Steps:
- Preheat oven to 180c or 350f.
- Grease and line an 18cm x 18cm or 7inch x 7inch (base measurement) baking tin and set aside.
- Combine butter, sugar and golden syrup in a medium heatproof bowl (place a piece of kitchen towel/paper on top but not touching the contents - this will save your microwave from splatters).
- Microwave on high for 1 - 1 1/2 mins until butter is melted, remove from microwave and mix to melt sugar and combine.
- Meanwhile place flour, dates and lemon in a medium bowl, mix to combine.
- Add melted butter mixture to dates and flour, and mix well to combine.
- Press mixture into prepared tin, smoothing the top - I use a mini silicone spatula for this.
- Bake for 13 - 15 mins, until top is golden brown.
- Allow to cool in tin for 30 mins before cutting into 12 squares.

DATE NUT SPICE BREAD
Steps:
- Preheat the oven to 350 degrees F. Butter the bottom of an 8 1/2 by 4 1/2 by 2 1/2-inch loaf pan. Line the bottom with parchment paper, then butter and flour the pan.
- Combine the dates and orange liqueur in a small bowl and set aside for 30 minutes. Stir occasionally.
- In the bowl of an electric mixer fitted with the paddle attachment, beat the butter and brown sugar together on medium speed for 1 minute. Scrape down the bowl. With the mixer on low, add the egg, vanilla, and orange zest. Sift together the flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt. With the mixer still on low, add the flour mixture alternately with the orange juice to the creamed mixture, beating only until combined. By hand, stir in the dates with their liquid, and the pecans.
- Pour the batter into the prepared loaf pan and smooth the top. Bake for 50 to 60 minutes, until a toothpick comes out clean. Cool in the pan for 10 minutes, then turn out onto a wire rack and cool completely.
- Meanwhile, in the bowl of an electric mixer fitted with the paddle attachment, cream the cream cheese, sugar, and orange zest on medium speed until just combined.
- Slice the bread and serve with the orange cream cheese on the side for spreading.

Steps:
- Pulse the almonds in a food processor until most are finely chopped. Remove and transfer to a bowl. Whizz the figs until they form a sticky paste, then add this to the almonds with the remaining ingredients. Mix well, then shape into a sausage and allow to dry, uncovered, in the fridge or a cool, dry place for a week.
- Wrap and tie in baking parchment if giving away, then slice and serve alongside your favourite cheeses. Will keep in a cool place for up to 2 months.

- Line a 9×5 loaf pan with parchment paper, or use a silicone pan and place on baking sheet, set aside. You may also use an 8×8 square pan, your base will just be thinner.
- In a food processor add drained/pitted dates and nuts. Process until dates and nuts have broken down, and only small pieces of nuts can be seen. Mixture should be sticky.
- Transfer mixture to prepared pan, pressing evenly into all corners and press down flat. I like this roller.
- Using stovetop and small saucepan over low heat, melt chocolate, stirring frequently until smooth. Pour over bars and spread evenly.

- Process all ingredients in the food processor until they form a sticky, chunky texture. This could take 2 -4 minutes depending on your food processor and dates. Process until muxture reaches the consistency you're looking for. I like my slice to still have a little texture so I don't process until overly smooth. To test whether your slice is ready -pinch a little of the mixture together. It should stick together well. Add melted coconut oil if mixture is too dry.
- Transfer your mixture to shallow bowl or baking dish lined with baking paper and press firmly into the dish.
