This is a wonderfully moist and decadent carrot cake. It came to me from a friend with family of excellent bakers! Really mouth watering and delicious. Goes great with cream cheese frosting.

2 cups all-purpose flour
2 cups sugar
2 teaspoons baking powder
1 1/2 teaspoons baking soda
3/4 teaspoon salt
1 cup oil
4 eggs
2 cups grated carrots
1 1/2 teaspoons vanilla
1/2 cup shredded coconut
1 teaspoon nutmeg
1 teaspoon cinnamon
3/4 teaspoon ground cloves
1 teaspoon allspice
1 teaspoon rose water
8 ounces crushed pineapple (& juice from can)
1/2 cup crushed walnuts
1/2 cup raisins

Steps:

  • This recipe is easiest if you measure everything ahead of time, so it is all ready to go! Mix together all of the liquids first, then mix in the sugar, and then the rest of the dry ingredients.
  • Bake at 325 F for about 2 hours in a Bundt Pan and about 70 minutes in a regular cake pan.

2 cups flour, sifted
2 cups sugar
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon cinnamon
2 teaspoons allspice
4 eggs
1 cup coconut
1 cup oil
1 cup pineapple, crushed
1 cup carrot, grated
1 cup pecans, chopped
8 ounces cream cheese, softened
1/2 cup butter, softened
1 lb powdered sugar
1/2 cup coconut
1 cup pecans, chopped

Steps:

  • Preheat oven to 350 degrees.
  • Cake:.
  • Mix sifted flour, sugar, baking soda, salt, cinnamon, and all spice together; set aside.
  • In seperate bowl mix together 4 eggs, coconut, oil, pineapple, carrots, and pecans.
  • Gradually stir dry ingredients into egg mixture; stir by hand until mixed together.
  • Pour into greased and floured 9x13 pan.
  • Bake 45 minutes.
  • Frosting:.
  • With an electric/stand mixture cream together cream cheese, butter, and powdered sugar.
  • Add in coconut and pecan and mix just until they are incorporated.
  • Spread frosting onto cooled cake and serve.

David's Favorite Carrot Cake with Pineapple Cream Cheese Frosting image

2 tablespoons butter
1 1/2 cups granulated sugar
1 cup canola oil
1 cup light brown sugar
4 large eggs, lightly beaten
3 cups unbleached all-purpose flour
1 1/2 cups shredded carrots
1 1/2 cups shredded coconut
1 cup chopped walnuts, plus more for garnish
3 tablespoons ground cinnamon
1 tablespoon almond extract
1 tablespoon baking powder
1/2 teaspoon salt
One 15-ounce can pineapple rings, drained (reserve the liquid for the frosting) and chopped into 1/2-inch pieces
8 ounces cream cheese, at room temperature
3 cups confectioners' sugar
4 tablespoons unsalted butter, at room temperature
1/4 cup reserved pineapple juice from the canned pineapple

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Grease two 9-inch cake pans with the butter.
  • In a large bowl, add the granulated sugar, oil, brown sugar and eggs and mix together. Add the flour, carrots, coconut, walnuts, cinnamon, almond extract, baking powder, salt and pineapple and fold the ingredients together.
  • Pour the batter into the prepared pans and place the pans on a baking sheet. Bake until a toothpick inserted into the centers comes out clean, about 40 minutes. Place the cakes on a cooling rack until completely cooled, about an hour.
  • For the frosting: Meanwhile, in a stand mixer fitted with a paddle attachment, add the cream cheese, confectioners' sugar, butter and pineapple juice. Mix until smooth and incorporated.
  • To frost the cake: Carefully remove the cooled cakes from the pans. Using an offset spatula, place a dollop of the frosting on the cake stand and spread to create a sticky base. Place one layer on the frosting on the cake stand. Thickly frost the entire top of the cake and place the other layer atop the now frosted one. Beginning with the top of the new layer, frost generously. Place a large dollop of frosting on the side of the cake and spin the cake to evenly frost the sides. Garnish with the remaining walnuts.

This carrot cake is not a dessert, though at first glance it looks like one. Whimsical and festive, it could even be a birthday cake for someone lacking a sweet tooth. Serve it as a first course, or pair it with a salad for a light meal.

1 cup/125 grams all-purpose flour
3/4 cup/90 grams white cornmeal
1 teaspoon kosher salt
1 tablespoon white sesame seeds
1 teaspoon turmeric
Small pinch of cayenne
1 teaspoon baking powder
1 teaspoon baking soda
1 cup/250 milliliters buttermilk
2 eggs, beaten
2 ounces/60 grams feta cheese, crumbled
1 cup/100 grams grated carrots
1/2 cup/115 grams sliced scallions, both white and green parts, plus 2 tablespoons for garnish
4 tablespoons/60 grams unsalted butter, plus butter for greasing pan
1 teaspoon cumin seeds
1 teaspoon black mustard seeds
1 cup/240 grams crème fraîche
Cilantro sprigs, for garnish
1 teaspoon black sesame or nigella seeds, for garnish (optional)
Pinch of crushed red pepper, for garnish

Steps:

  • Position a rack in the middle of the oven and heat to 425 degrees.
  • In a mixing bowl, combine flour, cornmeal, salt, white sesame seeds, turmeric, cayenne, baking powder and baking soda.
  • In a separate bowl, whisk together buttermilk, eggs, feta, carrots and scallions. Lightly butter a 9-inch cake pan.
  • Add buttermilk mixture to dry ingredients and beat well to make a thick batter.
  • Melt butter in a small skillet over medium heat. When butter is hot, add cumin seeds and mustard seeds and cook until fragrant (seeds will begin to pop a bit). Adjust heat so butter does not burn; it's O.K. if butter browns a little.
  • Whisk hot butter mixture into batter and beat well to combine. Scrape batter into prepared cake pan and smooth top with a spatula.
  • Bake on the middle rack for 25 to 30 minutes or until a skewer or paring knife inserted into the cake comes out clean. Cool in the pan on a rack, then invert onto a plate. (Cake may be baked several hours or up to a day in advance.)
  • To finish cake, beat crème fraîche with a fork to loosen, then spread with a metal spatula or knife to coat top and sides. Decorate with cilantro sprigs and reserved scallions. Sprinkle with black sesame seeds, if desired, and crushed red pepper. Cut into wedges and serve.

1/3 cup orange juice concentrate
3 egg whites
1 cup all-purpose flour
1 teaspoon baking powder

1/8 teaspoon salt
1 cup grated carrots
2 teaspoons confectioners' sugar

Steps:

  • In a large bowl, combine the first four ingredients; beat for 30 seconds. Combine flour, baking powder, cinnamon, allspice, baking soda and salt; add to the orange juice mixture and mix well. Stir in carrots. , Pour into an 8-in. square baking pan that has been coated with cooking spray. Bake at 350° for 30 minutes or until a toothpick inserted in the center comes out clean. I bake this cake for my Church's coffee hour a couple of times a month. When I do, Father Thomas announces to the Church at the end of mass that Danny S. has baked another of his famous St. David's Heavenly Carrot Cakes. After the service, the parishioners flock to the Parish Hall and it's gone in just a few minutes. Thanks be to GOD for a great recipe!

2 cups ground carrots
1 (15 ounce) can crushed pineapple, drained
3/4 cup vegetable oil
1 1/2 cups sugar
3 eggs
1 teaspoon ground cinnamon
1/2 teaspoon nutmeg
1 1/2 cups flour
1 1/2 teaspoons baking soda
1/8 teaspoon salt
3/4 cup raisins
1 cup coconut
1 cup walnuts, chopped
3 1/2 cups confectioners' sugar
8 ounces cream cheese
1/2 cup butter, softened
1 1/4 teaspoons vanilla extract

Steps:

  • Preheat oven to 375F; grease and flour 10 inch bundt pan.
  • Sift together flour, baking soda and salt, set aside.
  • Combine carrots, pineapple, oil, walnuts, coconut and sugar. Add eggs, cinnamon and nutmeg. Add flour mixture and mix well. Stir in raisins.
  • Pour into greased and floured pan. Bake for 40-45 minutes, or until toothpick comes out clean.
  • Allow to cool, then frost with cream cheese frosting.
