DAD'S POTATO PANCAKES
My Dad's Potato Pancakes were one of my favorite special breakfasts growing up! With less then 5 ingredients, they are simple to make and taste delicious!

Steps:
- Heat oil in a saute pan over medium-high heat.
- Put your mashed potatoes and flour into a bowl. Smash together until well blended. {I find that using the back of a spoon helps mash the flour into the potatoes really well.} You want to able to taste the flour in your potatoes and the mixture should become slightly dough like.
- Put a palm size amount of potatoes into your hand and roll into a ball. Then flatten the ball into a patty. Carefully place the potato patty into the hot oil.
- Repeat with remaining potatoes.
- Cook pancakes until golden brown, 3-5 minutes on each side.
- Remove pancakes to towels to drain. While pancakes are still hot, sprinkle with seasoned salt. Serve warm.

This is a delicious Recipe which my late father left to me. Everyone raves about this recipe, and it is sooooo...easy. Wonderful side dish with pork chops.

- In a food processor grate potatoes and onion. In a large bowl combine potatoes, onions, eggs, pancake mix, salt and pepper.
- Heat oil in a large skillet over medium heat. Spoon potatoes into skillet and cook as you would pancakes, for 3 to 4 minutes on each side.

EASY POTATO PANCAKES
My family loves these as a side dish or for Sunday brunch. Delicious topped with sour cream and green onions or applesauce.

- In a large bowl, stir together potatoes, eggs, onion, flour, salt and pepper.
- In a large skillet, heat oil over medium high heat. Drop large spoonfuls of the potato batter into the skillet and flatten cakes slightly with a spatula. Cook for about 4 minutes on each side, until golden brown. Serve immediately.

POTATO PANCAKES

- Combine the grated onion and potato in a kitchen towel and wring out as much liquid as you can. Pour the mixture into a mixing bowl. Dust with the flour and mix to disperse it. Add the egg, lemon zest, chopped dill, salt and pepper and mix until well combined.
- Heat the olive oil and butter in a large nonstick saute pan over medium-high heat. Once the bubbles from the butter subside, spoon 3 heaping tablespoons of the potato mixture into the pan. Repeat, making 4 to 8 pancakes. Cook the pancakes about 4 minutes on each side, assuring that both sides are well browned and the potato is cooked through. Reduce the heat of the pan if the potato cakes are browning too quickly in order to make sure the inside is cooked completely.
- Remove the cakes to a paper-towel-lined plate as they finish and season with salt while hot.
- (You can cover them with foil and keep in a 200 degrees F-oven to stay warm until ready to serve.)
- To serve, transfer the potato pancakes to a platter and dollop each one with the creme fraiche. Top with a sprig of dill.
DAD'S POTATO PANCAKES
When my dad made these people would come out of the woodwork to eat them! They smell so good cooking and we used to love them as kids. They also reheat well in the microwave.

- Grate together potatoes and onion (or just do it in the food prossessor) Add next 3 ingredients and mix well.
- Add flour to thicken and mix well.
- Cover bowl with a plate (not air tight) and let stand 30 min.
- Fry in little oil by tablespoons or a little bigger till lightly brown on one side,turn and fry again til golden.
