1 tbsp. extra-virgin olive oil
1 onion, diced
2 cloves garlic, minced
2 c. baby spinach
kosher salt
8 large eggs
2 tsp. dried oregano
2 tbsp. skim milk
Freshly ground black pepper
1/2 c. shredded mozzarella
1/4 c. sliced pepperoni

Steps:

  • Preheat oven to 425°. In a large oven-proof skillet over medium heat, heat oil. Add onions and garlic and cook until tender, 5 minutes, then add spinach. Cook until wilted, 2 to 3 minutes, and season with salt.
  • In a large bowl, whisk together eggs, oregano, and milk and season with salt and pepper. Pour eggs over vegetables in skillet and cook until edges are cooked, 4 to 5 minutes.
  • Top with cheese and pepperoni and transfer to the oven to bake until eggs are cooked through, 5 to 6 minutes more.

6 large eggs plus 4 egg whites
Kosher salt and freshly ground pepper
2 tablespoons extra-virgin olive oil
1/2 cup low-sodium marinara sauce
3/4 cup low-moisture part-skim shredded mozzarella cheese (about 3 ounces)
1 ounce sliced pepperoni
2 tablespoons grated parmesan cheese
2 teaspoons red wine vinegar
1 10-ounce package mixed Italian salad greens (such as romaine and radicchio; about 8 cups)
1/2 red bell pepper, thinly sliced
Torn fresh basil, for topping
4 slices crusty Italian bread

Steps:

  • Preheat the broiler. Whisk the eggs and egg whites with 1/4 teaspoon salt and a few grinds of pepper in a large bowl. Heat 1 tablespoon olive oil in a large ovenproof nonstick skillet over medium heat. Pour in the egg mixture and stir with a rubber spatula until curds begin to form, 2 to 3 minutes. Transfer the skillet to the broiler; broil until set but not browned, 30 seconds to 1 minute.
  • Spread the marinara sauce over the eggs, leaving a 1/2-inch border. Top with the mozzarella, pepperoni and parmesan. Return to the broiler until the cheese is bubbling, 1 to 2 minutes. Set aside.
  • Whisk the vinegar with the remaining 1 tablespoon olive oil, 1/4 teaspoon salt and a few grinds of pepper in a large bowl. Add the salad greens and bell pepper; toss. Sprinkle the frittata with basil and cut into wedges. Serve with the salad and bread.

400 g passata
1-2 tsp garlic (finely chopped)
1-2 tbsp olive oil
250 g pizza dough (homemade or store-bought)
½ cup vegetable oil (canola, sunflower, peanut or corn oil)
½ cup mozzarella or bocconcini (sliced into small pieces)
½ cup fresh basil leaves
2 tbsp parmesan (grated)

Steps:

  • Heat up the passata in a small saucepan along with the garlic and olive oil. Simmer for a few minutes for the flavours to infuse, then switch off the heat. Note: Skip this step if you want to use plain passata.
  • Sprinkle flour over a clean work surface and your fingers, then portion out pizza dough into pieces roughly the size of your fist. Flatten and stretch the dough out into rough circles around 1 cm / 0.4 inch thick and 10-15 cm / 4-6 inch wide.
  • Pour vegetable oil into a small frying pan until it's just covering the bottom of the pan by about 0.5 cm / 0.2 inch. Heat through. Test with a wooden chopstick or toothpick and when bubbles form on the tip, it's ready to start frying.
  • Stretch each piece of dough out again just before cooking so it cooks evenly. Fry each piece separately for 1 minute per side until golden brown and puffy. Drain on paper towel.
  • Top fried dough with quick pizza sauce or passata, mozzarella / bocconcini and fresh basil leaves or your chosen pizza toppings. Garnish with freshly grated parmesan.

4 1/2 cups of all purpose flour or bread flour
1 pk dry yeast dissolved in 2 cups lukewarm water
1 teaspoon salt
2 tablespoons sugar
4 tablespoons olive oil

Steps:

  • Mix until dough forms a smooth dough and if still sticky add a little more flour by a tablespoon at a time.
  • Place in a bowl, cover with a towel that has been dampened and wait until double in size as it rises.
  • Stretch out around two tablespoons of dough into a circle poking a hole in the center like a doughnut or shape into small round balls.
  • . Place on a cookie sheet, lined with floured parchment paper.
  • In the meantime, heat the oil in a fry pan, on medium-low heat.
  • Place a little piece of dough, (the size of a dime) in the oil to see if it sizzles and it hot enough.

  • Take out of oil when done, place on paper towels to drain oil.

12.5 cups "00" flour
8 3/4 teaspoons sea salt
2.5 teaspoons extra-virgin olive oil
1/3 teaspoon active dry yeast
2 ounces ricotta
3 slices salami
6 to 8 pitted olives
1 tablespoon tomato sauce, plus additional for serving
1 ounce shredded fresh mozzarella
Oil, for frying
Fresh basil, for serving
Grated Parmesan, for serving

Steps:

  • For the dough: Mix together the flour, salt, oil, yeast and 4 1/3 cups room temperature water in a stand mixer for 25 to 30 minutes. Turn out into a large bowl and let rise 4 to 6 hours.
  • For the pizza fritte: Stretch out one 10-ounce piece of dough (save the remainder for another use). Place ricotta in center, then salami on top, followed by olives, sauce and mozzarella. Fold over dough to make a pocket and close. Seal shut.
  • Preheat some oil in a deep-fryer to 350 degrees F. Fry the pizza, turning to make sure both sides cook evenly, until golden and heated through, 3 to 5 minutes. Place on a plate and top with sauce, basil and Parmesan.

Pizza fritta is one of the oldest forms of pizza, the classic street food of Naples, where it was easier to cook more using oil than managing a wood oven. The texture is almost doughnut-like on the outside, and creamy in the middle. Tweak this simple filling by adding any of your favourite ingredients to gently melt inside.

1 x Neapolitan pizza base recipe
1 x Hero tomato sauce
Tipo 00 flour, for dusting
100 g Parmesan cheese
500 g quality ricotta cheese
400 g mozzarella cheese
1 bunch of fresh basil, (30g)
2 litres vegetable oil, for frying

Steps:

  • Make your dough, proving it for 1 hour, rather than overnight, and your Hero tomato sauce. When the time's up, divide the dough into 12 balls on a flour-dusted surface, dust them with flour, cover with a clean damp tea towel, and rest for 10 minutes.
  • One at a time, press out a ball of dough with your fingers, stretching and flattening it into a 15cm round. Finely grate the Parmesan and beat with the ricotta, then add a heaped spoonful to your dough round. Tear over a little mozzarella, season, push a few basil leaves into the top, then fold over the dough to seal the filling inside. Press down to stick, twisting and tucking the dough, if needed, like pizza ravioli! Repeat.
  • Heat the vegetable oil in a large, sturdy pan over a medium-high heat. Drop in a cube of potato and when it's golden and rises to the surface, the oil is ready. I'm not a lover of deep-frying but it does give the best results here - please be careful. Working in batches, lower in two fritte to cook for 1½ minutes on each side, or until golden. Remove to a plate lined with kitchen paper to drain, then let the oil come back up to temperature before adding the next two. Warm the tomato sauce and serve on the side for dunking. Sprinkle more fresh basil leaves over the fritte, to serve.

4 tablespoons extra-virgin olive oil, for sauce
12 ounces crushed tomatoes
2 cloves garlic, cut into chunks
Salt
Fresh basil, torn
Freshly grated pecorino cheese (sheep's milk cheese), for serving
1 pound fresh pizza dough or frozen pizza dough, thawed
Extra-virgin olive oil, for frying
2 tablespoons honey

Steps:

  • In a saucepan, heat up extra-virgin olive oil for the tomato sauce. Add the crushed tomatoes, garlic, salt and basil. Cook for 2 to 3 minutes.
  • Divide dough into 8 equal parts. Stretch and flatten out each piece with your hands to create little pizzas.
  • In a large pan, heat the extra-virgin olive oil on high heat. Gently place each piece of dough in the hot oil and cook for about a minute on each side. Once the dough is puffy and golden brown on both sides, remove them from the pan and place on a paper towel to absorb the excess oil.
  • Remove any raw garlic, if desired, from the tomato sauce and spoon sauce onto the fried dough. Top with freshly grated pecorino cheese, and serve immediately.
  • For a sweet version: drizzle honey on the fried dough, and serve hot.

Steps:

  • Heat oil in frying pan.
  • Break off ~2" pieces of dough.
  • Place in hot oil, cook until done (around 3-5 min and turning once).
  • Place on paper towel and let drain (1 min).
  • Sprinkle with granulated sugar.
  • Cut open and place in a teaspoon of jelly (optional), or just eat them as is.

This has long been a family tradition as an appetizer during the holidays. It's not the most healthy of foods, but is healthier than many other fried dough recipes out there since it's quick fried, and soaks up a lot less of the oil it's fried in. This is a recipe that's always a pleaser, and quite tasty when dipped in some sugar, or even by itself. The anchovy paste variant is my favorite. It doesn't taste like anchovy at all - instead it has a quite pleasant flavor, and almost omits the need for sugar dipping the finished product.

7 cups flour (all-purpose)
4 1/2 cups water (115-118 degrees F)
1/2 ounce yeast (two packets)
1 tablespoon salt
1 dash black pepper
1 teaspoon anchovy paste (optional)
vegetable oil (for frying)
sugar

Steps:

  • If not using instant yeast, allow yeast to activate with 1.5 cups of the warm water according to the directions on the packet (about 10-15 minutes). If using instant yeast, just combine it with the dry ingredients.
  • Combine all remaining ingredients in a large mixing bowl, and add water/yeast mixture. If you choose to use the anchovy paste, add it here.
  • Mix until smooth. A wire whisk works well for this. Dough will be very wet and somewhat runny.
  • Set dough in a warm (90-100 degree F) place to rise (covered with a moist dish towel), and allow to rise for two hours.
  • Heat oil in an electric skillet or large, deep saucepan to between 450-500 degrees F. The skillet/saucepan should be at least 2 inches deep, with the first inch filled with oil. The larger the pan, the more you'll be able to fry at once.
  • Once the dough is risen and oil is hot, use a tablespoon to place bits of the dough into the oil to fry. Wetting the spoon in water between dips is a great way to keep the dough from sticking to the spoon.
  • Fry the dough until lightly golden brown on each side (flip each dough ball at least once). If the oil is hot enough, cooking time shouldn't be much more than 2-3 minutes.
  • Once the dough has cooked to a light golden brown, remove from oil and allow to cool/drain on a cookie sheet lined with either brown paper bags or paper towels.
  • Once cooled enough to touch, serve with a bowl of sugar on the side for dipping.
