VINTAGE RECIPE: GRANDMOTHER'S DATE BREAD



Vintage Recipe: Grandmother's Date Bread image

1 cup water
1 cup dates
1 tsp baking soda
2 Tbsp butter
1 ½ cups all-purpose flour (can also use a gluten-free flour blend)
1 tsp baking powder
½ cup raisins
1 egg (well beaten)
½ cup hot water

Steps:

  • Pour 1 cup water into a small pot and bring to a boil.
  • Once boiling, stir in dates, soda, and butter.
  • Reduce heat, and simmer until dates are very soft, about 20 minutes.
  • Use a fork to mash date mixture into a paste. It does not need to be perfectly smooth. Set aside to cool.
  • Combine flour, baking powder and raisins in a separate bowl.
  • When dates have cooled, stir in beaten egg and ½ cup hot water.
  • Add flour to date mixture and stir until combined.
  • Pour into well-greased 6.5" x 4" x 2" loaf pan and bake at 325 degrees for 45 - 60 minutes, until a toothpick comes out clean.
  • Turn out onto a wire rack to cool.
  • A standard-sized loaf pan can also be used, but will create a flat loaf. Bake for 35 - 40 minutes.

This recipe belongs to Anna Olson, a very famous Canadian chef. I reduced the original amount of sugar and oil just to make them it a little lighter. It works really well for muffins, too. I do not recommend the use of baking paper cups, because the muffins will stick to them.

320 g pitted dates
1 cup orange juice
1 1/2 cups all-purpose flour
1/2 cup sugar
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon ground cloves
1 large egg
1/4 cup vegetable oil (I use extra light olive oil)
3/4 cup raisins

Steps:

  • Simmer chopped dates and orange juice for less than a minute. Remove from heat a let cool down.
  • In a separate bowl, mix flour, sugar, baking soda, baking powder, salt and cloves and set aside. In another bowl, whisk egg and oil.
  • Add egg mixture and dates to flour mixture and mix until blended. It is very important do not over mix this batter; stir in raisins. Pour batter into greased loaf pan or muffin tin and bake for approximately 45 mins or until tooth pick comes out clean.

2 cups sugar
14 ounces sweetened condensed milk
1/4 cup butter
1/2 cup pecans (chopped)
8 ounces dates (chopped)

Steps:

  • Boil sugar, milk and butter until it forms a soft ball in cool water (grandma's exact words) -- around 240 degrees.
  • Fold in chopped dates and pecans, continue to cook until it pulls away from the pan (around 255 degrees).
  • Pour onto wet cloth in log form - dust with powdered sugar and roll.
  • Cool and cut into 20 pieces.

This was my playmate's mother's recipe Oh how I loved this date loaf! (Doris Eppinger --neeAllen). After school if we were lucky we'd get a slice. I hope it tastes as good now as it did 63 years ago.

1 3/4 cups flour
1 teaspoon baking soda
1 cup white sugar
1 egg, beaten
1 cup chopped dates
2 tablespoons butter
1 cup nuts (walnuts,Hazel, pecans your choice)
1 cup boiling water
1/2 teaspoon salt
1 teaspoon vanilla

Steps:

  • Heat oven to 350F, lightly grease a loaf pan.
  • Mix the dates, butter& boiling water, set aside& cool.
  • When cooled mix in the beaten egg& sugar.
  • Mix the flour, baking soda& salt together.
  • Add dry ingredients to the batter.
  • Add nuts and vanilla, blend well.
  • Pour into the prepared loaf pan.
  • Bake in 350F oven for 50-60 minutes or until a wooden skewer comes out clean when inserted in the center.

This is a lovely, large, moist loaf. It has a great flavour in spite of very few ingredients. This is very economical to make as there are no eggs or butter in it.

8 ounces pitted dates (chopped)
8 ounces seedless raisins (large, golden kind)
2 teaspoons baking soda
2 cups boiling water
1 1/2 cups sugar
3 cups flour
1 teaspoon baking powder

Steps:

  • Preheat oven to 160 deg Celsius.
  • Line an 8 inch cake tin with baking paper.
  • Combine chopped dates, raisins and baking soda in a large bowl.
  • Pour in the boiling water, stir. Leave to cool for 10 minutes.
  • Add the sugar and stir to dissolve.
  • Now, fold in the sifted flour and baking powder until just combined. Don't over mix at this point or the loaf will be tough.
  • Bake 160 deg C for approximately 1 1/4 - 1 1/2 hours, or until a toothpick inserted comes out clean.
  • Leave in tin to cool for 10 minutes before turning out onto a cooling rack.

Eating these tarts for many years, favourite house request. I believe the original recipe came from Five Roses Flour Cookbook.

1 egg, well beaten
1/3 cup soft butter
1 cup light brown sugar
2 tablespoons warmed Carnation Evaporated Milk
1 teaspoon vanilla
1/2 cup currants, washed and dried
nuts, only if desired

Steps:

  • Beat egg, sugar, butter well, Add cream and blend.
  • Line tart shells with your favourtie pastry.
  • Sprinkle a few currants into each shell.
  • Fill tart shells with mixture 2/3 full.
  • Bake in a hot oven 400 degrees f.
  • for 8 minutes.
  • Reduce heat and continue to bake 12-25 minutes 325 degrees.
  • Or bake just until crust is golden.
  • Note;;; I usually bake these at 350 degrees for 15- 18 minutes, I always watch as they go quickly at the end.
  • I still like them a bit runny.
