauce by making a roux: in a medium saucepan melt the butter over medium heat. Whisk in the flour. Continue to stir this roux over medium heat for two to three minutes.
- The roux should be cooked and free of the flour flavor but still light in color.
- Gradually add milk, whisking briskly to maintain a smooth sauce.
- Cook the sauce for about 10 minutes, stirring occasionally to avoid scorching.
- When sauce thickens, add cheeses, salt and spices to the sauce, and stir until all the cheese has melted. I make my sauces in the microwave; turns out great and never scorches.
- Somewhere during this sauce-cooking process, your pasta water has started boiling. The original is made with Penne noodles. Add a generous amount of salt to the water and cook the pasta until almost but not quite al dente (two minutes before the package directions indicate). You want barely undercooked pasta so that it can finish in the oven later. Halt the cooking by draining the pasta and rinsing with cold water. Return pasta to pot.
- Pour sauce over pasta and stir until completely incorporated. The combination should be fairly saucy, almost soupy.
- Dish the mixture into a buttered 9-13 pan and sprinkle with extra grated cheeses and cayenne. Bake, uncovered, for 30 minutes, until you have beautiful, browned edges. Those edges will be a welcome and flavorful addition to each serving.
- Let the dish sit for 5 to 10 minutes before serving. I divided this in 2 containers and froze one.

- Cook the 2 boxes of kraft dinner noodles AL DENTE,set aside.
- In a saucepan on low-medium heat start adding:.
- butter, cream, powdered cheese from each kraft dinner box,cream of cheddar soup,sour cream,white wine. keep stirring till smooth and creamy.
- Next start adding 1 cup asiago cheese, 1 1/2 cups cheddar cheese(reserve rest for later),stir until all cheese is melted.
- Next add the sage,garlic powder,inion powder, and pepper.
- keep stirring till everything is melted.
- In a casserole dish, mix the cooked kraft dinner with 3/4 of the cheese sauce.sprinkle cheese over this.then add the rest of the cheese sauce .Top with 3 cups croutons and remaining cheese.
- Bake in oven at 400 for about 30 minutes,or until it reaches a deep golden brown. Enjoy!
DEADLY MACARONI AND CHEESE
I call this deadly for two reasons: First, because it's just a "little" on the fattening, clog your arteries side of the food spectrum. Second, because it is just drop dead delicious!

Steps:
- Cook pasta according to directions on the package, drain, and set aside.
- Preheat oven to 350°F.
- In a large saucepan, fry the bacon until crispy then remove and crumble.
- Add the flour to the bacon drippings (yummies) and cooking, stirring constantly, for about 2 minutes over low/medium-low heat.
- Add the whole milk and whisk to combined; bring to a boil over medium-high heat.
- Remove from heat and add the chives, salt, pepper, onion powder, and cheese; stir to combined.
- Add macaroni then pour into a grease 9"-13" glass pan; top with more cheese and bake for about 15 minutes or until cheese is golden.
- Remove from the oven and let sit for 10 minutes before serving.
- Top with crumbled bacon before serving.

- Preheat oven to 350 degrees F. In a large skillet cook bacon over medium heat until crisp, turning once. Drain bacon on paper towels; crumble. Reserve bacon drippings in skillet.
- Cook onion in reserved bacon drippings for 5 to 8 minutes or until onion is tender and golden brown. Set aside.
- Cook elbow macaroni according to package directions. Drain and place in a 1-1/2-quart casserole. Add the crumbled bacon, onions.
- Combine in a saucepan 1-1/2 cups of the mozzarella cheese, the blue cheese, half-and half, 2 Tbsp butter,and pepper. Cook over low-med heat stirring constantly until it is smooth sauce-like texture. Pour over macaroni, onions and bacon.
- Bake, uncovered, for 20 minutes. Stir gently. Top with the remaining mozzarella cheese. Bake for 10 minutes more or until top of casserole is brown and bubbly. Let stand 10 minutes.

Steps:
- Cook pasta, slightly tougher than al dente, remove from pot, set aside.
- Preheat oven to 325.
- Melt butter.
- Combine butter, flour, and mustard. Whisk to incorporate into butter over medium low heat. Be careful not to brown the flour and whisk enough to eliminate lumps.
- Add milk, half and half, paprika, onion, salt, and bay leaf.
- Bring just to a boil and then reduce to a simmer. Simmer approximately 8 minutes.
- Remove bay leaf.

- Incorporate cheese, one third at a time, ensuring it is all melted before adding the next wave. Reserve about 2 cups for on top.
- Carefully fold in macaroni.
- Move to casserole.
- Top with remaining cheese.
- Combine dry topping ingredients.
- Melt butter in small skillet.
- Toss dry mixture in skillet until coated.
- Top casserole with topping.
- Bake 45 minutes.
- Allow to rest for ten minutes.
