Number Of Ingredients 4

1 pound blue cheese (such as Stilton or Gorgonzola), crumbled
1 stick (1/2 cup) unsalted butter, softened
1/3 to 1/2 cup Tawny Port
1 1/2 cups chopped walnuts

Steps:

  • In a food processor blend together the cheese, the butter, and the Port until the mixture is smooth and in a bowl combine well the cheese mixture and the walnuts. Transfer the spread to crocks or ramekins. The spread keeps, covered and chilled, for 3 weeks. Serve the spread with crackers.

Danish Blue Cheese and Port sound like a great combo. This would be great for a party and will keep in the fridge for up to two weeks. Recipe is from Barbara Kafka's "Party Food".

8 ounces danish blue cheese, rindless and at room temperature
6 tablespoons unsalted butter, room temperature
1/4 cup port wine
1/4 teaspoon fresh ground white pepper
1/8 teaspoon cayenne pepper
3/4 cup walnuts, coarsely chopped

Steps:

  • Combine all ingredients except walnuts in food processor. Process, stopping occasionally to scrape down the sides, until the mixture is smooth and well blended.
  • Refrigerate, covered, up to 2 weeks.
  • Remove from the refrigerator about 1 hour before serving and stir in the walnuts when softened.
  • (You may add the nuts right away if you're serving the spread within a few hours).
  • Serve with bread, crackers or in pastry tartlets.

this was a $200.00 winner in the Create with Cheese category in Family Circle. The sweetness of the berries balances well with the saltiness of the blue cheese. A wonderful and deep flavor experience. The recipe calls for dried blueberries, but I had trouble finding them, so I used frozen berries but thawed them before using. Be careful when adding berries--stir gently or you will end up with blue appetizer. Cooking time is refrigeration time.

1/2 cup dried blueberries or 1/2 cup frozen berries, thawed
1 cup boiling water, if you used the dried berries
1 (8 ounce) package cream cheese, softened
6 ounces blue cheese, coarsely crumbled
2 green onions, chopped
1 garlic clove, minced
1/2 cup pecans, coarsely chopped
assorted cracker

Steps:

  • If using dried berries, place in a bowl and pour boiling water over them.
  • Let them sit for once minute, drain and set aside.
  • If using frozen berries, thaw out and drain off moisture.
  • In a large mixing bowl, beat cream cheese and blue cheese until nearly smooth.
  • Stir in berries, garlic and green onions, until just combined.
  • Transfer to a serving bowl, cover and refrigerate for up to 4 hours.
  • To serve, sprinkle with pecans and serve with crackers.

4 ounces cream cheese until smooth
4 ounces creamy blue cheese, such as Roquefort
Kosher salt and freshly ground pepper

Steps:

  • In a regular or mini food processor, pulse cream cheese until smooth. Add blue cheese and process until fully combined. If needed, pulse in water, 1 teaspoon at a time, to reach a spreadable consistency. Season with salt and pepper.

16 ounces blue cheese (Danablu if available)
16 ounces cream cheese (low fat or regular)
6 tablespoons mayonnaise
1 tablespoon Worcestershire sauce
4 garlic cloves, grated
1 tablespoon salt (or less)
2 (4 ounce) jars pimientos
1 cup walnuts, finely chopped
2 tablespoons chives, finely chopped

Steps:

  • Using the whip attachment on a stand mixer, beat together the cheeses, mayonnaise and Worcestershire sauce until light and creamy.
  • Add garlic, salt, pimentos, walnuts and chives. Fold together until well blended.
  • Chill for a few hours before serving.
  • (Cooking time is chilling time.).

3 shallots, finely chopped
2 teaspoons butter
2 cups (8 ounces) crumbled blue cheese
2 packages (8 ounces each) cream cheese, softened
1/2 cup sour cream
2 tablespoons Cognac or brandy
1/4 teaspoon salt
1/4 teaspoon white pepper
1/2 cup chopped walnuts, toasted
Assorted crackers

Steps:

  • In a small skillet, saute shallots in butter until tender. Remove from the heat; cool. , Meanwhile, in a large bowl, combine the cheeses, sour cream, Cognac, salt and pepper. Add shallots and mix well. Line a 3-cup bowl with plastic wrap. Spread cheese mixture into prepared bowl. Cover and refrigerate for at least 1 hour., Unmold onto a serving plate; garnish with walnuts. Serve with crackers.

1 teaspoon fast rising yeast or 2 teaspoons active dry yeast

Steps:

  • Place all ingredients in bread machine pan, in order given Can be made with the regular and rapid bake cycles.
  • No need to use an expensive port here, just one with good flavour.
  • The sharper the blue cheese, the stronger the flavour in the bread.
  • We like the Danish blue best. As with all cheese recipes, loaf appearance may vary but the flavour is worth it. This moderately textured loaf makes great croutons and wonderful toast points for parties - delicious served warm with your favourite steak.

  • Trim the tenderloin of the silverskin and any excess fat. Cut the tenderloin into eight 2-inch-thick medallions. Flip each medallion onto a cut side and press down with the palm of your hand to flatten slightly. Season with salt and black pepper.
  • Heat the olive oil and 1 Tbsp butter in a large sauté pan over high heat. When the butter is melted and foaming, add half of the meat and sear until nicely browned, 2 to 3 min. Flip and cook the other side until the meat is well browned and slightly firm to the touch, about another 2 min. Transfer to a plate and repeat with the remaining pork.
  • Melt the remaining tablespoon butter in the pan. Add the shallots and a pinch of salt and sauté for about 30 seconds, using a wooden spoon to scrape up any browned bits from the bottom of the pan.
  • Deglaze the pan with the white wine. Once the wine has almost completely evaporated add the cream and blue cheese cubes. Simmer over medium heat for about 3 minutes until sauce is smooth and thick.
