Coconut or extra-virgin olive oil
3 cups gluten-free rolled oats
1/2 cup unsweetened dried cherries
1/2 cup unsweetened dried dates
2 teaspoons ground cinnamon
1 teaspoon coarse salt
1/2 cup smooth natural almond butter (at room temperature)
4 tablespoons ground flaxmeal
1/2 cup unsweetened applesauce
1/2 cup honey
3 tablespoons orange juice
1/4 teaspoon vanilla extract

Steps:

  • Heat oven to 350 degrees. Brush an 8-by-8-inch pan with oil and line with parchment paper.
  • Combine oats, cherries, dates, cinnamon, and salt in a medium bowl. In another bowl, combine almond butter, flaxmeal, applesauce, honey, orange juice, and vanilla and stir to combine. Add wet mix to dry one and stir to combine. Press mixture evenly into pan with your fingers and bake on middle rack until golden brown and firm, 30 minutes. Let cool completely, then remove from pan and cut into 9 squares.

A date filled bar with a chewy oatmeal crust. This is my grandmother's recipe, which my whole family loves.

1 ½ cups rolled oats
1 ½ cups sifted pastry flour
¼ teaspoon salt
¾ teaspoon baking soda
1 cup packed brown sugar
¾ cup butter, softened
¾ pound pitted dates, diced
1 cup water
⅓ cup packed brown sugar
1 teaspoon lemon juice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine oats, pastry flour, salt, 1 cup brown sugar, and baking soda. Mix in the butter until crumbly. Press half of the mixture into the bottom of a 9 inch square baking pan.
  • In a small saucepan over medium heat, combine the dates, water, and 1/3 cup brown sugar. Bring to a boil, and cook until thickened. Stir in lemon juice, and remove from heat. Spread the filling over the base, and pat the remaining crumb mixture on top.
  • Bake for 20 to 25 minutes in preheated oven, or until top is lightly toasted. Cool before cutting into squares.

2 cups all-purpose flour
2 cups old-fashioned oats
1 cup chopped pecans
1/2 cup toasted wheat germ
1/2 cup packed brown sugar
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1 cup butter, melted
1/2 cup honey
2 eggs, beaten
1 teaspoon vanilla extract
1 jar (12 ounces) cherry preserves
1/3 cup dried cherries, chopped
1/2 cup sweetened shredded coconut

Steps:

  • In a large bowl, combine the first nine ingredients. In another bowl, combine the butter, honey, eggs and vanilla. Stir into oat mixture until combined. Set aside 1-1/3 cups for topping., Press remaining oat mixture into a greased 13-in. x 9-in. baking pan. Combine preserves and dried cherries; spread over crust. Sprinkle with coconut and reserved oat mixture; press down lightly., Bake at 350° for 25-30 minutes or until golden brown. Cool on a wire rack. Cut into bars.

1/2 cup water
1/4 cup sugar
1-1/2 cups quick-cooking oats
1 cup all-purpose flour
1 cup packed brown sugar

Steps:

  • Preheat oven to 350°. Place dates, water and sugar in a small saucepan; bring to a boil, stirring constantly. 1 cup old fashioned oats
1/2 cup unsalted butter, softened

  • In large bowl, mix sugar, walnuts, oats, butter and flour.

1/2 teaspoon almonds or 1/2 teaspoon vanilla extract
1/2 cup brown sugar, packed
2 cups rolled oats

Steps:

  • Melt margarine, combine with extract and sugar.
  • Add oats and mix well.
  • Press into 8-inch square baking pan.
  • Bake at 350°F for 15 minutes or until bubbling and golden brown.
  • Cool and cut into 25 squares.

I bought a couple of gluten free flours and wanted to try them in something different. The sorghum, malted barley and mesquite flours are naturally sweet so I only used a small amount of brown sugar in the mix. I used cold Rooibos tea instead of water because cold tea enhances the flavour of the fruit. Rooibos Tea is an herbal tea that has a slight vanilla under taste and has amazing health benefits.

2 cups chopped dates
1 (2 5/8 ounce) bag dried cherries (I used Bare Fruit Organic)
1 tablespoon lemon juice
1 cup cold water (I used cold Rooibos Tea)
1/2 cup dry sweetener (I used Xylitol)
1 3/4 cups oats (the quick cooking kind)
1 cup gluten-free flour, mix
1/4 cup sorghum flour
1/4 cup malted barley flour
1/4 cup mesquite flour
3/4 cup cold Earth Balance margarine
1/4 teaspoon baking soda
1/4 cup brown sugar

Steps:

  • Prepare the filling first.
  • Chop the dates and cherries to ensure there are no pits in the fruit.
  • Add to a medium sauce pan, add the lemon juice, sugar and cold water.
  • Bring to a boil and cook slowly stirring often to ensure it doesn't burn or stick. This will thicken up. Once its cooked set aside to cool.
  • Prepare your oatmeal crust.
  • Mix all the ingredients in a large bowl and work the cold margarine into the oat/flour mixture until you have a crumbly mixture the size of large peas.
  • Put 1/2 the oat/flour mixture into an 8x8 inch pan and press into the bottom.
  • Put the cooled date/cherry mixture on top of the crust and using an offset spatula spread it evenly on the crust.
  • Pour the rest of the oat/flour crust on top of the date/cherry mixture and pat down lightly.
  • Bake at 350'F for 35-40 minutes or until the top is golden.
  • When cool cut in squares.
  • Bon Appetit!
