GRILLED CHICKEN THIGHS WITH BLACKBERRY BBQ SAUCE



Grilled Chicken Thighs with Blackberry BBQ Sauce image

1 tablespoon ground coriander
1 tablespoon smoked paprika
1 tablespoon kosher salt
8 skin-on, bone-in chicken thighs
Olive oil
1/2 recipe Blackberry BBQ Sauce
3 pints fresh blackberries
12 ounces dark beer
1 cup balsamic vinegar
1 cup red wine vinegar
1/2 cup packed light brown sugar
1 onion, sliced
1 clove garlic, minced
1 habanero pepper, slit
1 tablespoon ground chipotle chile powder
1 tablespoon finely ground coffee
1 tablespoon ground coriander
1 tablespoon ground cumin

Steps:

  • In a small bowl, combine the coriander, paprika and salt. Pat the chicken thighs dry with paper towels, season on both sides with the spice mixture and place in a gallon-size zip-top bag. Refrigerate for several hours but preferably overnight.
  • Prepare and preheat your lump charcoal grill to create two heat zones: high and low.
  • Brush the chicken thighs with olive oil and place them skin-side down on the hot side of the grill. Cover and cook for 2 minutes. Uncover and move the chicken to the low side of the grill, skin-side up. Cover and cook until the thighs reach an internal temperature of 160 degrees F, 15 to 20 minutes. Pour half the Blackberry BBQ Sauce into a medium bowl and use it to baste the chicken occasionally during the final 10 minutes of cooking.
  • Remove the chicken from the grill. Serve with the remaining sauce on the side.
  • In a large saucepan, combine the blackberries, beer, vinegars, sugar, onion, garlic, habanero, chipotle powder, coffee, coriander and cumin. Cook over medium-low heat, stirring occasionally, for 2 hours. Carefully puree the sauce in a blender or food processor, then strain.

2 tsp cooking oil
1 medium onion, diced
12 oz ale or lager with a solid malty backbone*
1/4 cup brown sugar
3/4 cup organic ketchup (or tomato sauce)
1 tbsp apple cider vinegar
4 tbsp honey
1 tsp cumin
2 tsp garlic powder
1 tsp black pepper
coarse salt, to taste***

Steps:

  • Saute the diced onion in the 2 tsp of cooking oil in a saucepan (preferably a deeper one) over medium heat (about 4 mins).
  • Once the onion bits soften deglaze with a splash or two of the beer, once the vigorous foaming subsides, add the rest of the beer. Simmer until reduced by half.
  • Lower the heat to medium-low. Add the brown sugar, ketchup (or tomato sauce), apple cider vinegar, honey, cumin, garlic powder and black pepper and stir to mix well together. Simmer to reduce. Once the mixture has thickened to your liking, remove from the stove.
  • Use an immersion blender to blend the beer barbecue sauce to a smooth consistency or transfer to a food processor (be careful - either allow it to cool down or if still hot, work in batches).
  • Taste the finished sauce and season with salt as needed. Transfer to a container. The sauce will keep well refrigerated for up to 2 weeks.

1 tablespoon minced garlic
2 tablespoons small-diced onion
One 6-ounce can tomato paste
4 teaspoons brown sugar
1 tablespoon yellow mustard
1 teaspoon Worcestershire sauce
1/4 cup apple cider vinegar
One 28-ounce can plum tomatoes
1/2 cup beer, such as Heist Brewery Hive Five

Steps:

  • Heat a medium to large saucepot over medium heat. Add the olive oil, garlic and onions and cook until fragrant, about 2 minutes. Add the tomato paste, brown sugar, yellow mustard and Worcestershire; stir together. Stir in the apple cider vinegar and simmer for 1 minute to combine the flavors. Add the canned tomatoes and beer and blend with an immersion blender. Simmer on medium-low heat, stirring occasionally, until the sauce thickens and the flavors have blended, about 45 minutes.

2 tablespoons light brown sugar
2 tablespoons smoked paprika
1 tablespoon celery salt
1 tablespoon garlic powder
1 tablespoon onion powder
1/4 teaspoon ground allspice
Kosher salt and freshly ground black pepper
Two 1 1/2-pound racks baby back ribs
One 12-ounce bottle bock-style or dark beer
1 small shallot, minced
1/2 cup ketchup
1/4 cup molasses
2 tablespoons whole-grain mustard
1 tablespoon chipotle in adobo sauce plus 1 tablespoon chopped chipotle
1 tablespoon sherry vinegar
Vegetable oil, for the grill grates

Steps:

  • Combine the light brown sugar, smoked paprika, celery salt, garlic powder, onion powder, allspice, 2 tablespoons salt and a generous amount of pepper in a small bowl. Rub the mixture on both sides of the rib racks.
  • Wrap each rib rack in 3 pieces of aluminum foil and refrigerate for 6 hours and up to overnight.
  • Preheat the oven to 300 degrees F. Place the ribs side-by-side on a baking sheet. Unwrap the foil slightly, pour 2 tablespoons beer over each rib rack and then seal the foil tightly. Bake until the ribs are tender, and the meat can easily be pierced and pulled away with a fork, about 2 hours 30 minutes. Let cool, uncovered, until warm, about 20 minutes. Alternatively, cover and refrigerate for up to 1 day.
  • Put the shallots and remaining beer in a small saucepan and bring to a boil over high heat. Boil until the beer reduces to 1/4 cup, about 10 minutes. Whisk in the ketchup, molasses, whole-grain mustard, chipotle in adobo sauce, chopped chipotle and sherry vinegar. Reduce the heat to medium-low and let simmer, stirring occasionally, until the sauce thickens slightly and reduces to about 1 1/4 cups, 8 to 10 minutes.
  • Prepare a grill or large grill pan for medium-high heat. Clean and oil the grill grates.
  • Brush the top of each rack of ribs with 1/4 cup of the barbecue sauce. Working in batches as needed, grill, sauce-side down, until browned and slightly charred, about 4 minutes. Cut the ribs between the bones, slather with the remaining 1 cup of sauce and serve.
