BRITISH DATE AND WALNUT LOAF CAKE
This is an easy recipe to follow and it's great for any occasion. It's a very moist loaf cake, ideally cut into slices and buttered. Steps:
- Place dates and margarine in a bowl with boiling water and baking soda. Gently mix with a wooden spoon until margarine has melted and dates are plumped up. Let cool to room temperature, at least 30 minutes.
- Preheat the oven to 325 degrees F (165 degrees C). Line a 2-pound loaf pan with parchment paper.
- Combine flour, brown sugar, and walnuts in a separate bowl. Add to bowl with the date mixture. Mix well with a wooden spoon. Add egg and mix in. Spoon mixture into the prepared pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 60 to 75 minutes. Let cool on a wire rack.

DATE WALNUT DOUBLE DECKER
A recipe clipped from a long forgotten magazine more than 25 years ago. Have made this one for wedding showers a few times.

Steps:
- Combine first 3 ingredients and blend into fine crumbs. Press into bottom of a greased 9 inch square pan. Bake at 350 F for about 20 minutes, until edges are lightly browned.
- Combine brown sugar and remaining white sugar, eggs and vanilla and beat together well.
- Sift flour and nutmeg with baking powder and salt and add to first mixture.
- Stir in walnuts and dates.
- Turn batter into pan over hot baked pastry layer. Bake at 350 F for 20 minutes.
- Cool in pan, sprinkle top with powdered sugar if desired. Cut into 18 bars.

- Method.
- Preheat oven to 180 deg Celsius.
- Grease and flour a 28 cm round cake tin.
- For the chocolate cake base: Beat egg yolks with vanilla for 5 mins and add sugar and butter and wisk till smooth. Add flour and cocoa pdr and mix with a wodden spatula. You may add all or part of the one cup milk depending on the consistancy of the batter. Pour into the tin and bake @ 180 deg c for bt 40 minutes.
- For the white cake: Beat the eggwhites for 5 mins add sugar, vinegar and vanilla and beat for 2 mins until soft peaks form. Pour over the white cake mix on top of the chocolate cake and again bake for another 30 mins until top is golden brown. leave to cool.
- For Topping Sauce: In a pan heat all ingredients together stirring contnuously for 5 minutes pour this hot sauce over the cake and serve.

- In a small bowl, combine butter and cocoa until smooth. In a large bowl, beat eggs and sugar. Stir in chocolate mixture. Combine flour and salt; gradually add to chocolate mixture just until blended. Stir in walnuts. Pour into a greased 13-in. x 9-in. baking pan; set aside. , For butterscotch layer, in a large bowl, cream butter and brown sugar until light and fluffy. Beat in eggs and vanilla. DOUBLE DECKER FUDGE
This is my families version of Double Decker Fudge, one layer chocolate and one layer peanut butter. What makes it different from the other recipes posted, they use peanut butter chips, we use real peanut butter. So much better! I prefer to use chunky peanut butter....yummy!

- To make chocolate layer - In heavy saucepan combine sugar, butter and milk. Bring to full, rolling boil for 5 minutes. Stirring constantly. Remove from heat and stir in chocolate chips until melted. Add marshmallow creme and vanilla. Pour into buttered 9x13" pan. Set aside to cool.
- To make peanut butter layer - Repeat instructions above but replace chocolate chips with peanut butter. Pour over chocolate fudge layer.

This is the date loaf I've been making for years, originally found in a FiveRoses cookbook, I think. I like to spread a little butter on slices of it and have it with tea.

- Preheat oven to 350F; spray a loaf pan with nonstick baking spray like Pam, and set aside.
- In a small bowl or measuring cup, pour boiling water over baking soda so that soda dissolves.
- Place dates in a mixing bowl and pour water/soda mixture over dates; let cool.
- In a small bowl, stir together the flour, baking powder and salt; set aside.
- In a different bowl, beat the egg with an electric mixer, then slowly add the brown sugar, beating well after each addition.
- To the egg/sugar mixture, add cooled date mixture, toasted nuts and vanilla; mix well.
- Stir in the dry ingredients.
- Now, add the melted butter and mix well.
- Pour this mixture into the prepared pan and bake in preheated oven for approximately 55 minutes, or until loaf tests done.
- Let cool 10 minutes before removing from pan, then cool completely on a rack.

- Line a 13x9x2-inch pan with foil.
- Place 1 cup peanut butter chips in medium bowl; set aside.
- In a second medium bowl, blend 1/4 cup melted butter, cocoa and vanilla until smooth; add remaining 1 cup peanut butter chips.
- In a heavy 4 quart saucepan, combine sugar, marshmallow cream, evaporated milk and 1/4 cup butter. Cook, stirring constantly over medium heat until mixture comes to a rolling boil. Cook and continue stirring 5 minutes.
- Remove from heat. Immediately add half of hot mixture to bowl with peanut butter chips only. Pour remainder into cocoa mixture; stir to blend.
- Beat peanut butter mixture until chips are completely melted, spread evenly in prepared pan.
- Beat cocoa mixture until chips are melted and mixture thickens. Spread evenly over top of peanut butter layer.
- Cool; remove from pan. Remove foil; cut into squares. Store in airtight container in a cool dry place.
