SUN-DRIED TOMATO AND BOW TIE PASTA

Sun-Dried Tomato and Bow Tie Pasta image

Anti-meat pasta dish, which makes your tastebuds feel alive with the great combined flavors of sun dried tomatoes, olive oil, red pepper and pesto sauce. My husband and I came up with this recipe about two years ago playing around in the kitchen one day. Ever since then it has been our family's favorite. Garnish each dish with red pepper or Parmesan cheese to your taste. Instead of making your own pesto you can use 1/2 bottle of pre-made pesto from the grocery store.

Categories     World Cuisine Recipes     European     Italian

Yield 8

Number Of Ingredients 10

4 tablespoons dried basil
1 tablespoon minced pine nuts
1 tablespoon olive oil
3 ounces sun-dried tomatoes
⅛ cup olive oil
3 cloves garlic, minced
8 ounces fresh mushrooms, sliced
½ teaspoon salt
1 teaspoon cayenne pepper
1 (16 ounce) package bow tie pasta

Steps:

  • Make pesto: In a small mixing bowl, combine basil, pine nuts, and 1 tablespoon olive oil.
  • In a small bowl, blanch sun dried tomatoes for 30 seconds in boiling water. Drain well, and slice tomatoes into small pieces.

SPICY SUN-DRIED TOMATO AND BROCCOLI PASTA

Spicy Sun-Dried Tomato and Broccoli Pasta image

Simple and flavorful, this pasta is made with toasty broccoli, sun-dried tomatoes, creamy goat cheese and garlicky red pepper-infused olive oil.

Provided by Cookie and Kate

Categories     Pasta

Time 35m

Yield 4

Number Of Ingredients 12

1/2 pound dried whole wheat bow-tie or spiral-shaped pasta
5 tablespoons extra-virgin olive oil, plus more if necessary
1 tablespoon minced garlic (around 5 garlic cloves)
1/4 teaspoon crushed red pepper flakes
1 1/2 pound broccoli (about 4 medium, tightly packed florets), chopped into small, bite-sized pieces
Sea salt or kosher salt
1/2 cup oil-packed sun-dried tomatoes, drained and chopped
2 to 3 ounces goat cheese, crumbled while still cold (around 1/2 cup)
1/3 cup coarsely grated Parmigiano-Reggiano (or Parmesan)
15 pitted kalamata olives, chopped (optional)
1/2 small lemon, juiced
optional add-ins: 2 cups or 1 can cooked chickpeas, drained, and/or a couple handfuls of baby arugula (great with leftovers)

Steps:

  • Bring a large pot of salted water to a boil. Place a colander in the sink with a glass liquid measuring cup or heat-safe bowl next to it. Add the pasta to the boiling water and cook until al dente, as directed on the package instructions. Remove the pot from heat and ladle/pour about 1 cup of the pasta water in the glass measuring cup. Drain the pasta in the colander and let it rest, covered loosely with a pot lid or plate.
  • Place a small, heat-safe bowl near the stove. In a large cast-iron or non-stick skillet, heat 3 tablespoons of olive oil over medium-low heat. When the oil is hot, add the red pepper flakes and garlic and cook, stirring constantly, until the garlic begins to simmer. Cook for about 30 seconds more to infuse the oil with spicy, garlicky flavor, but do not let the garlic brown. Pour and scrape the seasoned oil into the heatproof bowl and set aside. Wipe out the pan with a clean kitchen rag or paper towel.
  • Return the pan to the stove. Add 2 tablespoons olive oil and heat over medium-low until shimmering. Add the broccoli and sprinkle with 1 teaspoon salt. Cook, stirring occasionally, until the broccoli has shrunk to a single layer in the pan and turned bright green, and most have some browning on them (about ten minutes). Don't quit cooking prematurely here; you want the broccoli to be nice and toasty.
  • Get out the pan's lid or a cookie sheet and keep it handy. Add the sun-dried tomatoes to the pan. Measure out 1/3 cup pasta water (keep the rest for later) and pour it into the pan. Cover the pan with your lid or cookie sheet and continue cooking until the water has simmered down to almost nothing, about 15 to 30 seconds. Uncover and remove the pan from heat.
  • Add the drained pasta to the pan and drizzle in all of the infused oil. Give it a stir, then add the goat cheese and most of the Parmigiano. Stir until everything is well distributed. Add another 1 to 2 tablespoons pasta water, the chopped olives and lemon juice, and stir until the goat cheese loosens up and gets creamier. Season to taste with salt and add a tablespoon more pasta water or additional goat cheese if you'd like it to be more creamy. If it seems dry at all, add a little splash of olive oil and mix well. Mix in the chickpeas and/or arugula, if using.
  • Serve right away, garnished with the remaining Parmigiano.

BOWTIE PASTA

Bowtie Pasta image

Bowtie pasta is a classic for a reason! In this 30-minute recipe, pasta is flavored with Italian sausage, broccoli, a creamy sauce, and parmesan cheese.

Categories     30-minute meals     brunch     Sunday lunch     weeknight meals     comfort food     dinner     main dish

Time 30m

Yield 4-6 servings

Number Of Ingredients 14

2 tbsp. olive oil
1 lb. mild Italian pork sausage, casing removed
3 cloves garlic, chopped
1 lb. bowtie pasta
3 c. chicken broth
1 tsp. dried oregano
1 tsp. salt
1/2 tsp. ground black pepper
4 c. small broccoli florets (from 1 8-oz. piece of broccoli)
1/2 c. julienned sun-dried tomatoes, drained of oil
1/3 c. heavy cream
1/2 c. grated parmesan cheese, plus more for serving
2 tbsp. fresh lemon juice (from 1 lemon)
Red chili flakes, for serving (optional)

Steps:

  • Heat a large pot over medium-high heat. Add the olive oil, then the sausage. Cook, breaking the sausage into small pieces with a wooden spoon, until it is golden brown and no longer pink, about 6 minutes. With a slotted spoon, remove the sausage to a plate and set aside.
  • Reduce the heat to medium and add the garlic cloves. Cook for 1 minute.
  • Add the pasta, broth, 2 cups of water, oregano, salt, and pepper to the pot and bring to a simmer. Reduce heat to medium or medium low to keep it simmering for 5 minutes, stirring occasionally to prevent sticking.
  • Stir in the broccoli. Cover the pot and let cook until the pasta and broccoli are just tender, about 5 minutes, stirring half-way through.
  • Uncover the pot. Add the sun-dried tomatoes, heavy cream, and reserved sausage. Cook until heated through, about 1 minute.
  • Remove from the heat and stir in the parmesan cheese and lemon juice. Serve topped with more parmesan cheese and red chili flakes, if you like.

BOW TIE PASTA WITH BROCCOLI AND BROCCOLI SAUCE

Bow Tie Pasta With Broccoli and Broccoli Sauce image

I've gotten 8 year old boys to eat this and ask for seconds. They never knew they were eating broccoli and I didn't tell them. I adore this dish. Normally I cook with olive oil but the butter in this sauce should not be substituted. It will serve 4 as a side dish or 2 as a main course. The original recipe comes from Rozanne Gold, a favorite cookbook author.

Categories     Lunch/Snacks

Time 25m

Yield 2-4 serving(s)

Number Of Ingredients 5

1 lb broccoli
1 1/4 cups water
8 ounces bow tie pasta
2 tablespoons butter, cold and cut in pieces
salt

Steps:

  • Cut the broccoli buds into small florets, leaving as short a stem as possible; set aside; cut the remaining broccoli stems into 1/2" pieces; boil them, covered, in the 1 1/4 cups water, lightly salted, for 15 minutes or until very soft.
  • Meanwhile, boil the pasta in salted water until al dente; drain, reserving 1/2 cup of the cooking water; return the pasta to the pot and stir until all moisture is evaporated.
  • Place the reserved florets into a small pot and steam or boil 5 minutes, retaining the bright green color and a bit of crunch.
  • In a food processor, puree the cooked broccoli and its cooking water until very smooth, adding a bit of the reserved pasta water if needed to make a smooth sauce; add the butter and pulse until melted; add salt to taste.
  • Pour warm sauce over the pasta and stir gently to combine; plate and sprinkle with drained florets.
