My dad was born and raised in Kentucky and this is my favorite recipe by him. When I was little I would pick out all the dumplings and only eat them. :) I've since learned to love the chicken too!

1 cut-up roasting chicken (About a 4 lb package)
1/2 cup butter
4 garlic cloves, minced
2 bay leaves
1 yellow onion, quartered
3 carrots, cut in thirds
2 stalks celery, cut in thirds
2 large red potatoes, quartered
1 tablespoon parsley patch seasoning (Includes garlic, oregano, rosemary, basil, cayenne, onion, parsley, paprika and celery salt)
1 teaspoon red pepper flakes
2 teaspoons fresh ground black pepper
6 cups flour
1 tablespoon baking powder
2 tablespoons salt
3 eggs
1 (15 ounce) can chicken broth

Steps:

  • To make the Chicken and Stock:.
  • Place the chicken pieces in a LARGE stockpot and cover with water. (This will be the stock to cook the dumplings in so make sure you have enough liquid.).
  • Add remaining chicken ingredients (butter through black pepper) and bring to a boil.
  • Reduce heat and simmer until chicken is tender and falling off the bone, about 45 minutes-1 hour.
  • Place a colander over a large bowl and strain chicken ingredients, keeping stock and chicken. Discard the veggies.
  • Cool chicken and debone.
  • To make the Dumplings:.
  • Mix flour, baking powder and salt in a large bowl.
  • Beat the eggs with 1 cup chicken broth and add to dry dumpling ingredients. (You may need to add more broth to the dough).
  • Knead dough on a floured board and roll to about 1/4-inch thickness.
  • Cut dough into squares with a pizza cutter. (I like mine about 2" x 2").
  • TO FINISH: Pour reserved stock back into the stockpot.
  • Add deboned chicken to stock and bring to a boil.
  • Once the stock is boiling, gradually add the dumplings. (You may need to add canned chicken broth to make sure there is enough liquid for the dumplings to cook).
  • Cook dumplings for 15-20 minutes and serve.

1 (32 ounce) container chicken broth
4 skinless, boneless chicken breast halves, cubed, or more as needed
1 onion, chopped
½ (16 ounce) package baby carrots
2 stalks celery, chopped
1 bay leaf
salt and ground black pepper to taste
2 ¼ cups baking mix (such as Bisquick ®)
⅔ cup milk

Steps:

  • Combine chicken broth, chicken breast cubes, onion, carrots, celery, bay leaf, salt, and pepper in a large pot; bring to a boil. Reduce heat, cover pot, and simmer until chicken is no longer pink in the center and the vegetables are tender, 20 to 25 minutes.
  • Mix baking mix and milk in a bowl until dough is sticky; drop golf ball-sized pieces of dough into the soup. Cover pot and cook until dumplings are cooked through, about 10 minutes.

1 (2 1/2-3 lb) whole chickens
4 cups water
2 cups chicken broth
1 carrot, roughly chopped
1 medium onion, cut into quarters
1 stalk celery, roughly chopped
1/2 teaspoon salt
1 cup milk
1/4 teaspoon fresh ground pepper
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
3 tablespoons shortening
3/4 cup buttermilk

Steps:

  • Place the chicken in a Dutch oven, and add the water, broth, carrot, onion, celery and salt.
  • Bring to a boil, cover and lower heat. Simmer for 60 to 70 minutes, or until tender and chicken is done.
  • Remove chicken and allow it to cool enough to handle.
  • Remove the carrot, onion and celery pieces from the broth and discard.
  • Reserve the broth.
  • Bone the chicken, discarding all skin and bones, and cut meat into bite-size pieces. Set aside.
  • THE DUMPLINGS:
  • Combine the flour, baking soda and 1/2 teaspoon salt; cut in the shortening with a pastry blender or two knives until mixture is consistency of coarse meal.
  • Add the buttermilk, stirring just until dry ingredients are moistened.
  • Turn dough out onto a floured surface and knead 4 or 5 times -- no more.
  • FOR DROP DUMPLINGS:.
  • Pat the dough down to a 1/4-inch thickness, and pinch off 1-1/2-inch pieces.
  • FOR ROLLED DUMPLINGS:
  • Roll the dough to a 1/4-inch thickness, and cut into 3" x 1" strips.
  • Bring the chicken broth to a boil, and stir in the milk and pepper.
  • Correct seasonings, if desired.
  • Drop dumplings, one or two at a time, into the boiling broth and reduce heat to medium-low.
  • Stir from time to time to make sure dumplings do not stick together.
  • Cook dumplings 8 to 10 minutes. Add the boned chicken to the mixture and simmer until heated through.
  • Remove from heat.
  • Makes 4 to 6 servings.
  • Notes: Dumpling dough is very similar to biscuit dough and, like biscuit dough, the less it is handled, the lighter and more tender the result.

3/4 cup all-purpose flour, divided
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
1 broiler/fryer chicken (about 3 pounds), cut up
2 tablespoons canola oil
1 large onion, chopped
2 medium carrots, chopped
2 celery ribs, chopped
3 garlic cloves, minced
6 cups chicken stock
1/2 cup white wine or apple cider
2 teaspoons sugar
2 bay leaves
5 whole peppercorns
DUMPLINGS:
1-1/3 cups all-purpose flour
2 teaspoons baking powder
3/4 teaspoon salt
2/3 cup 2% milk
1 tablespoon butter, melted
SOUP:
1/2 cup heavy whipping cream
2 teaspoons minced fresh parsley
2 teaspoons minced fresh thyme
Additional salt and pepper to taste

Steps:

  • In a shallow bowl, mix 1/2 cup flour, salt and pepper. Add chicken, 1 piece at a time, and toss to coat; shake off excess. In a 6-qt. stockpot, heat oil over medium-high heat. Brown chicken in batches on all sides; remove from pan., Add onion, carrots and celery to same pan; cook and stir 6-8 minutes or until onion is tender. Add garlic; cook and stir 1 minute longer. Stir in 1/4 cup flour until blended. Gradually add stock, stirring constantly. Stir in wine, sugar, bay leaves and peppercorns. Return chicken to pan; bring to a boil. Reduce heat; simmer, covered, 20-25 minutes or until chicken juices run clear., For dumplings, in a bowl, whisk flour, baking powder and salt. In another bowl, whisk milk and melted butter until blended. Add to flour mixture; stir just until moistened (do not overmix). Drop by rounded tablespoonfuls onto a parchment-lined baking sheet; set aside., Remove chicken from stockpot; cool slightly. Discard bay leaves and skim fat from soup. Remove skin and bones from chicken and discard. Using 2 forks, coarsely shred meat into 1- to 1-1/2-in. pieces; return to soup. 7 pounds cut up chicken pieces
4 cups chicken stock
2 onions, chopped
3 stalks celery, chopped
3 teaspoons salt
1 egg
¼ cup milk
1 ½ cups all-purpose flour, divided
1 ½ teaspoons baking powder
2 tablespoons unsalted butter
2 tablespoons chopped fresh parsley
1 cup water
½ teaspoon ground black pepper

Steps:

  • In a large pot place chicken pieces and add the chicken stock, onion, celery and 2 teaspoons of the salt. Put heat on medium low and simmer, partially covered, 15 to 20 minutes or until chicken is tender.
  • To Prepare Dumplings: In a large mixing bowl beat together the egg and milk. Add 1 cup flour, remaining salt and baking powder and mix all together. Cut the butter into the flour mixture until the mixture is crumbly. Add 1 tablespoon of the parsley and mix. In 6 large spoonfuls, drop dumpling mixture onto the top of the simmering chicken. Cover the pot and let all simmer for 10 minutes more.
  • To Make Gravy: Remove chicken and dumplings to a large serving bowl. Cover and set aside, keeping warm. Strain the stock left in the pot, pressing out any 'veggie liquid'. Return stock to pot. Combine water with remaining flour, then stir into the strained stock. Bring all to a boil, stirring constantly, to thicken. Return chicken and dumplings to pot, combing all gently. Serve with remaining parsley.

I got this recipe off of Food Network. It is Tyler Florence's recipe. This is definitely the best chicken and dumplings I have ever had. I have tried other recipes of his and so far they are all delicious. You won't be disappointed in these. It really is easy to make. It only takes a while because of the chicken baking first and then making the chicken stock next.

4 ounces unsalted butter
1 lemon, halved and juiced, reserve the lemon halves
1/4 cup chopped fresh rosemary
1/4 cup chopped parsley
1/4 cup chopped thyme
1 onion, cut in half
4 garlic cloves, halved
fresh whole herbs (garlic thyme and parsley sprigs)
2 tablespoons olive oil
2 carrots, cut in large chunks
2 stalks celery, cut into large chunks
1 onion, cut in halves
1 head garlic, cut in half
reserved chicken bone
2 quarts cold water
2 bay leaves
4 sprigs fresh thyme
4 sprigs fresh parsley
2 tablespoons butter
1 tablespoon oil
1/2 cup celery, diced
1/2 cup carrot, diced
3 garlic cloves, minced
2 bay leaves
6 tablespoons flour
6 cups of the chicken stock
1/4 cup heavy cream
salt & pepper, for flavor
2 cups flour
1 tablespoon baking powder
1 teaspoon salt
2 eggs
3/4-1 cup buttermilk

Steps:

  • For the Roasted chicken:.
  • Preheat oven to 375°F.
  • Remove neck and giblets from cavity of chicken and discard them.
  • Rinse the chicken and cavity with cold water inside and out.
  • Pat dry with paper towels.
  • Season body and cavity of chicken generously with salt and pepper.
  • In small bowl mash together the lemon juice, chopped herbs, and butter.
  • Rub the herbed butter all over the chicken as well as under the skin.
  • Put the lemon halves, onion, garlic, and whole herbs inside the cavity of chicken.
  • Tie the chicken legs with twine.
  • Roast in oven breast side up for 1 hour or until done and no longer pink.
  • Shred the meat when cool enough to handle.
  • Discard the skin and SAVE the chicken bones for the stock.
  • Chicken Stock:
  • Coat a large stockpot with olive oil.
  • Place over medium heat.
  • Saute the veggies in pot for 3 minutes. Add the reserved chicken bones, herbs, and water.
  • Simmer for 1 hour.
  • Strain the stock to remove the solids and set aside.
  • Dumplings:
  • Sift the dry ingredients in a large bowl.
  • In a small bowl lightly beat the eggs and milk together.
  • Pour the liquid in the dry ingredients and gently fold.
  • Mix just until the dough comes together.
  • It should be thick and cake like.
  • Cover and set aside while making sauce.
  • Supreme Sauce:.
  • Melt butter and heat the oil over medium heat in dutch oven.
  • Add carrots, celery, garlic, and bay leaves.
  • Saute until vegetables are soft (about 5 minutes or so).
  • Stir in the flour to make a roux.
  • Continue to stir and cook for about 2 min to coat the flour and get rid of the starchy taste.
  • Slowly stir in chicken stock, one cup at a time.
  • Stir well after each addition.
  • Let sauce simmer until thick enough to coat back of a spoon, about 15 minute.
  • Stir in heavy cream.
  • Fold reserved shredded chicken in sauce and bring up to a simmer.
  • Add salt and pepper to taste.
  • Dumplings:.
  • Using 2 spoons, drop by heaping tablespoonfuls into hot mixture.
  • The dumplings should cover the top of sauce but not be touching or overcrowded.
  • Let the dumplings poach for 10 to 15 minutes until they are firm and puffy.

3 cups chicken stock
1 (10.75 ounce) can condensed cream of chicken soup
3 medium skinless, boneless chicken breast halves
2 potatoes, cubed
1 yellow onion, diced
1 rib celery, diced
½ cup diced carrot
½ green bell pepper, seeded and chopped
½ (10 ounce) package frozen peas, thawed
1 lemon, thinly sliced
1 sprig fresh thyme
1 ¾ cups heavy cream
salt and ground black pepper to taste
2 tablespoons butter
1 cup chopped morel mushrooms
1 tablespoon chopped fresh parsley, or to taste
1 tablespoon chopped green onion, or to taste

Steps:

  • Heat milk and butter for dumplings in a small saucepan over medium heat until butter melts, 2 to 3 minutes. Remove from heat.
  • Combine flour, baking powder, parsley, and salt in a bowl. Stir in club soda and milk mixture until dough forms a ball, making sure not to overmix. Cover dumpling dough and let stand for 30 minutes.
  • Combine chicken stock and cream of chicken soup in a large saucepan or Dutch oven. Bring to a simmer over medium-high heat. Add chicken, potatoes, onion, celery, carrot, bell pepper, peas, lemon, and thyme. Poach until chicken is no longer pink in the centers and vegetables are tender, about 12 minutes. Transfer chicken to a plate to cool; transfer vegetables to a bowl, leaving stock in the pan. Discard thyme and lemon.
  • Boil remaining stock over medium-high heat until reduced by 1/3, 5 to 7 minutes.
  • Meanwhile, pour cream into a small saucepan and heat over medium-high heat. Cook until reduced by about 1/2, 7 to 10 minutes. Whisk into reduced stock. Season with salt and pepper and set aside.
  • Chop cooled chicken into bite-sized pieces.
  • Melt butter in a small skillet over medium-high heat. Add mushrooms, season with salt and pepper, and saute for 2 to 3 minutes. Stir into stock mixture and add chicken and cooked vegetables.
  • Bring soup to a simmer over medium heat, adding more stock if necessary. Drop dumpling dough by teaspoons into the mixture. Cover and let simmer for 7 to 8 minutes. Serve hot garnished with parsley and green onion.

2 cups all-purpose flour
½ cup shortening
1 egg
½ cup milk
1 whole chicken
2 cubes chicken bouillon
2 cups chopped celery
2 cups chopped carrots
1 small onion, chopped
salt and ground black pepper to taste

Steps:

  • Mix flour and shortening together in a bowl until it resembles cornmeal.
  • Slightly beat egg and milk together in a separate bowl. Add to flour mixture and stir to form a ball of dough. Place onto a floured surface; knead and roll as thin as possible using a floured rolling pin. Let dough stand for 2 hours.
  • Place chicken into a large pot and add water to just cover. Bring to a boil over high heat and continue to boil until chicken is no longer pink in the center and meat falls off of the bone, about 1 hour. An instant-read thermometer inserted into the thickest part of the thigh, near the bone, should read 165 degrees F (74 degrees C).
  • Remove chicken from the pot; strain broth and return to the pot. Add 2 cups water and bouillon. Remove meat from bones and return to broth. Add celery, carrots, and onion. Bring to a boil; continue to boil for 15 minutes.
  • Meanwhile, cut dough into strips, approximately 1-inch wide. Tear strips and drop into boiling broth. Continue to boil for 10 minutes more. Season with salt and pepper and serve.

32 ounces whole chickens
2 (12 ounce) cans chicken broth
8 (10 count) cans refrigerated biscuits
1 cup milk
2 tablespoons butter
1 teaspoon salt

Steps:

  • Open chicken, put it in large pot. heat to boiling. Take out bones when chicken starts to fall off, take out any skin.
  • Add broth, lower heat to medium. Take biscuits and pull apart dropping pieces of them into pot, use all the biscuits.
  • After 5 minute turn to low.
  • Stir so it won't stick to bottom.
  • Add milk, salt pepper, and butter.
  • It is done when most of the dumplings go to the bottom.
  • From start to finish it takes about 30 to 45 minutes.
