EASY DANISH
I got this recipe from a friend. While I have seen similar recipes, I haven't seen any just like it. So simple, easy, and people will think you're a professional pastry chef!

Steps:
- 1st Part:.
- Cut 1/2 cup butter into 1 cup flour.
- Sprinkle water over mixture and mix until it's moist enough to round into a ball.
- Divide in half.
- On ungreased baking sheet, pat each half into a strip that is roughly 12x3 inches, with strips about 3" apart.
- 2nd Part:.
- Heat 1/2 cup butter and 1 cup water to a rolling boil.
- Turn heat to lowest setting and quickly stir in 1 t. almond extract and 1 cup flour.
- Stir vigorously over low heat until mixture forms a ball, about 1 minute.
- Remove from heat.
- Beat in eggs, all at once, until smooth and glossy.
- Divide in half.
- Spread evenly over strips.
- Bake 60 minutes or until topping is crisp and brown.
- Frost with Sugar Glaze (see below) and sprinkle with nuts.
- Sugar Glaze:.
- Mix 3 cups powdered sugar, 4 T. butter, 1.5 t. vanilla, 1.5 t. almond extract, and 2-4 T. warm water until smooth and of spreading consistency.
- If you are topping with walnuts instead of almonds, use less almond extract or none at all and just use vanilla extract.
- Recipe can be made into individual puffs by patting dough into 3" circles, using a rounded tsp for each puff. Spread rounded tablespoon of batter (2nd part) over each circle, extending it just beyond the edge of the circle. Bake 30 minutes and frost.
DANISH LAYER CAKE (DANSK LAGEKAGE)
My aunt is Danish and moved here when she was child. So when she married my uncle, they raised their kids with both American and Danish experiences. So part of the Danish side of this is having this INCREDIBLE Danish layer cake for their birthdays. So this really has become a tradition in my family and I finally found a recipe that I LOVE. I actually make the cake with 3 layers though the recipe says you can make up to 6 or 7. We always put the birthday person's favorite candy on top so you can choose whatever you'd like. I always pick either Kit Kats or Gummy Worms since those are my favorite. I also tend to put fresh berries and chocolate chips on top. It's absolutely delicious! Enjoy!! Steps:
- Cut 5 or 6 pieces of wax paper and draw an 8" circle in each. Have available a large cookie sheet or jelly roll pan that will accommodate two wax paper sheets.
- In mixing bowl, cream softened butter with sugar and beat until fluffy. Blend in eggs and vanilla.
- Mix in flour and baking powder and beat until well blended. (Do not over beat.).
- Divide cake batter among the 5 or 6 wax paper sheets. Spread batter into shape of circle and place on cookie sheet.
- Bake at 350 degrees about 9 or 10 minutes until golden around edge and cake springs back when touched.
- Remove from cookie sheet and cool. Repeat for remaining batter.
- Take 1st round of pastry and place on cake platter.
- Spread some raspberry jam on top and then some vanilla pudding.
- Repeat same with 2nd, 3rd, 4th, and 5th layer.
- Place 6th layer of pastry on top and frost top layer with a layer of icing (omit one layer if making only 5 layer cake).
- Beat whipping cream until stiff and frost sides of cake with whipping cream.
- You can decorate the cake as to what the occasion calls for - Danish flags, candles for a birthday, cake sprinkles, etc.
- Cake can be assembled ahead of time (without the whipping cream) and refrigerated. The flavors blend and it tastes somewhat like trifle. Frost sides of cake with whipping cream just before serving.
DANISH ROAST BEEF
A recipe I found on Christian's Danish Recipes, which has 600 Danish recipes. This sounds very similar to what I do with roast beef. If you don't have black peppercorns, can sub ground black pepper. Posting for ZWT6. I know different cuts of meat are called different things in different countries

Steps:
- Rub roast with garlic; press pepper and salt into surface. Place meat on center of buttered foil. Wrap roast. Place on rack in roasting pan. Roast in preheated 375ºF over for 45 minutes for rare or 1 hour for medium rare. Remove foil. Pour meat drippings into a small saucepan. Replace roast on rack. Roast for 10 to 15 minutes at 400ºF (until browned). Boil drippings until reduced to a shiny glaze. Pour glaze over roast before serving. Let roast stand for 20 minutes for easier slicing.
- NOTES : Cook time leaves roast extremely rare. We prefer ours medium - medium well so I cook ours a lot longer. I also then make a slurry of flour, water, salt and pepper and add to the drippings to make a gravy.

- Mix the eggs, milk and vanilla and set aside:.
- Sift Baking powder, sugar and flour together and add to egg mixture.
- Allow to stand for 10 minutes.
- Dip cut cheese danish into the egg batter.
- Bring shortening to 375 degrees and place dipped bread in fryer until golden brown on one side and turn over to brown other side.
- Roll in cinnamon/sugar and serve immediately.

- Stir the yeast and sugar into the lukewarm water and let sit for 10 minutes until the yeast is frothy.
- Combine all the dry ingredients in the bowl of a stand mixer. Add the yeast mixture, beer and buttermilk. Stir to combine.
- Fit the stand mixer with a dough hook and knead on the bread setting ("2") for 10 minutes. The dough will be very sticky, loose and not remotely malleable (ie, incapable of being shaped).
- Scoop the dough into a very large non-metallic bowl with plenty of head space (the dough will bubble up). Cover loosely with plastic wrap and let it rest in a warm place (room temperature) for 24-48 hours, depending on how sour you want the bread to be (be sure to ferment it for at least 24 hours to ensure enough of the liquid is absorbed). If you're only letting it ferment for 24 hours we recommend first soaking the whole rye berries overnight before using them (drain thoroughly).
