My husband first tasted this comforting casserole more than 10 years ago when he was still my fiance. Having enjoyed it so much, he said I needed to offer it at every Thanksgiving dinner. I was happy to oblige!-Maura Calusdian, Londonderry, New Hampshire

Number Of Ingredients 9

1 medium butternut squash (2 to 3 pounds), peeled, seeded and cubed
1/2 cup all-purpose flour
1/2 cup sugar
2 cups 2% milk
3 large eggs
2 tablespoons butter, melted
1/8 teaspoon salt
1/8 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg

Steps:

  • Place squash in a large saucepan and cover with water; bring to a boil. Reduce heat; cover and simmer until tender, 8-10 minutes. Drain., In a large bowl, mash the squash with flour and sugar until blended; beat in the milk, eggs and butter. Pour into an ungreased 2-1/2-qt. baking dish. Sprinkle with remaining ingredients., Bake at 350° until center appears set, 55-65 minutes.

1 tablespoon olive oil, or as needed
1 medium butternut squash - peeled, seeded, and cubed
1 medium red onion, diced
2 tablespoons red curry paste
1 ¼ cups vegetable broth
4 medium tomatoes, chopped
1 (15 ounce) can chickpeas, drained
salt and ground black pepper to taste
3 tablespoons Greek yogurt
½ tablespoon ground coriander

Steps:

  • Heat oil in a pot over medium heat. Add squash to the hot oil; cook and stir for 3 minutes. Add onion and curry paste; cook and stir for 4 minutes. Pour in vegetable broth, cover, and cook until squash is tender, about 20 minutes.
  • Stir tomatoes, chickpeas, salt, and pepper into the pot and cook until heated through, about 4 minutes. Stir in Greek yogurt and coriander.

8 to 12 ounces butternut squash, cut into 1/2-inch cubes
2 teaspoons olive oil
1 cup heavy cream
1 cup whole milk
1 teaspoon honey
1/2 cup light brown sugar
8 large egg yolks
1/2 teaspoon curry powder
1/2 teaspoon kosher salt
1/4 teaspoon ground cumin
1/8 teaspoon ground cloves
1/8 teaspoon ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Toss the squash cubes in the olive oil and spread them out on a baking sheet. Roast until the squash is tender and starting to caramelize, 45 to 50 minutes. Set aside to cool.
  • Once the squash has cooled slightly, transfer it to a food processor and puree until smooth.
  • In a large saucepan, combine the cream, milk, honey and 2 tablespoons of the brown sugar, and bring to a mild simmer over medium heat.
  • In a bowl, whisk the egg yolks vigorously until they turn pale yellow. Add the remaining 6 tablespoons brown sugar and stir to fully incorporate. Temper the eggs by slowly adding one third of the heated cream while whisking continuously.
  • Pour the tempered egg mixture back into the saucepan with the rest of the cream and cook over low heat (do not boil!), stirring constantly with a wooden spoon, using figure-eight motions. Cook until the custard begins to thicken and coat the back of the spoon, anywhere from 15 seconds to 1 minute.
  • Pour the custard through a fine mesh sieve into a clean bowl set over an ice bath. Stir until the custard is completely cooled.
  • Combine a third of the cooled custard with 1/2 cup of the squash puree (doing this in a small batch will ensure a smoother texture), and use an immersion blender to blend until smooth. Add the custard-squash mixture back into the remaining custard. Stir in the curry powder, salt, cumin, cloves and black pepper. Blend and emulsify with the immersion blender until smooth. Strain, then cover and refrigerate for 4 hours to overnight.
  • Pour the custard into the bowl of an ice cream maker and churn according to the manufacturer's directions. Transfer to a container suitable for the freezer and freeze for at least 2 hours before serving.

200g brown basmati rice
1 tbsp olive oil
1 butternut squash, diced
1 red onion, diced
2 tbsp mild curry paste
300ml vegetable stock
4 large tomatoes, roughly chopped
400g can chickpeas, rinsed and drained
3 tbsp fat-free Greek yogurt
small handful coriander, chopped

Steps:

  • Cook the rice in boiling salted water, as per pack instructions. Meanwhile, heat the oil in a large frying pan and cook the butternut squash for 2-3 mins until lightly browned. Add the onion and the curry paste and fry for 3-4 mins more.
  • Pour over the stock, then cover and simmer for 15-20 mins, or until the squash is tender. Add the tomatoes and chickpeas, then gently cook for 3-4 mins, until the tomatoes slightly soften.
  • Take off the heat and stir through the yogurt and coriander. Serve with the rice and some wholemeal chapattis if you like.

1 butternut squash, halved and seeded
1 tablespoon olive oil, or as needed
salt and ground black pepper to taste
2 cups vegetable broth
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon curry powder
½ cup sour cream
1 tablespoon lime juice
1 lime, zested

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper or aluminum foil.
  • Place butternut squash, cut-side up, on the prepared baking sheet. Coat the cut sides with olive oil; season with salt and pepper.
  • Bake in the preheated oven until butternut squash is tender when pierced with a fork, 45 minutes to 1 hour. Remove squash from oven and cool slightly, about 10 minutes.
  • Scoop flesh from roasted butternut squash and transfer to a saucepan; add broth, garlic powder, onion powder, curry powder, salt, and pepper. Bring squash mixture to a simmer until flavors blend, about 10 minutes.
  • Pour squash mixture into a blender no more than half full. Cover and hold lid down; pulse a few times before leaving on to blend. Puree in batches until soup is smooth.
  • Whisk sour cream, lime juice, and lime zest together in a bowl until lime cream is evenly mixed. Serve soup in bowls; top with a dollop of lime cream.
