Do you want more fiber in your diet? Are you sick of feeding the kids those boxed, dry, bland granola bars? These energy bars are the ultimate and absolutely delicious.

3 ½ cups rolled oats
¾ cup sweetened dried cranberries (such as Craisins®)
⅔ cup sunflower seeds
½ cup white chocolate chips
½ cup toasted sesame seeds
½ cup oat bran
3 tablespoons flax seeds
1 tablespoon ground cinnamon
1 teaspoon salt
1 ½ cups creamy natural peanut butter
1 cup honey
5 tablespoons olive oil

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine oats, sweetened dried cranberries, sunflower seeds, white chocolate chips, sesame seeds, oat bran, flax seeds, cinnamon, and salt in a large bowl. Stir in peanut butter, honey, and oil. Press mixture firmly into a 9x13-inch baking pan.
  • Bake in the preheated oven until golden, 12 to 15 minutes. Remove from the oven and let cool for 5 minutes. Transfer to the refrigerator and chill for 10 minutes to set.
  • Slice chilled bars into 2x3-inch squares. Wrap in plastic wrap and store in the refrigerator.

The sweetness of dried apricots pairs perfectly with the richness of sesame and hemp seeds in this nut-free, no-bake bar that makes a great breakfast or snack. With 8 grams of dietary fiber and 10 grams of protein per serving, it will satisfy a craving any time of day.

1 1/4 cups lightly packed dried Turkish apricot halves (about 12 ounces)
1 cup wheat germ
1/2 cup tahini
1/4 cup raw shelled hemp seeds
1/4 cup black or white sesame seeds, or a mix

Steps:

  • Line an 8-inch square baking dish with aluminum foil leaving a 6-inch overhang on 2 opposite sides.
  • Pulse the apricots in the bowl of a food processor until fine and crumbly. Add the wheat germ and hemp seeds and pulse until the mixture sticks together. Add the tahini and pulse until combined. Sprinkle in the sesame seeds and pulse just until evenly dispersed.
  • Transfer the mixture to the prepared baking pan. Using the foil overhang flaps, press the mixture firmly and evenly into the baking pan. Chill until set, about 2 hours. Lift the mixture out of the pan by the aluminum foil and invert onto a cutting board. Carefully peel off the aluminum foil and slice in half vertically and then into fourths horizontally making eight equal pieces. Wrap the bars individually in parchment paper and store for up to 2 weeks in the refrigerator.

2-1/2 cups crisp rice cereal
2 cups old-fashioned oats
1/4 cup toasted wheat germ
1 cup corn syrup
1 cup peanut butter
1/2 cup packed brown sugar
1 teaspoon vanilla extract

Steps:

  • In a large bowl, combine the cereal, oats and wheat germ. In a small saucepan, combine the corn syrup, peanut butter and brown sugar. Cook over medium heat until peanut butter is melted, stirring occasionally. Remove from the heat. Stir in vanilla. Pour over cereal mixture; mix well., Transfer to a greased 9-in. square pan. Gently press cereal mixture evenly into pan. Cool completely. Cut into bars.

  • In a food processor or blender, place DATES and COCOA POWDER together; pulse or blend until it forms into a nearly solid ball in the food processor.
  • Add OATS, ALMONDS, CASHEWS, PECANS, COCONUT, OAT BRAN, and SEA SALT to date mixture in the food processor.Pulse the food processor in short spurts just until everything is evenly distributed. CAUTION: Do not overmix, as your energy bars may turn out gooey and hard to manage.
  • Transfer mixture to an 8" by 8" pan. Lay a sheet of waxed paper over the mixture and press it firmly into to compress evenly across the surface. (I like to use a flat meat tenderizing tool).
