CURRY CHICKEN SKEWERS

Steps:
- Soak wooden skewers in water for at least 30 minutes.
- In a large bowl, add the chicken and all the remaining ingredients and mix well. Cover with plastic wrap and refrigerate for 2 hours or overnight. Remove the chicken from the marinade and thread onto the wooden skewers.
- Preheat the grill to medium.
- Put the skewers on the grill. Cook for 2 to 4 minutes, then flip and cook for another 2 to 4 minutes. Remove the chicken from the skewers to a serving platter and serve with white rice.

There are no special ingredients required to make these easy Curried Chicken Kabobs-just snow peas, raisins and a sprinkling of curry powder.

Steps:
- Heat grill to medium-high heat.
- Thread chicken onto 8 skewers; place in shallow dish. Mix dressing and curry powder until blended; pour half over skewers, turning skewers to coat. Refrigerate 10 min.
- Meanwhile, prepare rice as directed on package, omitting salt and adding remaining dressing mixture to rice before cooking. Stir in peas and raisins; keep warm.
- Remove kabobs from marinade; discard marinade. Grill kabobs 8 to 10 min. or until chicken is done, turning occasionally. Serve with rice.

- Light a grill or heat a lightly oiled grill pan. Loosely thread the chicken onto the skewers and season with salt and pepper. Grill over a medium-hot fire for about 4 minutes per side, or until nicely browned and just cooked through. Alternatively, cook the chicken in the grill pan over moderate heat for about 4 minutes per side. Serve hot.
